If you wanna move around with the camera is better to record in 60fps and then export from your editing software in 30 fps. It will look so much better then directly recording in 30fps. I use 30 fps only if i keep the camera stationary
Could you do a tutorial/demonstration of using the GoPro hero 11 for star trails? It's one of the reason I entered the giveaway and would want to see how it works with this.

I usually use a 64gb or 128gb. The 64 will give you about 2 hours of video, so if you think you'll be recording more than 2 hours I'd go with the 128. Also make sure you get an SD card that can take in 4K video!
Love your way of explaining, but sorry to say, gopro Hero 11 has disappointed in the field of stability in low light as well as filming in low light, also it has same old hanging problem, Gopro should take great care of these things and also give a 3.5 mm jack for external mic in future model.

It's because of your region, which is PAL.
60fps only is possible with NTSC.
