    Ingredients
1 cup (1/2 pound) dry chick peas (not canned)
    1/2 onion, roughly chopped
    1 bunch fresh parsley
    4 cloves garlic
    1 rounded tablespoon flour
    1 1/2 teaspoons salt
    1 teaspoon ground cumin
    1/2 teaspoon baking soda
    1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
    1/2 teaspoon ground coriander
    vegetable oil for frying
tzaztiki, tahini, or shawarma sauce for dipping
    Instructions
Soak the chickpeas covered with cold water overnight in a large bowl. They will double in size so make sure there's plenty of water.
    Drain the soaked chickpeas well.
Place the garlic cloves in a food processor and pulse until finely chopped.
Add parsley leaves and thin stems and chop with garlic.
Now add the chickpeas, onions, salt peppers, flour, baking soda and coriander. Pulse until everything comes together and is finely chopped. It should hold together. You may add a bit more flour if you need to so that it holds.
Transfer the mixture in a bowl and cover tightly with wrap. Refrigerate at least 1-2 hours or overnight.
Heat the oil to about 370 °F.
Form the falafel balls using a small ice cream scoop. You can also make patties if you prefer (like mini burgers).
Fry about 5-6 at a time so that they cook evenly and the oil's temperature does not drop too much.
Fry for about 4-5 minutes or until beautifully golden brown all around.
Place cooked falafel on a plate lined with paper towels to absorb excess oil.
Serve these with tzatziki, pita bread and chopped salad (cucumber, bell pepper, onion).
    Enjoy!!

I am a Jordanian and I love Falafel. I could take it any time, morning or night. You had a great recipe for Falafel. Your Falafel came so well. The only thing that is different is the sauce, we use tahini sauce instead of mayonnaise. Thank you for the great details on your video....you killed me with that bite of the crispy Falafel...aaaaaah, now I am so hungry...Thanks, Dear

This is a really good recipe Dimitria, efharisto poli! I'm half Lebanese and half Greek so it's so nice for me to see you make this falafel. In Lebanon we serve it with delicious toumya or tahini sauce called taratur. I highly recommend you try your yummy looking falafel with them for an authentic taste. As we say in Lebanon, it's so good you'll eat your fingers. 😊💞

A tip for slicing cherry tomatoes: put them on a plate, and put an upside down plate on top (the plates have to be just deep enough so that the tomatoes don't get squashed. Bowls would be way too deep). Then get a sharp knife and slice through the line where the two plates meet, and you'll have sliced all you tomatoes in one go.

I would like to add that usually we crush the falafel by just pressing it in the sandwich to infuse the taste and to mix the added sauce hot pepper ....etc with the inside of the falafel as well. Also the sauce is tahini yogurt lemon which is a beef shawarma sauce.
Mayo garlic .... Is a chicken shawarma sauce.
