As a child growing up on the lower eastside of Manhattan, my dad would often buy toasted chestnuts in a bag from street vendors in the winter. They were so good and hot with some salt added. Hot dog venders with their carts during cold weather sold the best hot dogs with sour kraut you could get. Lets not forget the roasted peanuts in a paper bag that kept your hands warm while you ate them and the hot pretzels. Its good to remember those days when life was simple. The best of the season to everyone 😊
Our son married into an Italian family and our background is English so we are learning many different ways to cook these last few years. I have been learning many cooking technics for lots of the foods we eat and love. I have tried 4 ways to cook these Italian Chestnuts and this is by far the BEST way yet. Great taste, nice and moist, and easy to peel. I just convinced the Italian family tonight that these are the best. They had to agree. Thanks for sharing and Merry Christmas to you and your family and I will be watching you again soon. Gary 🙂
Amazing and lovely! Thank you! This was not my dad's technique, but I learned a lot from YOUR technique! Lunga, Vita, Salute! We all learn from each family and style. The flavor of love!
I love chestnuts also. I use a Chestnut knife I bought for $5 it’s great to score them. While my oven is heating to 450 I boil them starting with hot tap water. Then in the oven for 15 minutes 10 to cool and they pop right open.
I think out of all the video tutorials I have watched today, this one might produce the best tasting chestnuts. To be honest, I don't have those childhood memories of roasted chestnuts, I have never tasted one. But our local grocery store had them in and I thought....why not.... I hope I am not disappointed and these live up to all the hype of roasted chestnuts at Christmas time. Thank you for sharing.
Thanks for this video!!! I just harvested my first big crop of chestnuts from my 2 trees! I was looking here for ideas and found your video! Planning to try this recipe tonight! Thank you!
Dear Joe. Soda is 3/18/24. I had shopped my grocery store frequently in Nov & Dec for chestnuts. Produce staff didn’t know what chestnuts were! What is happening to this world! Instead, I ordered several pounds via mail order & froze them. Today I followed you recipe exactly. They turned out perfect! Thank You! I’m making a large batch of dressing with roasted chestnuts, wild rice & cornbread. I will freeze small batches to accompany pork or chicken dishes. I had researched many videos but yours is MAGNIFICENT! Johnny in Vegas.
I was wondering how to keep the chestnuts I gathered in October for Thanksgiving and Christmas. Did you freeze the peeled or unpeeled? Unpeeled could be used in Joe's recipe.
Teaching myself how to cook chestnuts. I live within fifteen minutes of Central Flushing in NYC and am teaching myself preparation water chestnuts , lotus root and bamboo shoots . I enjoy your channel.
I love chestnuts , my mom used cut the tips off and to roast them in the oven !! But it would take a lot of time .. I’m going to try your recipe !! Thank you !!
I’m Portuguese we always do chestnuts every year. Back home we grew them so we had to check all them same way he does make sure the nut is tight to shell and it’s firm. But we just boil our chest nut no cuts at all! For about 25 min or 30 min a kg then just let them soak in that water never take nuts out of water when you take them out you peel so easy and the are sweet and delicious but you gotta know who or where the nuts come from
Happy Thanksgiving 😊 🦃👍 looks delicious 😋 when I lived in NYC I remember the smell of roasted chestnuts 🌰 out on the streets. Miss that smell of roasting chestnuts up and down the streets of the 3rd Avenue street vendors and the hot pretzels were so delicious as they picked up the scent 😋
My grandmother grew up in the North Carolina mountains, and she could remember when chestnut trees were a lot more plentiful. They would gather up the nuts and roast them for Christmas. Now days you'd be hard pressed to find a chestnut tree in the same area she grew up. They're making a comeback in places in NC, but nothing close to what they once were.
I was born and raised in Italy until i was 17 And my greatest memory of the chestnuts (Castagne) Is from one of my aunts in L'Aquila - Abruzzo She would cook them after soaking in a bit of red wine on a " holy" pan on her wooden fireplace 'till they open nicely..let them rest under a humid towel for 20 minutes...while the husband comes back from hunting rabbits So no butter..no oil... Good old wine! Salute e buon Appetito! Belle memorie! Semplice ricetta.. Padella con buchi ! Pan with holes..the older the pan the better 😊😊
Thank you Joe I remember my dad doing chestnuts like that but not with butter. They were so good. It's hard to find chestnuts around South Carolina where I live. Again thank you.
What the heck are you talking about! I am from Italy and chestnuts are broiled on an open fire. The cooker is round about five ft tall. First bottom half is the fire and the top half as a grate where the chestnuts sit and cook, we also throw salt from the top and it gives a salty taste when the salt hits the fire and creates a smoke that goes up thru the nut and gives a nice taste. Keep your oil!
I love roasted chestnuts , It is a memory from my childhood of being with my mum and buying them in a little paper bag already roasted along with warm sarsaparilla. Mmmm😊We had a Yorkshire range and these would be cooked in the oven , I would knick the outer skins to aid the cooking process.🥰🇬🇧🥰
