This brings back a lot of good memories. I worked for a Mexican family at their restaurant for almost 7 years. Twice a year, we would close the restaurant on a Sunday, and everyone and their families would come, and we would make Tomales. We would be cooking for 2 days ahead of time and feed everyone. When I would make Chili Colorado, I would make extra sauce, and we used that as the Tomale sauce. It's nice to see how to make actual Tomale sauce.

As an African American male, married to a Mexican Lady for more than thirty years, I've always had to wait for Christmas,and other traditional holidays to get "GOOD" tamales. Not anymore. I have the pork butt roast in my freezer, and was wondering what I was going to do with it. NOW I KNOW 😂😂 😂.

I’m 74 years old, was born and raised in Mercedes Texas. My mom used to make tamales. She always grinding the meat with a grinder on the attach to the table. It took me many years to make my own tamales, but follow me some of your instructions I took the very good point which all of them were very good and made my own thank you so much.

Agreed! You gave me all the details needed to make excellent tamales. My mother was Czech and my father was German/Spanish. My grandma fell ill when I was very young so she was never able to share her love of cooking. Mom was an excellent cook and was never afraid of cooking new cultural dishes but her take on tamales was a casserole. A very good one at that and made in the traditional way minus the husks. Thanks for sharing and helping me teach my grand babies how to make tamales the traditional way.✝️🙏🏼❤️

I am a chef, but I've never made tamales before. I searched for recipe videos and saw that this one was an hour long...EXACTLY what I wanted for the detail. I watched the entire video all the way through because I didn't want to miss anything. All the anecdotal tidbits and suggestions are awesome. I live in Houston, and I have friends who make authentic homemade tamales, but many of them are not very satisfying. Your suggestion to bulk up the meat to make them fuller is the best thing ever! I just watched your pork tamales video! I feel like I was transported back to my home town in Laredo, Texas. You comments with things your mom says to you and you say them in Spanish warms my heart with memories. I don’t have my mother anymore. I lost mom this year in February. But, I could here my mother saying, “eso ya es mucho”. I am now a subscriber. I cook and bake and they are my passion as you love to bake and cook. Culturally I believe that is in our genes. Hi Rachel....I am a filipina We also make tamales, but we do it the other way....like you We love tamales, sometimes We dip a little vinegar for a twist When we eat it. Instead of pork fat , we use coconut milk, and taste creamy And for the masa....powdered Rice / gelatenous rice is being used and wrap it wd banana leaf ... Breast chicken wd hard boiled egg and peanut is used for the toppings...laborious but delicious tamales🥰🥰🥰

I helped make tamales once with my mother in law and Papa in law and neighbors. But I was only in the assembly line and they couldn't give me a true recipe because they went by texture and taste etc. This was beautifully done. I may try to do this with my daughter. I know I’m going love this. I set aside cooking for a while after my husband died and this week I’m getting excited all over again. I’ve made tamales only three times and I haven’t gotten to them having as much sauce as I think they should have. Still, I like the flavors I’ve put together so I’m glad to watch you do this properly. I only made them alone so it’s been a chore I put off sometimes. Enough! I had them growing up at my Grandma’s house because a neighbor brought them over on Christmas Eve. They mean Christmas to me but I think I’ll practice a bath now and do it again before Christmas. Pat, what Rachel has done is document for all time, the time, the effort, the joy, the bonding of family and friends who gathered at "abuelitas house" with all the family to make tamales for Christmas, Easter, or family gatherings! It was a time of love and great bonding which is no more. This is what I remember from my own family and with the passing of that generation, it all disappeared! @@rachelcookswithlove My mom sent me a measuring cup set when I was a very young woman. Over the years, one of them got a burn on the handle (too close to a hot stove) and another got chewed on by my dog (no idea how she got it). I still use them. My mom gave them to me in California from Ohio in an act of love and to me, those measuring cups are perfect.
This is my 3rd time watching your how to make pork tamales before I bravely try. There is a lot of prep work a big bowl and steamer pot I will need to buy. I’ve already cooked a beef soup, the chicken mole and Mexican rice all turned out fabulously good . No leftovers ! I best flip a coin as to make pork tomales or chicken mole. Making tamales was never a tradition in our home growing up. My parents both passed away when I was 27. I’m in my in my 40’s now. But Having you in your kitchen explaining every step and your accent sounds just like my mom’s I feel confident I can do this. I love it that you like Christmas so much, I do too. When I lived around Albuquerque, there were people who sold tamales at Christmas time to people who worked at businesses. It was a big tradition, so everybody was allowed to take time from work to place an order. A few days later they would deliver your order, and they were the hugest fine quality tamales you ever saw! I mean twice as large as usual.

