    Really enjoyed seeing this video as I have been wanting to pressure can my own pumpkin pie filing. People rave about my pumpkin pies and I wanted to have a way to have it in jars. Being a new canner (got my presto 23 qrt a couple months ago) there is so much to learn but I absolutely enjoy the process. Over the last couple years many decided to be scared while others decided to prepare. Been learning the ins and outs of canning, gardening and food preservation which overall is a lost craft which I feel will be brought back by necessity.

More are going to start waking up and realizing that they have waited too long to get over that fear. Rationing of food will be here before much longer and people are going to need to rely on everything that they have stocked back.       Thank you so much, I have watched this 3 or 4 times. I had 13 pumpkins and got all of it canned except about 9 pints so my question is all I have is quart jars left, how long do I pressure can quarts?

      Thank you so much and happy to hear that you enjoyed the video. Now when pressure canning it bring it up to temperature slowly. Also don't worry if it compacts some in the jars it will be just fine. Absolutely love this recipe of mine and have used it for many years. Let me know how your batch turns out.       @@OldWaysGardeningandPrepping I have an electric canner that I absolutely love. It makes it so easy. I'm still cutting up pumpkins, too! Also made some pumpkin seed powder that I put on my cereal. So good for us!

    absolutely beautiful pureé! I use free pumpkins after halloween that stores get rid of. I have freezed portions and place them in my dogs food. I'm going to try your recipe. Any thoughts on carving pumpkins vs. smaller cooking ones?

    That look absolutely amazing especially with the sun shining on it on this very cold snowy day today :-) ..I wish I could put back like you do..I can't imagine what your panty looks like..must be amazing . I have a glass top stove- I've heard you cant can on them some say you can- I dont want to take a chance but I might look into an outdoor set-up like yours .

      Thank you and glad that you enjoyed the video. Needless to say yes we are not going to starve no time soon. 😉 Don't blame you one bit of not wanting to can on top of your glass top stove. Some stoves you can some you can't but the price risk is not worth it. Personally love canning on my propane cooker it does perfectly well as long as you keep an eye on the flame underneath and adjust accordingly. Will tell you they are worth the price to pay for them and they're not really expensive at all. Mine was just a little over $100. It's getting about time for me to buy another one because this poor thing is over 10 years old and I have worked it to death needless to say. 😉 Take care and have a blessed day. ❤️🍀

    I am so glad I found this video! I have been looking for someone who has actually been canning puréed pumpkin for a long time. You seem like a level headed person. I read that sugar can retard botulism growth also.
    This pumpkin purée looks a lot thinner consistency than the pumpkin from the store. Does it thicken up as it cans? Maybe if you baked it instead of boiling it it would be thicker.
    PS Where did you get the 30 minute time for canning pumpkin?

      Good evening Cynthia and happy that you are so glad to have found my video. Yes I have been canning pumpkin for a long while and thank you for the level headed compliment. Now let's have a little talk about this video. First off the title states this is a pumpkin pie filling recipe and not plain pureed pumpkin which is a big difference. It is going to be a bit thinner due to being pumpkin pie filling. It's not meant to be the consistency of pureed pumpkin. Also did you happen to notice what I was cooking itin? That wonderful device is a large countertop roasting oven. In which all of that glorious fresh pumpkin was baked and not boiled. It is extremely important when watching a video to pay very close attention to what is being done and how it is made. As for the time to process it was handed down to me and that is how I have been doing it for many years. Also wanted to say that the first giveaway that it wasn't plain pureed pumpkin was the addition of sugar in the recipe. Take care and have a blessed day ahead.❤️🍀🦉

    Do you leave your roaster on while blending the pumpkin? How much more cooking time after adding the sugar & spices? Love you gal, your a great inspiration!

Cooked it just enough to make sure that all the sugar blended in and it ended up the consistency that I like it to be. Also taste it to make sure that the seasoning is the way you like it.     I am going to use my new Dremel to cut the Pumpkins. I am disabled and it affects the use of my arms. I can use the Dremel to at least start the cutting then use a knife if need be.

    Does it make a difference in canning the Pie Pumpkins vs. the large carving Pumpkin? I’ve never tried to can it before but I have wanted to.