Maybe these ended up tasting good and maybe that's the way they do it in Italy, but just let's get one thing straight: cooking in water or any liquid is not exactly roasting !
This was a perfect video today as I was wondering last night how my Nonna used to made these. The story goes that my Sabatini relatives had a chestnut farm in Pistoia.. Sadly there’s no one left to ask about this. But I have looked up information about chestnuts and I am fascinated with the pods. I think they are beautiful so maybe it’s in my blood.
Hi Joe, can you use some spice with the butter???? I watched 3 other vids on this and by far yours is the one I'm going to use. Thanks for putting Frank to bed, i know you love him, I DON'T...How do you store the leftovers if any.?? You missed me pulling into your driveway..😅😅😂 p.s. I did this according to your instructions and the only problem I had was that in some of the nuts I didn't cut deep enough and so those I had to crack the shell with buttery fingers. I added some salt and Italian seasoning and they were delicious. I also used my cast iron skillet and I found that to be the best. I ordered a chestnut cutter on Amazon after I saw how that works and how EASY it is to use. I hurt my left thumb trying to dislodge the nut.😢this tool is highly recommended for scoring the nuts. The butter is the a+ ingredient and they taste sooo good. I'm making this again as soon as my tool arrives. Thanks again Joey😊😊
Have you ever tried a sprouted chestnut? You get a tree that pops out, too!.. What kind of chestnuts are those? I'd love to get a few to grow, or some scion..
So, Joey, I'm not kidding, my chestnut trees are producing and I'm in compitition with the squirrels! So, I get home from work today and let my dog out, he's got a squirrel trapped in one of my chestnut trees. I run over there and start yelling at the squirrel to drop the nut and we'll let him go. He's running around in the tree with this chestnut in his mouth and finally stops and drops the nut at my feet! and yep, there was one of the three that was good! Tooooo funnny! So, anyways, I'm getting my nuts as they drop and they are not dried, so I don't need to soak them, but the wine is a great idea for flavor. I love getting food that our Lord provides! God Bless you and yours!
Ciao Bello, I wish we could have chestnuts all year round,I don't know of any Italian home that didn't make chestnuts the whole time they are in season, my favorite way is to peel them and boil in water salt and bay leaves. Have a safe and wonderful Thanksgiving to you and your family, and everyone on this channel
Hey Joe I have subscribed for many years and I haven't seen you in a while . Maybe I'm not getting your notifications anymore. But I did get this one I'm glad about it.
I tried making these a couple days ago, but watched a bad video with WRONG directions. By no means should anyone cook these dry in an oven for 20-30 minutes at 350F. They’ll be too hard to peel! Joe’s recipe will work though!
I’m thinking your kid just got home and he’s about to force an edit on your video. Awesome method can’t wait to try it. If you like things more savory I’m curious what if the soaking liquid is a bit more of a light brine with some salt and a little brown sugar? Still finishing with the butter. How do you think that might work out? I usually like my nuts on the salty side, wait what?
Joe, For Christmas, my wife gifted me a chestnut scorer (looks kinda like a nutcracker). Thoughts? Also, would your cooking instructions be any different if I cooked these on a gas grill? Thanks... Paul
Wooow, totally different recipe. I wish i came to see this before i roasted. Looks so juicy, moist and buttery. I followed Jamie Oliver and they came out dry because they were not soaked , just washed and i cook them into oven. Next time i will do it this way.
💕 I've never had Chest Nuts, but have heard they're awesome. Love your Dad's recipes, thank you for continuing to share his Recipes with us, God bless you all this Thanksgiving, Christmas and New Year Season, love and prayers with you all 😃
Love the video. Just one thing - the reverb. You need a better mic setup. I would assume that you're not trying to show off how big your kitchen is, but the booming echo of your voice in the room is a bit of a distraction. Now that that's out of the way, this video makes me want to go out and get some. It's been many years since I had chestnuts "roasting" on an open fire.
Good video. Sadly this guy talks waaaay too much and a lot of it is unnecessary. Here's the quick recap. 1-check/get rid of spoiled chestnuts. 2- rins/dry chestnuts and then make a middle cut with a knife. 3-soak chestnuts for 30 in water. 4- take them out and place them in frying pan and throw in some butter and toast em. Done.
This look good, but these are not roasted chestnuts! I thought he was going to finish them off over a fire. I'm sure if he did this it would be phenomenal. Don't forget to get newspaper and make a funnel to serve.
I live in Alaska but spent 8 years in NJ. My favorite thing at Christmas was buying roasted chestnuts on the streets of NYC
As a child growing up on the lower eastside of Manhattan, my dad would often buy toasted chestnuts in a bag from street vendors in the winter. They were so good and hot with some salt added. Hot soft* pretzels 🥨 ❤

