Here are the results of my grilled ham and cheese with mustard and mayo, using 2 slices of Hero white bread: - The Levels software scored it as "stable response" with a 16 point rise in glucose. - Interestingly, the peak of 16 points occurred only 30 minutes after eating (normally, I peak around 1 hour) - 55 minutes after eating the sandwich, I had returned to my baseline glucose of 81mg/dL So the inclusion of some protein and fat with this bread cut the glucose response almost in half.
Thank you for all the effort! Because of your testing the only Tortillas we use are Hero ( with Olive Oil) and La Banderita Carb Counter "street taco" size. I'm still wanting to try the Hero seeded bread... but now know to make a Sammie or something with it, vs. just having Toast and ChocZero Jam.
I'm trying to wean my husband off seed oils and so got a loaf of the seeds hero bread. He reacted to the flavor as you did, sigh. Back to baking from scratch...
Thanks Hero Bread! I buy both the bread and tortillas. I am grateful for them. Price for me doesn't matter because it gives me many meals. The tortillas stick to eachother, when I try to separate them, they tear. What i do is take the task and try my best to separate and then put parchment paper in between. Nothing goes to waste. 😅
I just bought a loaf of the Seeded Hero Bread yesterday at Safeway for $7.99 which is the absolute maximum I will pay! Thank you Steve for this review, & thank you to the folks at Hero for listening & acting! Great job👍🍞
I have eaten the Hero bread consistently & daily since they changed to the olive oil, both the white and seeded. I never eat it plain so I’ve never experienced the bitter taste u had. I use it for various sandwiches and for French toast so it always contains protein. I love the fact of how fresh it is, fresher than most store bought breads. I freeze it, then wrap 2 slices it in a paper towel, then microwave on a low power of 4 for 1 minute 15 seconds. It comes out soft and fresh. If the shape is off I can stretch it out while warm. I test my fasting glucose every morning and after meals and never experience an unusual spike. U did help answer a question for me which I really appreciate. When I would eat a toasted slice w/ghee and Choc zero jelly, my sugar would rise and I couldn’t imagine that the Choc zero jelly was the culprit but never thought the bread would do that.… very interesting. Lastly, I would not buy the bread at the store as u will not get the freshness nor the shape it should be in as it is so soft. Their shipping is very quick and it’s packaged in a way to keep the bread from sitting on top of each other … I order 4 loaves at a time. The cost is less if u use their subscribe and save option plus each purchase gives u reward points that u can use as another discount on future purchases. I highly recommend this product. And by the way, my A1c just came back at 5.4 and I’m 73 years old.
I agree with store versus shipping comment. We have a Woodman's near us.. still 30 minute drive.. that's how I first experienced HERO... because stocks were so limited.. I just headed to website as well.. Now.. weekends are not complete without Croissants... can't wait to try the Cheddar Biscuits...
As a fellow Wisconsineer, i just wanted to thank you Steve for all your hard work on your videos. I started my Keto journey 3 months ago to the day(March 7th, 2024) and have lost 80 total pounds! My blood levels are normal along with my blood pressure for the first time in a decade. You were a huge influence in that and always will be as i continue this great lifestyle. Anyways, just wanted to thank you! Take care and god bless!
Hoot! We love the seeded bread! Thanks..I’m sure you know that Hero is coming out with all sorts of special buns. Even if they are pricey, worth it and that keeps us from overindulging. I use the bread heels for meat balls BTW.
We've been using Hero products. I'm on their mailing list, so I get a heads-up when they occasionally produce Hawaiian style rolls or croissants (and the latter are really great).
Thanks for sharing. Good to know the recipe has improved for Hero bread products. In my area it is available at Sprouts and it is very expensive, but it is a favorite in my household. We are finding that regular grocery chain stores like Ralph's and Von's now have additional Keto Bread options,. Hopefully, as we get more options the prices will come down.
I’ve been reluctant to try these because I count total carbs and I didn’t like the oil they used either, but they’re very popular at my store. We have the bread, tortillas, burger and hot dog buns. I may just give them a try since they use olive oil now 😄 As always, thanks for the re-review of these products ☺️
I haven't found Hero yet but I'm really intrigued! So happy to hear about their change to olive oil ( for you!) and that the carb response is really good for those of us doing Keto! Another great video, Steve!!