This looks so good I’ve never seen them made before! I love tamales. I used to get them from some ladies that made them and sold them for the church every month. They even delivered them fresh and hot right out of the huge steamer pots they had in the van. They used to call me when they were ready and I always bought three or four dozen. I haven’t heard from them in several years and miss those tamales

I liked to add cheese.My grandfather would take me to the ranch and we would come back with deer and javelina , I love those memories ❤️ As I got older her crew got smaller and I helped more, but she was the boss ‼️❤️💯 Your tamales are so very similar,she was very particular or special I think 🤔. Hi Rachel, I just UA-cam met you last week. This year my mother took a hiatus from tamales for Christmas, she is 78 years old and I understand it takes a lot of work to make tamales. To be honest I was never a super fan of my moms tamales and have had some better ones, I will never admit this to my mom so mums the word! I decided to give tamale making a shot and make a small batch to test. With this said I started searching for recipes and came across your UA-cam Channel and immediately knew you were the one to go with. I finally I made tamales for the first time this weekend and followed your instructions from this video... after many many replays and notes. I used masa preparada because I had purchased it already. I was still able to use some of the pork fat, broth and chile sauce in the masa. I love that you are so detailed and give options. They came out delicious and they were a hit with the family. Takeaways: *I was not impressed with the masa I used, I used La Guadalupana Masa Preparada which I will not use again. I found out there are other masa preparada brands that are much better in my area.. *Next time I will use Maseca from your beef tamale video or look into masa for tamales from a tortilleria in the city. *Next time I will make when I have plenty of time. I premade the pork and chili 2 days before Christmas Eve (celebration day) and was planning on preparing tamales 1 day before Christmas Eve to cook on Christmas Eve. But then I had a mishap..I did not realize I had bought pineapple masa and did not figure this out until I did a taste test after kneading 25-30 min, because the deep yellow color was not a giveaway🤷♀🤷♀ I ended up prepping and cooking the tamales on Christmas Eve which was way to much for me with everything else that needed to get done. Rachel thank you so much for your videos, your passion in cooking is clearly reflected in your videos.
I rewatched your video. You love to cook and I love how you take the time to explain every little step. I can smell the aroma in your kitchen! I bought 2 tamales the other day and the first bite the masa crumbled all over the place. I love that you don't put baking powder in yours. I don't either. Keeps them together when you bite into them. My Stepmom didn't either. I sold 200 dozen tamales to my coworkers for her. I sure miss her. I feel her spirit is with me and guides me when I make them. Follow her instructions do not skip anything she has already done this on expert level we are all getting the cooking lessons of a lifetime of generations and let me say this i am an excellent cook and almost 60 im still learning different ways to cook dont put your own spin on any of her recipes so you too can aporeciate just how delicious her cooking is! Ps i made her cinnamon rolls first time in october and i have made them 9 times i have eaten 2 rolls ask me why? Because once everyone sees me making the dough the word gets out i am making double batches and still someone takes the one roll from every batch i try to set aside for myself.

I used your recipe today, almost exactly like the way my nana and mom made them. I've been making them now over 40 years. One thing I learned from them is I add 2 dimes in the bottom of the pot with the water. As long as I can hear them bouncing around in the bottom of the pot, I know I have enough water in it. . If the bouncing sound stops , I add a little more boiling water. Our little "safeguard". BTW, I thoroughly enjoy your channel!!!! Feliz navidad🏜🎄
You SO took me back. One of my favorite memories was hearing the sounds my Mom made in the wee hours of the morning while preping to make tamales. Gosh, I miss her...and her tamales...and her atole and buñuelos, etc., etc. You make them almost exactly like hers. The tinting of the masa with the chile sauce, she did that too! An important step for flavoring the masa many don't do. Anyway, thank you for taking the time to film every step. I'm so inspired now that you reminded me of steps I may have forgotten. My mouth is watering!

I am 69 years old and I'm embarrassed to say that until a month ago I had no idea what a tamale was. And when I finally saw one, I wondered how you would eat them. Rachel, thank you so much for showing how to make these. They look delicious! I was born and raised in northern Ohio. All my ancestors came from Germany and Ireland, so we ate the same type of foods they ate. The closest thing to Mexican food we had was the chili my Mom made and it was served over rice. I did not like it at all, but ate it because that was all Mom fixed for that night's dinner. I think I can get just about everything I would need to make your recipes at Cleveland's West Side Market. It will be worth the hour and a half drive to get good ingredients. Please don't stop teaching us! And tell Ron how very lucky he is to be able to eat your delicious cooking! He can watch TV any time!

