425F is a bit too high. I suggest start off 275F the first hour. Then turn it up to 325F for 60 minutes or 375F for 40 minutes. The lower and slower you cook it, the more tender the roast will be.

When you hold the jars out so we can see what you're putting in the recipe, could you hold it still for a few more seconds (meaning it'll look like a few seconds to us in fast time)? Also, there's no way to tell what kind of measurements you're doing, so maybe a bit of text here in the comments or the header to show the approximate recipe? Just do 1 teaspoon for each and see how it turns out. After that increase or reduce those spices you don't care for and increase those you do.
