    Your knife skills are always so impressive. It makes sense, because you've used your knives for so long. It's relaxing and cool to watch a practiced technique like yours. Also, I really liked the calligraphy part in this video! You must have a lot of practice with that as well. You move the brush very cleanly. I never get tired of your videos

    Ohayogozaimasu Ryusei!
    This is a great video just in time for fall harvest of chestnuts! We have four chestnut trees on the farm and the nuts are in the process of falling. I just cooked and shelled two pounds last weekend. The shelled chestnuts will be used for chestnuts stuffing on Thanksgiving and Christmas. The rest of the chestnuts we harvest will be steamed or cooked in the microwave oven and eaten right after cooking whenever we want a delicious snack. These are wonderful recipes domo arigato for teaching us!

    I know some local sweet chestnut trees, but never known what to do with them It's nearly harvest time in the UK, I will harvest some and try these two dishes. Thank you Kyodokan!

    Amazing as always, Ryusei-San! I have never tried Chestnuts before, but they look very delicious! It seems to be a lot of work though, especially with the preparation. :D

    Great video Ryusei ! In France we love to eat roasted chestnuts, we can make it at home in the fireplace or we usually find them during winter events like winter markets. Shibukawa ni looks delicious, it reminds me of "Marrons glacés", it is a french sweet, made of chestnuts cooked in syrup and then glazed, its very tasty :)

    I have never tried to peel chestnuts like that.Does boiling them make it easier to take off the skin?We love chestnuts but we usually roast them,in the oven or over open fire!! Chestnut in syrup looks very tasty.

      I usually don’t boil them. I just soak them for a while. I’m sure if we boil them, the chestnuts become a bit too soft.

    eek scary to see the knife used to peel....but then i'm scared of using a paring knife too...just any blade pointing toward me feels dangerous but i guess so many people use that style 🙂

      Yes, it's not very safe, some japanese don't use fresh chestnuts. Because, they would not like to peel off the skin with a knife. But, the taste of fresh chestnuts is so good! In japanese restaurant chestnuts dishes are popular menu in autumn!