You've taught me so much and I have used your recipes many times. What I particularly like is the tradition. You are not only cooking from your heart and enjoyment but you are sharing the tradition - recipes that have been passed down from years past. Happy New Year Rachel! I’m out of quarantine finally back at work and have not been able to cook as much! I’ve been studying your wonderful tamale recipes for the entire month as I was planning to make my first batch of tamales over the holiday! Well it’s time and my pork butt is simmering on the stove and I just finished emptying the seeds from my various chile peppers! This brings back a lot of good memories. I worked for a Mexican family at their restaurant for almost 7 years. Twice a year, we would close the restaurant on a Sunday, and everyone and their families would come, and we would make Tomales. We would be cooking for 2 days ahead of time and feed everyone. When I would make Chili Colorado, I would make extra sauce, and we used that as the Tomale sauce. It's nice to see how to make actual Tomale sauce.

As an African American male, married to a Mexican Lady for more than thirty years, I've always had to wait for Christmas,and other traditional holidays to get "GOOD" tamales. Not anymore. I have the pork butt roast in my freezer, and was wondering what I was going to do with it. NOW I KNOW 😂😂 😂.

I’m 74 years old, was born and raised in Mercedes Texas. My mom used to make tamales. She always grinding the meat with a grinder on the attach to the table. It took me many years to make my own tamales, but follow me some of your instructions I took the very good point which all of them were very good and made my own thank you so much.

I lost my Mother to cancer several years ago, but you’re kindness and personality reminded my so much of my Mother. You have such passion with your cooking and I can tell you have a huge heart. Agreed! You gave me all the details needed to make excellent tamales. My mother was Czech and my father was German/Spanish. My grandma fell ill when I was very young so she was never able to share her love of cooking. Mom was an excellent cook and was never afraid of cooking new cultural dishes but her take on tamales was a casserole. A very good one at that and made in the traditional way minus the husks. Thanks for sharing and helping me teach my grand babies how to make tamales the traditional way.✝️🙏🏼❤️

I am a chef, but I've never made tamales before. I searched for recipe videos and saw that this one was an hour long...EXACTLY what I wanted for the detail. I watched the entire video all the way through because I didn't want to miss anything. All the anecdotal tidbits and suggestions are awesome. I live in Houston, and I have friends who make authentic homemade tamales, but many of them are not very satisfying. Your suggestion to bulk up the meat to make them fuller is the best thing ever! I helped make tamales once with my mother in law and Papa in law and neighbors. But I was only in the assembly line and they couldn't give me a true recipe because they went by texture and taste etc. This was beautifully done. I may try to do this with my daughter. I know I’m going love this. I set aside cooking for a while after my husband died and this week I’m getting excited all over again. I’ve made tamales only three times and I haven’t gotten to them having as much sauce as I think they should have. Still, I like the flavors I’ve put together so I’m glad to watch you do this properly. I only made them alone so it’s been a chore I put off sometimes. Enough! I had them growing up at my Grandma’s house because a neighbor brought them over on Christmas Eve. They mean Christmas to me but I think I’ll practice a bath now and do it again before Christmas. Pat, what Rachel has done is document for all time, the time, the effort, the joy, the bonding of family and friends who gathered at "abuelitas house" with all the family to make tamales for Christmas, Easter, or family gatherings! It was a time of love and great bonding which is no more. This is what I remember from my own family and with the passing of that generation, it all disappeared! My mom sent me a measuring cup set when I was a very young woman. Over the years, one of them got a burn on the handle (too close to a hot stove) and another got chewed on by my dog (no idea how she got it). I still use them. My mom gave them to me in California from Ohio in an act of love and to me, those measuring cups are perfect.
This is my 3rd time watching your how to make pork tamales before I bravely try. There is a lot of prep work a big bowl and steamer pot I will need to buy. I’ve already cooked a beef soup, the chicken mole and Mexican rice all turned out fabulously good . No leftovers ! I best flip a coin as to make pork tomales or chicken mole. Making tamales was never a tradition in our home growing up. My parents both passed away when I was 27. I’m in my in my 40’s now. But Having you in your kitchen explaining every step and your accent sounds just like my mom’s I feel confident I can do this. I love it that you like Christmas so much, I do too. When I lived around Albuquerque, there were people who sold tamales at Christmas time to people who worked at businesses. It was a big tradition, so everybody was allowed to take time from work to place an order. A few days later they would deliver your order, and they were the hugest fine quality tamales you ever saw! I mean twice as large as usual.

