- "Rice, the Italian way" Episode 2: Michelangelo Mammoliti, two Michelin star chef of La Rei Natura at the Boscareto Resort, prepares the perfect chicken stock, or liquid gold, as the basis of an ancient peasant rice recipe. A very particular cooking technique, close to pilaf, and the use of all the less noble parts of the chicken, give life to the "Dirty Rice": a leftovers dish cooked according to the canons of contemporary Italian haute cuisine..

Should be Italian by default, optional to use ai "translation"
You guys AI for this?! That’s amazing!
I agree that the original Italian should be the default, but I understand if you wanted to showcase it on this video as default to reach more people. While I can't vouch for the translation itself, the voice and execution is well done. Impressive
wait i didn't even realize it was dubbed as i was mostly listening to the video. then I watched it and the lips really give it away, but the voice is really good
I would also prefer it to be in Italien, as it makes it so much more personal for the viewer and the subtitles on all of the videos are very good. As for the dub in general, it is extremely well executed apart from a few details, that seemed off, but I definitely would prefer it, if it was just an option.
One of the best recipes I have ever seen on this channel. If I had the money I'd be on a plane now!
“Dirty rice” also has a particular and similar meaning in French Cajun cooking in Louisiana in the US. One difference is the addition of spice, Cayenne, in the Cajun version.
The few times I've had it, there was offal and I think some andouille.
Pazzesco
Beato chi faceva le domeniche col tartufo... noi coniglio all'epoca molto contemporaneo. Meraviglioso il lavéc.
Fantastic! Thank you for sharing this recipe, chef🫡 Thank you to the channel for this amazing recipe❤
Che opera d arte! Grande chef!
Definitely one of the best food channels, thank you
Un'opera d'arte!🙏🏼❤
Congratulations chef 🎉

Thank you
Cold skimmer spoon is the best tip of the month! 👌
Top!!
Incredible technique.
thank you !! absolutely loved it and thank you for translating it as I have been struggling :)
Fantastico e ricetta spettacolare!
Dirty Rice, with Chicken Broth...
Understated, and simply Brilliant Chef !
Dirty Rice is a staple in the American south, especially the State of Louisiana.
Your version however is indicative of a Michelin 3 Star presentation.
I was fascinated watching you explain, and you and your Sous Chef, Christian putting this together.
Passion, expertise, and a clear goal/end plan.
Again, Simply Brilliant you two.

Stupendo 🤩
Looks fabulous
Bravo!!! 👏👏👏👏👏
This is fun to see as it's also how my Portuguese family cooks rice! Always thought there was a similarity to risotto but I didn't know Italy also used this same technique of just stirring a little bit and keeping the rice wet.
Grazie Chef ❤
There are some seemingly small techniques used here that could be optional in a home kitchen, but I am so glad we can see this process so that I can make kitchen magic at home
Saluti.

Amazing! Wow
Complimenti allo chef
Cuoco giovane ed ambizioso 💪🏽💪🏽💪🏽.
Bravissimo.😊😊
I’m really amazed that this channel doesn’t have at least 10 times the subscribers.
BTW- the dubbing is excellent.
Incredible! This “Dirty Rice” dish is very similar to our Cantonese claypot rice recipe. Yum! They are delicious and bring back my childhood 😢!
This fascinates me ! Cantonese? I Spent a lot of my childhood in Hong Kong. Send me along a recipe on claypot rice if able, I'd love to try. And.... your version better have Star Anise or Chinese 5 spice in it !!!!!
Just sayin' !
Respect !
I thought the same! I am from northern Piedmont, where the Italian rice is grown, and I have lived in Guangdong for a few years and love 煲仔饭. When I saw this recipe (it’s quite different from how I make risotto at home) and the stone pot I was really surprised.
@@mcmdrpiffle447nope, doesn’t use star anise or five spice 😂
Fantastic
Hello my new friend
thanks for the video
love your channel
Riso, tartufo melanosporum, un brodo fenomenale….e lavec ❤
The AI dub does the job very well.
Is the translated voice made by AI?, it sounds a bit wierd
You cut the absolutely crucial step when he started to boil the chicken again after putting it into the ice water! Did he put it back into the same pot after clearing the impurities, or into a pot of fresh water?
Chef puts the chicken, from the hot pot with the impurities, into the pot with cold fresh water and then starts to boil it with the vegetables. The water with the ice is for the strainer to keep it cold so when Chef uses it to skim the impurities the second time, the scum sticks better to the cold strainer.
Thanks, but why put the whole chicken in ice water? It will soon be heated up again.
A me sembra la stessa pentola, infatti l'acqua è a bollore
Do you have a link to purchase the Lavec soapstone pot?

How do you say over-engineered in Italian?
🤩🤩🤩😍😍😍👏👏👏👏👏
2024 cuisine is: "I won't cut the vegetable to not pollute the broth" and then boil the pepper in a plastic bag
just like my cajun grandma made it!
i never understood the chefs hat and the loose sleeve ends of the jackets
You should drop episodes in both English and Italian.
This is the first video in which I experience English voiceover, and it's very nice.
Thank you for the added effort, Italia Squisita!
Com'è il voice over?
its nice once in a while someone speak english instead of reading the substitle
Vidio kamu sangat bagus saudara ❤
Well I just learned that two cultures have a dish called dirty rice. And they are very different.
so ... a sunday roast is usually real truffle Risotto?
Absolutely not! He's obviously grown up in a lucky family.
Not really, he prepared a family recipe made in the traditional way. The truffle was added to the recipe because it is still a high-level restaurant.

Per che no corta il carote? Piu area si corta, no?
The AI dubbing might be great for some non-Italian speakers (I'm not a native speaker but I understand Italian very well) - but DO NOT make it the default, per favore!! Make it clear that people who don't understand the original language, can do this - but as I played this video, I was thinking for minutes why the audio wasn't synced with the lips of the host at all, and I missed the beautiful Italian language. From his lip movement, I finally understood he was speaking Italian after all, and only then understood what was going on. I think subtitles should be enough, this is an Italian channel, and subtitles can literally make every language on earth understandable - dubbing is, in my humble opinion, a lazy practice. Lots of love.
@@marcomele5954 come mai?
Ieat rice with truffle united state in Italian famous restaurant The chef and stuff is all Italian
This chef cooks so cleanly he makes me feel very dirty by comparison.
why does he have a translator, just make the captions and let me hear the chef!
You can chose the language track.
_Italia Squisita,_ please, give us back the original voice of the chef.
Using an outloud voiced translator is an awful idea.
Just testing AI dubbing, please switch to original language in yt options

Mah....
My grandma never made fancy truffle chicken risotto for me...
not for everyone....

It would be hard without resorting to profanity to describe how much I really, Really, REALLY don't like the AI dubbing. I am Piemontese and liked the old way of watching it in Italian. The channel is Italia Squisita. It is in Italian. So I looked for 'options' on language and found none. I looked through all the settings and found no 'language'. I did a Google search on how to change to original language and it was no help. I found YT video also no help. After all this, I am posting a comment. Please go back to the old way, and put it in the original language with ST, and make it EASY to change to dubbing if that is what you like. REALLY, REALLY don't like this. Thank you for listening.
Sento puzza di 1 euro al chicco
This is what happens when a 2 Star Michelin Chef discovers Dirty Rice on UA-cam last week and then trys to claim that his grandmother taught him how to make it. And it's Not even a Dirty Rice recipe... Hahahahahahahaha 😂!!!
