    Try this. You should add additionally: garlic, black pepper and bay leafs. To start the fermentation you should add a tbs of kvas from fermented sauerkraut. You should keep this in the jar for 6-7 days. After that you can consume the juice. This is an advice form an Eastern European. Try it. You will see the difference. Additionally: for 1kg beets use app 1 liter of salty water (1 tbs of salt for 1 liter of water).

    I used your recipe!! My beets are sitting in a glass jar with mustard seeds, black pepper, salt and water.
    Years ago at a farmers market a family sold homemade fermented beet juice and freshly cooked pita chips. They sold lots of other foods too but I only remember the heavenly taste of fermented beets and crunchy addictive pita chips 😂😂 I pray mine ferments as lovely as theirs 🙏🏻

    How does it ferment after you have sterilized it? I make wine and add yeast after sterilization.

    I am new to this am totally scared to do because I am worried I may not do it properly and it will result in food poisoning. My mom or grandnever fermented food, so I am new to it. The only thing I can make is curd. Is there a way that I can safely and confidently do some fermentation, like an easy one to start. Also how do I confirm it’s safe..because I live in the US and it’s starting to get cold..we already have temperatures 18 to 20 c

    Md ji nice information, but u can make it without boiling it, as Kanji of Black Carrot is made, that is particularly after winter in Jan -feb whole method is, same, except boiling it, just cut it in slices add drinking water &if possible put in sunlight for few days to get it fermented, more over if someone makin kanji of black carrot of say 1 kg can add 2 beetroots in the same water same spices, We in North India drink Black carrot + Beetroots kanji , so try it also

    I am eager to try this. During the winter months there isn't a warm spot to ferment this in. Can it be made more slowly at a cooler temperature?

      Yes it just takes longer, you can store on top of refrigerator or in the cupboard above if worried about cold.

    Quick solution, just clean and cut beetroot, cook, and allow it to cool down after that put it into a jar add some natural vinegar, and close the cap. The next day it is ready to serve.

    I prepared beetroot kanji on 06.07.2023 and kept in kitchen for 4 days without stirring it when opened it on 5th day I saw two white patches on the surface. What is it? Was it safe to consume such kanji with white patches?

    I've tried fermenting beets, it always turns into a kind of wine. There is too much sugar in beets so the yeast takes over before the lacto bacteria gets a chance

      Peel the beet to get rid of yeast on skin. Use boiled and cooled water. Keep on counter top in cool climate. In summer heat, keep in a cool area such as in the pantry or kitchen cupboard.

      @@vungoc-bt1hp as far as I know it is fine for normal healthy persons. However, if you are on a salt restricted diet due to blood pressure or kidney problems, please check with your doctor.

    Madam, I have made kanji four times so far. Every time everything was fine, but when I went to prepare the fifth batch, after four days I saw that the fungus had fallen off, the first two days I poked the lid of the jar a little (with a clean dry chop stick). Only on the third day the lid was not opened. Now, can Kanji with fungus be eaten or should I throw it away? Please let me know. I know, I bother you a lot, ask a lot of questions. Please forgive me.

      Thanks for asking question! There might me several reason maybe water you have used or didn’t stir the kanji everyday.i suggest if you watch full video and check which step you skip while making kanji .hope that helps

      Beet root has oxalic acid you will get kidney stones if you drink daily. If it is fermented with oxlates eating bacteria "oxalobacter" then its fine.

    This is all a bit of a faff. Just chop the beetroot, teaspoon of salt, chopped fresh garlic, pour in warm water and close the jar, leave for a week. Sorted.

    This is Kanji but not Kvaas. Kvaas is a Russian/ Ukrainian drink made with sourdough bread. Please provide accurate information.

      Neither in Jamaica 🇯🇲. They only bring the roots to the market, but you'll only use the roots for this recipe.