This looks so good I’ve never seen them made before! I love tamales. I used to get them from some ladies that made them and sold them for the church every month. They even delivered them fresh and hot right out of the huge steamer pots they had in the van. They used to call me when they were ready and I always bought three or four dozen. I haven’t heard from them in several years and miss those tamales

Thankyou Rachel, I am a 68 year old and I remember growing up at my Grandmother's and watching her and her crew make them around the holidays, she liked to mix pork and beef meat for her tamales and also made refried beans... I liked to add cheese.My grandfather would take me to the ranch and we would come back with deer and javelina , I love those memories ❤️ As I got older her crew got smaller and I helped more, but she was the boss ‼️❤️💯 Your tamales are so very similar,she was very particular or special I think 🤔. Hi Rachel, I just UA-cam met you last week. This year my mother took a hiatus from tamales for Christmas, she is 78 years old and I understand it takes a lot of work to make tamales. To be honest I was never a super fan of my moms tamales and have had some better ones, I will never admit this to my mom so mums the word! I decided to give tamale making a shot and make a small batch to test. With this said I started searching for recipes and came across your UA-cam Channel and immediately knew you were the one to go with. I finally I made tamales for the first time this weekend and followed your instructions from this video... after many many replays and notes. I used masa preparada because I had purchased it already. I was still able to use some of the pork fat, broth and chile sauce in the masa. I love that you are so detailed and give options. They came out delicious and they were a hit with the family.
Takeaways:
*I was not impressed with the masa I used, I used La Guadalupana Masa Preparada which I will not use again. I found out there are other masa preparada brands that are much better in my area..
*Next time I will use Maseca from your beef tamale video or look into masa for tamales from a tortilleria in the city.
*Next time I will make when I have plenty of time. I premade the pork and chili 2 days before Christmas Eve (celebration day) and was planning on preparing tamales 1 day before Christmas Eve to cook on Christmas Eve. But then I had a mishap..I did not realize I had bought pineapple masa and did not figure this out until I did a taste test after kneading 25-30 min, because the deep yellow color was not a giveaway🤷♀🤷♀ I ended up prepping and cooking the tamales on Christmas Eve which was way to much for me with everything else that needed to get done.

I rewatched your video. You love to cook and I love how you take the time to explain every little step. I can smell the aroma in your kitchen! I bought 2 tamales the other day and the first bite the masa crumbled all over the place. I love that you don't put baking powder in yours. I don't either. Keeps them together when you bite into them. My Stepmom didn't either. I sold 200 dozen tamales to my coworkers for her. I sure miss her. I feel her spirit is with me and guides me when I make them. Follow her instructions do not skip anything she has already done this on expert level we are all getting the cooking lessons of a lifetime of generations and let me say this i am an excellent cook and almost 60 im still learning different ways to cook dont put your own spin on any of her recipes so you too can aporeciate just how delicious her cooking is! Ps i made her cinnamon rolls first time in october and i have made them 9 times i have eaten 2 rolls ask me why? Because once everyone sees me making the dough the word gets out i am making double batches and still someone takes the one roll from every batch i try to set aside for myself.

i live in Australia but originally hail from Tucson. I fondly remember making tamales at my friends home. I have tried here in Oz and although I cannot get all of the ingredients, I tried this recipe as best I could follow it. My tamales this year were DELICIOUS,

I used your recipe today, almost exactly like the way my nana and mom made them. I've been making them now over 40 years. One thing I learned from them is I add 2 dimes in the bottom of the pot with the water. As long as I can hear them bouncing around in the bottom of the pot, I know I have enough water in it. . If the bouncing sound stops , I add a little more boiling water. Our little "safeguard".

You SO took me back. One of my favorite memories was hearing the sounds my Mom made in the wee hours of the morning while preping to make tamales. Gosh, I miss her...and her tamales...and her atole and buñuelos, etc., etc. You make them almost exactly like hers. The tinting of the masa with the chile sauce, she did that too! An important step for flavoring the masa many don't do. Anyway, thank you for taking the time to film every step. I'm so inspired now that you reminded me of steps I may have forgotten. My mouth is watering!

I am 69 years old and I'm embarrassed to say that until a month ago I had no idea what a tamale was. And when I finally saw one, I wondered how you would eat them. Rachel, thank you so much for showing how to make these. They look delicious! I was born and raised in northern Ohio. All my ancestors came from Germany and Ireland, so we ate the same type of foods they ate. The closest thing to Mexican food we had was the chili my Mom made and it was served over rice. I did not like it at all, but ate it because that was all Mom fixed for that night's dinner. I think I can get just about everything I would need to make your recipes at Cleveland's West Side Market. It will be worth the hour and a half drive to get good ingredients. Please don't stop teaching us! And tell Ron how very lucky he is to be able to eat your delicious cooking! He can watch TV any time!

You've taught me so much and I have used your recipes many times. What I particularly like is the tradition. You are not only cooking from your heart and enjoyment but you are sharing the tradition - recipes that have been passed down from years past. Happy New Year Rachel! I’m out of quarantine finally back at work and have not been able to cook as much! I’ve been studying your wonderful tamale recipes for the entire month as I was planning to make my first batch of tamales over the holiday! Well it’s time and my pork butt is simmering on the stove and I just finished emptying the seeds from my various chile peppers! You are such a wonderful teacher and I feel like you were my personal chef teaching me how to cook my favorite Mexican cuisine! You kept me sane over the whole Covid scare and I’m a much better cook!