So glad you and your family enjoyed them! Welcome to the Italian family 🤣❤️
The talk is fine. Brings back memories.
Great recipe! Thank you! Can’t wait to make some👩🏼🍳. Thank you for the cultural background too! Always nice to learn more about Italy and Italians.
Amazing and lovely! Thank you! This was not my dad's technique, but I learned a lot from YOUR technique! Lunga, Vita, Salute! We all learn from each family and style. The flavor of love!
Thanks, Joe. Finally, I now know how to cook and prepare chestnuts properly. Merry Christmas!
I love chestnuts also. I use a Chestnut knife I bought for $5 it’s great to score them. While my oven is heating to 450 I boil them starting with hot tap water. Then in the oven for 15 minutes 10 to cool and they pop right open.

Hello Joe I am trying your recipe right now in Niagara Falls …Canada I liked the butter in the end…I will keep you posted
Making my chestnuts now. Ty for all the good tips. Blessings 🎉
Somehow, I’ve never had chestnuts before. Bought some yesterday. Thanks for the video!
Nice information, I bought recently roasted chestnuts, I never cook chestnuts, time to learn :)
Hope you enjoy
Happy Thanksgiving Joe and to your family 🦃🍗🧙♀️
Thanks so much
I had a chestnut tree back home, and I always love those. We just boiled them with salt.
Wish I had a chestnut tree too!
I love chestnuts , my mom used cut the tips off and to roast them in the oven !! But it would take a lot of time .. I’m going to try your recipe !! Thank you !!
Sounds great!
Had them every holiday at my grandmother’s since I was born … 57 years ..
Happy Thanksgiving to you and your family, Joe. Also to everyone in the comments section.
Happy holidays!