    The Amish community have been canning food for years that FDA or whatever those alphabet companies tell us that are unsafe to can. They can all sorts of dairy products for years that apparently we are not suppose to can.

    Hi, love that youre a rebel canner. Go sista! I do water bath canning, as i dont have a pressure canner, frankly, they scare me. Can this recipe be water bath canned? I have a memory of my mom canning pumpkin years ago with no pressure canner. Is it do able? Thanks for the video.

      Good evening Phyllis and happy that you enjoyed the video. Yes I take being a rebel canner seriously due to too much truth being hidden from others due to food lobbyists and money. Just wanted to say that pressure canning is not as scary as most believe it to be. You just have to get over the first time hurdle.😉 Now with that said I have seen a whole lot of different views on canning pumpkin especially this recipe. Now my Grandmother water canned pumpkin chunks but never pie filling. Have personally seen several who do water can the filling and know it was done for over a hour. As for knowing personally if it's safe that I can't say due to me always pressure canning it. Here is a good vlog to read more about doing it in a water bath canner and ultimately it is your choice.

    thank you I am going to try this next year I am going to grow sugar pumpkins next summer if I was going to use pumpkin pie spice how much would I add instead of the ginger and would I still add cinnamon? thank you again

      Your welcome Mandie and welcome to my channel. Happy that you enjoyed the video. Now to be honest I haven't used pumpkin pie spice in a very long time. My best advice is to season the batch to your taste. With this being said season it lightly at first and taste it again after it cooks down. Cause the flavor will intensify as it cooks down. If I remember right the pumpkin pie spice has cinnamon in it. So in all honesty check the flavor of the seasonings before you can it to get it exactly the way you like it.     I would like to can pumpkin puree can I use the psi 10 for 30 minutes for pints if it's just the puree ?
    I like to make different things from my pumpkin not just pie .

      I did before you answered because I had already had my pumpkins cooked down and put through the ricer and then the food processor . It turned out great and yummy. I love pumpkin any way I can get it . I remember Mommy canning it when I was little. She use to cut in into cubes and cook it until it was soft and serve it with homemade butter and cinnamon sugar we loved it. I also did that raising my children and also grandchildren. They loved when I would make pumpkin pancakes with a jar of my pumpkin. When I can my pumpkin I don't add anything to it because I make breads, rolls, muffins, pies,soup and even add flour and other ingredients and make fried pumpkin cakes like you would make with leftover mashed potatoes. I also make pumpkin fudge, pumpkin butter when I'm making my apple butter, also pumpkin candy like you'd make potato candy. ( with the exception of instead of using peanutbutter I use creamcheese mixed with confections sugar and a tad of vanilla and cinnamon it'sgreat)

      Yes I left the juices in with them. It wasn't much water but mostly from the sweet potatoes and the sugar. Just mixed it up well and jarred it. Take care and have a blessed day.❤️🍀🦉

    I just though of a question. Why do you wash your jars after you put them in the canner?

      No problem at all and I am glad that you asked this question. In the pressure canner you add a little bit of vinegar to keep your jars from becoming cloudy from hard water. Personally I feel that the vinegar might corrode the outside of the lids and that's one reason why to wash your jars after canning process. The second reason is there might be some siphoning out of the jars and you definitely want to make sure that you wash that off of your jars as well. Because that can cause foodborne illnesses on the outside of your jars. Also the instruction manuals tell you to do the wash after canning. Hope this answers your question.     do you drain the water before you use your blender on them? if not how many cups of water would be best to make sure I don't over do it?

Just barely put any water in the roaster most of all the juice comes from the sweet potatoes and try to keep as much of the flavor in them.     How long do i WB for the pumpkin pie filling i dont have a pressure canner but i have WB for the last years but never tried doing pumpkin or any squash because they said i could not do it with out a pressure canner.

      I got 8 quarts of plain pumpkin, couldn’t decide pumpkin pie or pumpkin soup. So plain it is. I cooked quarts 65 minutes at 10#. So bright and beautiful. I could’ve had 9 quarts but we ate one for lunch in soup. 🥰

      Pumpkin is a low acid food, water bathing will not get it to the temp necessary for safety. Use a pressure canner.