Thanks, Steve for all you do here. I don't do well with low carb bread and tortillas. My resent test was with Millie's carb smart bread tuna sandwich with lots of mayo and it spiked my glucose 36 points.
Steve, while I hate to ask you to continue to be our guinea pig, I would love if you would test, Hero’s Hawaiian rolls. It’s a new product and the taste is out of this world! It is so good in fact that I am completely suspicious. It is absolutely the best tasting keto bread replacement I have ever had, to the point that it tastes like genuine bread! So of course, I don’t think it can actually be keto! Lol
I love Hero breads. I thought the white bread had a slight sourdough flavor. The seeded is my absolute favorite & I’m so happy to see the glucose testing you did on it! I don’t think there’s a better tasting keto bread out there so far! I get mine at Sprouts. It’s expensive but so worth it. Thanks Steve for all you do!
I can't live without their seeded bread. I would continue eating it even if I wasn't keto. My favorite way to eat it is toasted with salted Kerrygold butter and keto honey from Wholesome Yum. Thanks for redoing the video, Steve!
I'm new to Keto and new to Hero. Their croissants are a once-a-week treat for me. Thank you so much for this testing as your results give me confidence that I won't be spiking my blood sugar or throwing myself out of keto by eating the Hero products responsibly.
Your shirt progression in this series was phenomenal 😂. I wish I could find hero bread in my town but have yet to find it. Thanks for the information & review.
I was tempted to stretch the filming one more day, as I have one more Lebowski shirt, but I had to get this video released to keep my regular cadence. 😉
Thanks for the great review Steve! I haven’t had a chance to try any of the Hero breads yet but if I can find them locally I will definitely give them a try.
Love Hero tortillas! They have that stretch to them that i haven't found in any other Keto tortillas. The croissants are fantastic too ,but out of my budget most of the time 😢❤
I freeze it so zero wasted! I try to have just 1 piece and it does come wide. I can cut it in half and make a decent sandwich. I taste the olive oil. It's the best tasting keto bread I've found. TY!
I so so wish I could eat wheat...so glad they changed it to olive oil instead of canola oil! Flax seed is great for blood pressure also! Thanks for sharing Steve!
Thanks so much for this review, Steve, I was one of your followers who asked for it. I am so pleased with the results you posted. We love the seeded bread and croissants and they are a “once in a while” treat.
When my family says “It’s so expensive”, my reply is “My better health is worth it to me”. I may have one croissant a month as a special treat and I savor it. Since being ketovore I never feel I am missing out on anything since cravings are gone. Thanks for all your efforts to keep us so well informed.
A dietary lifestyle, in my opinion, is "pay now or pay later" situation. Pay some money now on food, or pay later with bad health, doctors' bills and medications.
The Hero seeded bread is one thing that really makes being on keto less painful for my wife and me. In fact, I would venture to say that I'd eat this bread even if I wasn't on keto, though it is pretty darned expensive. The regular white bread is OK...not as good as the seeded bread though we don't get any bitterness like you did. Thanks for the re-review!
Thanks again, Steve! I eat two of the Hero tortillas daily, fried in avocado oil, and some garlic salt sprinkled on. Love it! I’m relieved you had no big issues with glucose or ketones…I don’t check either, but, like you, do not have any inflammation issues with them.
I love Serious Keto videos. The effort put into these review videos is really great. I especially appreciate the glucose and ketone response monitoring. Being relatively new to Keto and I.F., I have been strict with my carbs. I have kept my Net Carbs at
I always toast or grill the hero bread. I don’t care for it unless I do. I think it’s fantastic that way, and I’m so grateful for the product. Love the tortillas too. Pricey products, but I’m the only one in our household that uses them. Thank you for your great review.
Good info! I’ve been picking up the bread at Publix recently. I’ve been pleased with the texture and taste. The only negative is the price… but oh well 🤷🏼♀️. Thanks for the review. You do the best, most consistent reviews IMO.
Thank you so much for the new review Steve. Before Hero made the change to olive oil, I actually contacted the company to let them know that I would not be purchasing their products again because of the inflammatory oil. I was surprised they changed to olive oil so I have purchased several times from them. I am very happy to see your results! Thank you so much.