Wow sorry to hear that, the world would be a better place if there were more chestnut trees, that a for sure!
Those look great! I love what you said about the family at the end! New subscriber here!
I was born and raised in Italy until i was 17
And my greatest memory of the chestnuts (Castagne)
Is from one of my aunts in L'Aquila - Abruzzo
She would cook them after soaking in a bit of red wine on a " holy" pan on her wooden fireplace 'till they open nicely..let them rest under a humid towel for 20 minutes...while the husband comes back from hunting rabbits
So no butter..no oil...
Good old wine!
Salute e buon Appetito!
Belle memorie! Semplice ricetta..
Padella con buchi !
Pan with holes..the older the pan the better 😊😊
Thanks for the tips joe. Going to try this tonight. Cant wait 😋
Have fun!
Got a huge chestnut tree in my yard feeling pretty lucky
Thank you Joe I remember my dad doing chestnuts like that but not with butter. They were so good. It's hard to find chestnuts around South Carolina where I live. Again thank you.
The story goes is that , the eastern U.S. chestnut trees had a disease , years ago , so chestnuts are not readily available .
I'm in the upstate SC, I planted 2 chestnut trees 5 years ago and this morning harvested my first big crop, about 2+ gallons!!!
Butter man, that’s unheard of😂😂😂. Love it and I’m eating chestnut while you’re roasting it but without butter. Next time I’ll do it with butter 😂😂😂
What the heck are you talking about!

That’s how they are done in Portugal and Spain too . Street vendors selling them on the street .
Calm down
Fantastic
Butter is not Italian way but forgiving we are in North America!

How do you keep them fresh after cooking?
Have you ever tried a sprouted chestnut? You get a tree that pops out, too!..
What kind of chestnuts are those? I'd love to get a few to grow, or some scion..
I have gathered chestnuts in late October, how can I keep them viable for Thanksgiving? If I store them, won't they get dried out?

LOVE your videos, I subscribe! Where you bought your chestnuts? What brand name do you recommend? Thank you very much
You sound like the guy at the fair selling kitchen tools.
💗 We used to roast chestnuts in the fireplace when I was a kid. Darn.... Now I want chestnuts!! 😋 Thanks so much for sharing, Joe.
You are so welcome!
Never saw butter added before--interesting to me.

Serrated knife or bread knife makes the cutting part much easier
No one in italia cook chessnuts like that 😂

Say "you're gonna wanna" one more time!
Just started eating these last year. I've alway burned them or they were not finished
Still boiling waiting for them to open up just like the ones you had
I can’t believe what I saw you doing with dose chestnuts next time use a chain saw to scored them 😂
Wooow, totally different recipe. I wish i came to see this before i roasted. Looks so juicy, moist and buttery. I followed Jamie Oliver and they came out dry because they were not soaked , just washed and i cook them into oven. Next time i will do it this way.

Llafazan i lodhshem!
video starts 3:00 mins in
Doesn't use 10 words when 100 will do. Yap yap yap yap yap....😂
I had to stop watching. Too much talking.
Yet you hardly used any words, and what did you teach?
@aaroniouse English.
Standard American I think k
Done.
Thanks for the view
@@Cookingitalianwithjoe thanks for giving me the opportunity to report your video as a spam.

I’m italian, I can’t help it 🤣 CC or not, thanks for watching the video

😊👍🏼🌺

It looks like eating a huge acorn lol
10-15 minutes I’ll never get back😤
Unnecessary talk
Just move on to another video if you aren't patient enough to hear what he has to say.
Unfortunately too much talk for nothing
Yeah he has an annoying voice
I like his talking, gives me a dad vibe
I agree too much
they are undercooked ... you should leave them more in the pan ... much better in taste
The butter spoiled them, olive oil would be best and heathier
No salt? 🤣
Can you eat them raw?...
You can but not as tasty and the structure is also different - image eating raw yam vs cooked one.
This videos is about him!!!! Nothing else.🤪🤪
What variety are these? The nuts look dull and old. Fresh chestnuts are shiny and should not need hydrating.
Followed your recipe wasnt a fan the chestnuts were raw and to buttery for me
Oh no!
Yeah I went back to old school just soaked in water for 2 hours then roasted with a little white wine.
my mom asked me to comment since she cant type, Unnecessary talk !!
Too much talkin
Terrible. Undercooked, even though steamed for 25+ mins, flavour profile all wrong
Had to turn off half way. Too much talking. Even for an Italian. Get to the point
what's this bullshit, boiled and buttered chestnuts, these are not roasted
