Baked Beans - Traditional Newfoundland - Bonita's Kitchen

  • Welcome to Bonita's Kitchen! Today we will be making Baked Beans, made with white beans soaked over night in cold water and so much more. Also in the blue bowl was two chopped white onions, there was a glitch in the video and the scene with the onions was removed. Please see recipe posted below for more details.

    Ingredients:
    2 medium onions 5 cups cold water
    2 tsp cider vinegar, or of choice 1 tbsp brown sugar
    1 tsp mustard ¼ Cup Molasses
    ½ cup ketchup Pinch black pepper
    ½ tsp sea salt 1 cup chopped fat pork or bacon
    2 cups white pea beans
    Preheat oven to 325°F bake for 3:30 to 4:00 hours, covered.
    Method:
    In a medium boiler with lid add 2 cups of white pea beans top with cold water then cover, ½ tsp sea salt, leave soaking overnight.
    When ready to start making the baked beans, you will need a cast iron pot or ceramic pot with a cover.
    Start with chopping your onions and add to the bottom of your pot, you can fry them first if you like the caramelization.
    Next drain all water off beans, then top with new cold water and boil for 1½ hours on medium heat with cover part way opened. When boiling, drain water into a container and keep for soup or baking, then add the beans to your cast iron pot.
    Then add 5 cups of cold water to your pot, in a small bowl mix together the remainder of your ingredients except your pork.
    Mix together, then pour over onions and beans in a pot, mix together then top with fat pork or bacon.
    Put the lid on the baking pot then place in a 325°F preheated oven for 3:30 to 4:00 hours, check half way through the bake time, add more water if needed then cover and continue baking.
    Bonita’s Tips:
    This is a serving for eight people if you like more double recipes. Bake beans can take a long time to make, so I reduced the bake time by adding an extra hour to the boiling process.
    When baked beans are done, remove from heat, serve hot or cold. If you would like to bottle them just follow the canning process, • Sterilizing and Cannin... link to process. Always label and date your bottles before storing them.
    Fry onions or fat pork to give the baked beans a caramelization taste.
    Roasted red peppers an excellent alternative for replacing ketchup in this recipe. Open up a jar or roast them yourself and puree in the food processor. They will add a pop of color and flavour and a extra tbsp of brown sugar.

    My mother used to make "Baked Peas" when I was a boy. The same recipe as "Baked Beans" but with dry peas, soaked, boiled and baked. I loved them. Haven't had them in years. Luckily, my wife makes great baked beans. Comfort food.

    Great recipe ! I grew up having baked beans with salt pork and anyone who has not had it like this should try this recipe! The salt pork gives it such a great flavor! Baked beans and homemade bread! Thanks Bonita!

    Comimg from Cape Breton, we were brought up on baked beans, we would have fishcakes & baked beans, delicious. Many years later I make beans & fishcakes. I will use your receipe next time . Any bread you like, toasted and buttered, the baked beans and put grated cheddar on top!!!YUM!!!     My father used to make baked beans. For him it was comfort food. He grew up in the country with no refrigeration so baked beans was a staple. It is great that others enjoy homemade baked beans but they are not for me.

    Very nice dish. Down in Boston, I pretty much do the same, although less ketchup, and add in clove and some sage. I ended up using bacon since it's a bit harder to find salt pork. Thank you for the tip on the bean water, I will start trying to reuse it.

      Bonita....have u ever tried frying pork and the onions together and then adding ??it's delicious and u don't get a piece of that pork as we sometimes do ...doing this really brings out the flavouring the onions and scrunchion....

    This is a good recipe. I like the salt pork but there's other things you can use too. I also liked how emphatic you was at 9:49 about that cast iron pot "lockin in" the heat.

      Bonita's Kitchen Just do them,Up and Put in Sterilized Jars then Bonita? Or In Canner, As Well? At Your,Earliest convenience 😊.👍 ♡

      Bottle them when they are hot and the bottles are already sterilized and then you can put them in a hot water bath for 10 minutes. They will keep for a long while for you, date each bottle and they are just as delicious every time you open them. :) Bonita

    Mum did this in a crockpot and put a whole onion in the middle while it was baking along with a few pieces of bacon.
    I have a request Bonita if you could show us a spaghetti and meatball dish from scratch ?

      I would have taken a picture if I'd seen this before now, but I'm sure I will make it again! We all liked this recipe even better than my usual, I think the vinegar and plenty of onion did the trick! Had it with homemade molasses and oat bread, what an excellent meal. I did some of my cooking in the pressure cooker to speed things up, but followed your recipe exactly otherwise!

    As we would say back home..."now for the gale storm watch". LOL! It is worth it though, they are so yummy. By soaking overnight it lessens the gale effect! Love your recipes so much I bought your book. Just waiting for it to come. I haven't seen a cast iron pot like that for years. My mom use to use one like it especially for her xmas cakes. I would have to cut out and grease 3 linings of brown paper. She would put a can of water in the oven next to the cake to prevent it from burning. It seemed to work. Do you recall this also?