@@SeriousKeto Steve, do you have any videos about your experience with and use of Levels? I just received Dr. Casey Means book and am just starting to read it. I would be very interested in seeing how to get started with the CGM and everything having to do with Levels. I trust your judgement and experience having watched many of your videos.
Thanks for the video. I just picked up both the seeded bread and the Tortilla's . I found no aftertaste at all. To me it's like any other bread. It toasts excellent, and it is so great to have bread for sandwiches or whatever you use it for. It's expensive, but I only eat it when I need that fix. Thanks.
Thanks for the re review. It is very timely since i stopped uying any bread for my home, and im starting to miss a good ham and cheese grilled sandwich. Maybe i will head to Woodmand in Madison.
Very informative and much appreciated video. I have NAFLD and have been combing the Internet for info. I found a medical site that states Canola oil helps to lower liver fat much better than olive oil. Now I am confused and don’t know what to do… just sharing, that’s all. I’ve been using Hero products since they were first introduced, and will continue to do so.
Steve, your awareness of inflammatory response got me curious. I came off a month of strict carnivore and had a homemade treat with nuts every day for 3 days. The morning of the 4th day I woke up to pain and stiffness in my knuckles on my fretting hand. And I developed hip pain and stiffness from my power walking. Wow! Now that I’m more aware of my own response to triggers I feel I can test different foods for myself. Thanks for your videos!
I was holding my breath during this video because Hero bread is SO incredible. Seeded bread reminds me of my old fav Brownberry nut bread. I am so happy to hear the improvement. I have subscribe/save so I can be guaranteed to get the croissants, cheese bread and Hawaiian rolls. Those three are so unbelievably good, maybe another time you can test those to be sure they're not too good to be true!
ala Foo Fighters: "There goes my hero, watching his glucose. There goes my hero, testing bread again!" If I don't stop now this will consume far too much of my time haha
Thanks for the video Steve. What I always find of interest with the CGM results is how the "spike" (even when its not a spike) can vary in products. Most diabetics are advised to prick their fingers after 2 hours to test their levels nut it can be seen from these results and other previous ones, you can be missing what actually is going on with your sugar from this point in time method.
Thank you, thank you thank you for this video! I love hero products. Their croissants are out of this world good and I never used to really eat croissants. Thanks again, Steve. With much appreciation!❤
I have tried many different Hero products - white, seeded, hamburger, hot dog, croissant, Hawaiian, and cheese biscuit. I react most strongly to the white bread, then seeded. I generally make half-sandwiches with the seeded bread. All the other products work fabulously for me with hardly any response, except for the tortillas. I have to drink a protein shake first for those to blunt the response. I am about to try the brioche sliders. The products are costly, but I use them sparingly and they add so much enjoyment to my meals. I save the absolutely delicious croissants for a once-a-week Sunday treat. I keep them frozen (all of the products) and reheat the croissants in a 350 degree oven for 15 minutes. For a really special treat, I cut the frozen roll in half before heating, and sprinkle Lily's dark chocolate chips in between the halves for a wonderful chocolate croissant.
I think what happens with the breads is this- they are shipped frozen and when they thaw out if stacked they will compress to the shape you showed... it has happened to me when I order from Hero- def not their fault- all mine! And yes- I use the tortillas as a vehicle to hold other items... and the bread, rolls, and croissants are for days when they are the main ( or only ) source of carbs in my meal consumption that day... funny how I never ate bread until going full on keto... and even funnier is that if I go out to eat... I don't even think of eating the bread on the table ... even though I enjoy hero and other brands! ( for me Mission tortillas are about the closest to hero... so those are an alternative ) Happy Friday, hope that Colton is hanging in there without Dad for a while- one day he will totally appreciate the importance of it all! See you next time ! Oh! And shout out to Hero for actually HEARING what consumers and food reviewers were saying and asking for!
We have a mini chain burrito place here that started offering Hero tortillas and cauliflower rice as options. Not doing it every week but it is awesome overall!
