Thanks, Chef Ricky. One thing I couldn't figure it out for years was how could I prevent the steak from turning very cold, especially in winter, after resting? A kitchen lamp was very expensive though.

@Frank Chiang 严肃的讲,这要看你用那一种辣椒油了。五香肉丁是川菜,炼辣椒油要使用八角、草果、桂皮、茴香、大红袍花椒;讲究重口味的甚至可以使用十三香,用印度做咖哩中的混合香料garam masala也是可以的。而这种重口味更适合湘蜀地区的人群。
我们广东人做五香肉丁,或者上海梅林牌的五香肉丁都是没有加五香的辣椒油的。因为出口罐头要适合更多人种的口味。不是每个人都能接受重口味的。我做五香肉丁也没有使用五香粉,用的辣椒油是外卖水煮牛肉剩下的汤汁和油。ricky哥上次教的五香肉丁是罐头的基本版,至于怎么变化,那还是要看你个人的口味了。就好像一道鱼香肉丝,地分南北,人有东西,口味是随变化而来的。

After resting before you serve. Just put the steak back into a very very hot pan, quickly sear 15 seconds on both sides…done! 😋😋😋😋🍷🍶🥃🥂
