Once you apply the viniger and water, I would recommend to wash it off right away. Just to be safe, test it on only one vegetable to see if there's any negative reaction.
Once the mixture dries, it shouldn't cause any harm to pollinators. But if it is wet and has a very strong concentration of vinegar, it can be harmful. If you are still worried, after wiping the mixture onto the leaves, wash it off completely with water. Good luck!

I haven't tried this on eriophyid mites, but It should be able to kill them. However, it might not eliminate all of them.

I notice they’re using dawn dishsoap which is very toxic to the environment. I’m sure non toxic liquid soap will do the same job
Yes, I would have preferred to use a natural soap, but this was the only one I had.