Hi~ I truly wish most cafes & restaurants would start making low-carb food options available! I think they would be quite surprised at the popularity. Be well! 🙋
Thank you for doing this, I really needed to see this trial. We've been buying the seeded bread from our local Publix. It's good, but at nearly 10 bucks a loaf it needs to be worth it to keep buying it; sounds like it can stay on our grocery list.
Hi Steve. Thank you for a very thorough and informative video. I’ve seen these breads online. I’m not sure any of the stores near me carry them. Will definitely check it out. I’ve basically been forced back into eating keto due to a flare up of eczema. Thanks again!😊
The price online is pretty steep. I'm sure it's similarly expensive in grocery stores, but I'm a little more willing to deal with higher prices when I don't have to pay for shipping.
Well you prompted me to see if I could get hero bread locally again and this time I scored. I'll have to give it a try now. Most keto breads I've tried have that chalky aftertaste.
This is now my favorite channel and I am not even doing Keto. I do however do low carbs/slow unprocessed carbs/high protein and always looking for ideas. Many of the ingredients/sweeteners/oils and "natural" flavors are a no go for me, but thanks for the ideas.
We are up in Menomonie, WI... Woodman's in the Eau Claire area now carries HERO Bread... BUT... stock is limited... I gave up checking in with the on-line ordering and went straight to HERO's site. Thank you for sharing the details on that.
Thanks so much! I eat a half a sandwich almost every day for lunch with the seeded bread. I plan on getting a CGM to check myself once they come out with the over the counter ones. Have you ever had cut-da-carb bread? I would love a review on that one. It's super tasty.
My local market had both the white and the seeded. The ingredients on the white still had seed oil. The seeded, like yours had olive oil which is the one I purchased. I had one slice with bacon and 3 fried eggs. I don't have a continuous monitor, but my glucose spiked to 131 after two hours. Two hours later my glucose was down to 106. These readings are much higher than what I normally see.
I got the seeded Hero bread thinking with the seeds would be a great bread. Unfortunately for me I had a huge spike with a really slow decline. I gave it to the birds. They liked it. I’m going to see if the ingredient change does anything.
I really love the Hero products. The croissants are wonderful! You are right about that off taste. I suspect it’s the wheat gluten which can be bitter. Maybe? The tortillas are amazing too. Love the seeded bread but I pick out the pumpkin seeds as I don’t care for them 😬. We do have them in our local Safeway too. Not all products but a small selection. Great review! Thank you!
I love their tortillas but after ordering a big batch one time 4 out of 8 of the bags molded within a couple of days, two more begin to mold before I could even get to them. I think I was able to eat 2 out of the 8 packets. I don’t usually freeze them and had gone through a package of 8 multiple times prior. We eat them practically everyday. 😅 I honestly think they had been frozen and thawed which caused it, but they said that wasn’t the case. Nevertheless, Hero made it right and replaced the entire order asap. They do have great customer service and stand by the product which I really appreciate. I haven’t reordered mainly because it was about to be summer and hot. I didn’t want to deal with excess moisture and heat during shipping. I found a brand in the grocery store that tasted similar, but Hero tortilla flavor honestly can’t be beat, imho. 😁
Hi Steve, I just revisited this video and I appreciate your reviews with blood glucose results. Is there any possibility that you might consider reviewing the Hero bread croissants?
@@SeriousKeto Thank you for considering it and yes they are pricey. I just received an email that they are back in stock and that’s what prompted me to revisit your review.
Thanks for the review! I like the white bread and croissants. I think the hamburger buns and tortillas have an aftertaste. It a pricey product line though!
Thank you for doing this! I’ve been trying to be clean Keto as much as possible, but would love an occasional slice of toast, etc. I never even realized they removed the canola oil! Have you reviewed their croissants ?
@@SeriousKeto When Hero was still “new” I was buying the bread and tortillas direct and earned points. When the Croissants came out I applied my points and got them at a discount. I cannot speak to the insulin or glucose impact but i will say that are amazing (we use them for egg sandwiches), and they did not knock me out of ketosis or result in any feeling of inflammation.
The seeded bread I prefer over white bread, if you haven't tried the Brioche rolls they are great (not always available). Safeway in the PNW carries the product, which is less expensive than ordering from Hero online.