      HI Peter, Thank you so much for your lovely message and for sharing those fun facts :) I agree with the soaking over night prevents some of the storm and it was info from our elders which I love....I can remember my Dad using brown paper in the case iron pan after he used it and greased it up. But not for cooking with but brown paper was big years ago. They would have rolls of it at the corner store, and tire your bologna or cheese in it. So fun......enjoy our baked beans recipe to the fullest and please followup anytime. :) Bonita

    I use bacon chopped up and brown it well then add the onions and cook until soft before adding to my Pennsylvania, USA style Baked Beans in a crock pot. I also add Worcestershire sauce and much more brown sugar and leave out the molasses.

    I hope you and your family are doing well and I thank you again for your library of videos during this pandemic! I have made a few of your recipes and they are so good! BTW I make your wheat and the white bread recipes once a week and my husband loves them! How do you feel about quick soaking the beans? I also got some beautiful smoked ham hocks (very meaty) and I love them in all beans. I want to put them in this recipe of yours. Would you boil the hocks for an hour or so to soften and pull some of the salt out? Thanks, I am making baked beans for my husband and I on Thursday (Thanksgiving) so only a small batch and I appreciate your doing this video. But I think I will boil them first just to make sure I can get them to release the beautiful meat on them.

Of course you can quick soak the beans but it may need longer to bake, not much maybe a extra 1/2 hour, boiling the ham hocks first to remove the salt and fat is great.     they look so good... but I have a question...when you went to combine it all...you said you baked your beans for 1 1/2 hrs first...did you mean you baked them in the oven...or you cooked them on the stove top first.. ? thanks...

      Sorry Glenda I'm thinking as you view the video you will hear me say a couple of time to soak, boil then bake. You boil them for 1 1/2 hours first, and then bake them for 3-4 hours it could be less, depending on your oven. Sometimes I try to say so much I do make the mistake of saying the wrong thing, but I also have the recipe posted under the video just in case I miss read the recipe.     Hi, Wondering what's in the square blue dish...is it onions? They are not mentioned and whatever is in the dish seems to be in the cast iron dish before the beans are layered...but the video doesn't show it and the ingredient is skipped. thanks! Looking forward to trying this recipe.

      BAKED BEANS:
      2 Medium onions
      5 Cups cold water
      2 Tsp Vinegar of choice
      1 Tbsp Brown sugar
      1 Tsp Mustard
      1/4 Cup Molasses
      1/2 Cup Ketchup
      Pinch black pepper
      1/2 Tsp sea salt
      1 Cup Chopped fat pork or bacon
      2 Cups White pea beans
      Preheat oven 325°, Soak Beans overnight in cold water, Boil Beans for @ Min. Bake Beans for @ to @ hours, covered.
      Method:
      1 - In a medium bowl, add 2 cups of white pea beans top with cold water then cover, 1/2 tsp sea salt, leave soaking over night.
      2 - When ready to start making baked beans, you will need a cast iron pot or ceramic pot with cover.
      3 - Start with chopping your onions and add to the bottom of your pot, next drain all water off beans then top with new cold water and boil for 1 1/2 hours on medium heat with cover part way opened.
      4 - When boiling have completed drain water into a container and keep for soup or baking, then add the beans to your cast iron pot.
      5 - Then add 5 cups of cold water to your pot, in a small bowl mix together the remainder of your ingredients except your pork or smokey bacon.
      6 - Mix together, then pour over onions and beans in pot, mix together then top with fat pork or bacon.
      7 - Put lid on bean pot then place in a 325° oven for @ to @ hours, check half way through the bake time, add more water if needed, then cover and continue baking.
      This is a serving for eight people if you like more double recipe. Bake beans can take a long time to make, I reduced bake time by adding a extra hour on the boiling process.
      When baked beans are done remove from heat, serve hot or cold. If you would like to bottle them just follow the canning process. Always label and date your bottles before storing them.

      2 cups of DRY beans as they come from the store. Soak in water overnight and they swell up to make 2 or 3 times as much. Those beans plus the sauce and pork, makes enough to serve 8 people.

    I have been looking for s diabetic jam. I wanted a freezer jam with fruit. I had one for years and I threw it away. Now I am diabetic and I can't find one. I used to have a really good canning site for everything and our computer had problems and I lost it all. I would appreciate it if you had one, I might just have to buy a book for it. I don't know. Thank you for this baked bean recipe. My husband bakes his way to much and they are dry no juice, I won't eat them.

      Hi Donna: Thank you for your message and for visiting our channel, I'm so glad you enjoyed our recipe for baked beans. They are so good and I bottle then so we can have some on hand. Its very hard to find diabetic jam because sugar is always the thickening ingredient. But I do have a delicious dessert sauce that only takes 1/2 cup down sugar or less, and you can put in your mason jars and keep in your fridge until all eaten. I use it over my bread, desserts and ice cream or pudding. I will share with you my recipe and if you wish you can watch a video I have there for Pat's Dessert ua-cam.com/video/FUmZJ6_AQXc/v-deo.html and you will see me making it.
      Dessert Sauce:
      2 cups mixed fruit, berries, fresh or frozen
      1/2 cup brown sugar or less
      1 tsp vanilla
      2 tbsp corn starch
      1 cup water
      Method:
      In a saucepan on the stove top on a medium heat, add mixed fruit, brown sugar, water mixed with corn starch. Let it come to a bowl then remove from heat and had vanilla. ( or leave vanilla out if you don't like it )
      Pour in clean mason jar and bring to room temperature then store in fridge, or serve hot over a desert, or use as a jam.
