I remember when my Mom would make divinity candy. She would never even try if it was raining nor in warm weather. I remember her putting on her coat and going outside on the carport to “ribbon” as she called it the divinity. Basically taking a spoonful of the sugar mixture and letting it ribbon off her spoon in order to cool it. She also did that to use it as icing on her fresh coconut cake. I think the icing was a form of what is referred to as 7 minute icing. That was my favorite cake and since our birthday was in January (I was born on my Mom’s birthday) she would make that cake for our birthday. She only made that cake twice a year. Christmas and our birthday.
Let me tell you Louise, you are a genius!! The double boiler over the ninja or instapot is well let me just say, I will NEVER do it any other way again. Believe me I have all the utensils for the other way. "You" got me started on that with the pepper mint patties long ago so yes I blame you. I will never melt my choc any other way... thank you! Made these and making more today!! Pepper mint patties were awesome to!!
I grew up in Ohio (for 35 years) and love buckeyes. Your's sounds extremely close to a recipe we used to use but I don't see your recipe to copy it down. I hope all is well with you. Looking forward to coming back and finding it. 🥰🥰🥰
I totally agree about the less powdered sugar part...after all I want to taste the nut butter I use and not just get a mouthful of SWEET...I do the same with my frostings...I want to taste the chocolate or browned butter or especially the tangy kick of the cream cheese in the frosting. A plus to these being softer is the "wiser generation" can eat them without worrying about dental work damage! Love it! BTW, if you can't have peanut butter, Barney butter almond butter is very comparable as it is less greasy (if it was stored properly at warehouse) and uses blanched almonds as opposed to other almond butters.
How interesting to see this recipe and the name Buckeyes. I really like the look of them. I would be in such trouble if I did not make mine, but they are Peanut Butter Balls, and added in is rice crispies. They are dunked in a semisweet chocolate mixed with parrifin wax for setting and shine. There is a list of people that wait for them every year. :) And what was your chocolate you used?
It's from Pampered Chef. Its called Measure-All cup, it comes in 3 sizes and it is a game changer and a Must have for any kitchen. That one is the 2c one they also have a 1c called Mini Measure-All cup and then a Petite Measure-All cup.
When I make these, the peanut butter mixture remains too sticky to roll into balls. I’ve remeasured the ingredients and even added more powdered sugar, but I lose the peanut butter richness and they get too sweet. Do you have any suggestions?

I remember making these with my mom when I was little. I used to think they were called Bambi cookies because they looked like deer tails to me 😂
What about adding powder peanut butter to help stiffen them up instead of sugar?

I only have natural PB. Could I add PB powder to make the mixture stiffer without adding extra sugar?