Wondering what your opinion is for the best meters to do testing like you are always doing? Have you found any to be better than the other? Please let me know cause I wanna buy some myself. You’ve given me incentive to check things out. Thank you for doing all these testingand I have to say I agree with you going longer without potatoes and pasta and how you feel in your joints and just all around isn’t worth it in many ways. However, you’re answering a lot of questions that I think I’ve had my head rolling around for a long time now. Thank you for sharing with us like you do.
For continuous glucose monitors, I use a Dexcom G7. I haven't tried either Dexcom's or Abbott's over the counter CGM. For a blood glucose monitor / keto meter, I use the Keto Mojo. Even though those are my preferred brands, it's important to recognize that the FDA allows for a bit of inaccuracy in these devices. I forget the exact "standards", but you won't get the same degree of accuracy in a consumer grade meter that you would in a $20K piece of lab equipment.
Here are the results of my grilled ham and cheese with mustard and mayo, using 2 slices of Hero white bread:
- The Levels software scored it as "stable response" with a 16 point rise in glucose.
- Interestingly, the peak of 16 points occurred only 30 minutes after eating (normally, I peak around 1 hour)
- 55 minutes after eating the sandwich, I had returned to my baseline glucose of 81mg/dL
So the inclusion of some protein and fat with this bread cut the glucose response almost in half.

I'm hoping that if I can put away just $10/month, by the middle of next year, I'll be able to afford their croissants. 😉
@@SeriousKeto 😂😂😂
Thank you so much for the new review Steve. Before Hero made the change to olive oil, I actually contacted the company to let them know that I would not be purchasing their products again because of the inflammatory oil. I was surprised they changed to olive oil so I have purchased several times from them. I am very happy to see your results! Thank you so much.
It speaks a lot of a company when they listen to their customers.

@@SeriousKeto Thank you! I will check it out now. I appreciate your response so much!
Steve, you're the best! Would love to see you test their Hawaiian rolls too! Thank you for doing these in depth videos, they are so appreciated!
At some point, I'll try those and the croissants
Thanks for the video. I just picked up both the seeded bread and the Tortilla's . I found no aftertaste at all. To me it's like any other bread. It toasts excellent, and it is so great to have bread for sandwiches or whatever you use it for. It's expensive, but I only eat it when I need that fix. Thanks.
Thanks for the re review. It is very timely since i stopped uying any bread for my home, and im starting to miss a good ham and cheese grilled sandwich. Maybe i will head to Woodmand in Madison.
Thank you Steve, watch you all the time giving us good information I bought the unbelievable buns.😊
Most people don’t know what inflammation is, until it goes away. I think most people just think that it’s part of getting older.
In know what you mean, there is a slight flavor that's there that I can't place either. But I've grown to love it lol
Cheese bread?!?!?! Oh wow!
Unfortunately, our grocery store only carries the bread.
I absolutely love the Hero seeded bread and the tortillas. 😊
My local Tom Thumb in Fort Worth, Texas, sells the hero breads. The Dude abides.
That rug really tied the room together. 😉
Awesome, thanks for this. I'm excited to toast up some seeded bread for avocado toast! You rock!
Thank you for the review, Steve. Hope you have a great weekend.
Thanks Steve…..you’re my hero!
ala Foo Fighters: "There goes my hero, watching his glucose.
Exactly. 2 hours will tell you if you’ve returned to baseline, but you’ll be completely in the dark about how significant the glucose movement was.
Interesting review. My Woodmans carries them too. I’ll buy them after my base culture bread is gone.
Hi Steve, another great video. Watching foods I cannot buy here in SA.
But I love watching your reviews, nonetheless❤
Another great video from Steve! ❤
Thanks so much for doing this. Really appreciate it.
I have the same t shirt. Love that movie! Thanks for the review!
The Dude abides. 😉
Thank you, thank you thank you for this video! I love hero products. Their croissants are out of this world good and I never used to really eat croissants. Thanks again, Steve. With much appreciation!❤
I'll have to look for those.
Thanks for sharing your experience.
( for me Mission tortillas are about the closest to hero... so those are an alternative )
Happy Friday, hope that Colton is hanging in there without Dad for a while- one day he will totally appreciate the importance
of it all!
See you next time !
Oh! And shout out to Hero for actually HEARING what consumers and food reviewers were saying and asking for!
I taught him how to play Uno this morning on the Nintendo Switch and he loved it, though he’s convinced that the computer cheats. 😉
We like the seeded bread. It isn’t usually flat. I always freeze it so I won’t pig out on it. Tortillas are blah.
Like I said, I don't need a tortilla to taste great. If it's flavor neutral and pliable, that's a win in my book for a keto tortilla.
I haven't tried the bread, but I got a chuckle out of the shirts. Thanks!
Thanks Steve from Serious Keto.
We have a mini chain burrito place here that started offering Hero tortillas and cauliflower rice as options. Not doing it every week but it is awesome overall!
That’s cool
Hi~ I truly wish most cafes & restaurants would start making low-carb food options available! I think they would be quite surprised at the popularity. Be well! 🙋
@@dianegougelet1829 Agreed, it is pretty rare but I see it more and more so maybe they are getting the message!
Thank you! I was waiting for this review.
Yeah I’ve seen the prices. And I agree. I will check to see if they are in any stores near me. Thanks again!
I love the seeded Hero bread! I buy it at Sprouts.
I love the seeded bread - I always eat it toasted, BLT"s are great with this bread. And are available at my local sprouts store
Good stuff
Well you prompted me to see if I could get hero bread locally again and this time I scored. I'll have to give it a try now. Most keto breads I've tried have that chalky aftertaste.
This is now my favorite channel and I am not even doing Keto. I do however do low carbs/slow unprocessed carbs/high protein and always looking for ideas. Many of the ingredients/sweeteners/oils and "natural" flavors are a no go for me, but thanks for the ideas.
The themed Big Lebowski t-shirts were a nice touch over the many days of shooting. John Goodman has done well with his 200+lbs weight loss.
Thanks so much for this video! I love Hero!😊
We are up in Menomonie, WI... Woodman's in the Eau Claire area now carries HERO Bread... BUT... stock is limited... I gave up checking in with the on-line ordering and went straight to HERO's site. Thank you for sharing the details on that.
It seems that stores only carry the bread and tortillas but not the specialty items like croissants.
Thank you so much for all you do for us
Thanks so much! I eat a half a sandwich almost every day for lunch with the seeded bread. I plan on getting a CGM to check myself once they come out with the over the counter ones. Have you ever had cut-da-carb bread? I would love a review on that one. It's super tasty.
They make bread? I’ve had their wrap-like things.
Thanks for sharing your experience.
I got the seeded Hero bread thinking with the seeds would be a great bread. Unfortunately for me I had a huge spike with a really slow decline. I gave it to the birds. They liked it. I’m going to see if the ingredient change does anything.
I was really pleased with the current version.
Thank you!
I’m thinking it might be the milled flaxseed.
Thanks for testing.
Thank you, Steve!
Hi Steve, I just revisited this video and I appreciate your reviews with blood glucose results. Is there any possibility that you might consider reviewing the Hero bread croissants?
I'd say it's possible, but I'm not sure when. They're pretty pricy and it seems that they can only be purchased online.
@@SeriousKeto Thank you for considering it and yes they are pricey. I just received an email that they are back in stock and that’s what prompted me to revisit your review.
These are my fave keto tortillas. I can make a burrito with your amazing refried beens, and my coffee is the perfect breakfast . Thanks for sharing!!
Thanks for the review! I like the white bread and croissants. I think the hamburger buns and tortillas have an aftertaste. It a pricey product line though!
The seeded hero bread is my go to bread, and I always find it at sprouts. I just wish other stores would start to carry it, it is quite expensive 💰
Thank you for doing this! I’ve been trying to be clean Keto as much as possible, but would love an occasional slice of toast, etc. I never even realized they removed the canola oil! Have you reviewed their croissants ?
I think those are only available on line, and I'm not quite ready to take a second mortgage to buy some. 😉
I bought the Hero seeded bread and the hamburger buns, and I think they are delicious- both of them! Thanks for your review.
Thanks for reviewing these products. In doing my own experiments I can't tolerate most vegetable oils, causes a lot of pain for me.
I’m very pleased that they listened to their customers and switched to olive oil.
