Looking at the spreadsheet I used to track total carbs, net carbs, quality of ingredients, taste and glucose response, I made an interesting observation: Though almost all of the tortillas contained wheat products, the only ones that caused me inflammation (pain and stiffness in my knuckles and knees) contained soybean oil or canola oil. For a tortilla to move on to video #4 in this series, where I will test the tortillas in "real life" situations, such as how well they hold ingredients and if they will fry up, it need to have a reasonable glucose response, not cause me inflammation, and taste okay. If you find that you do not experience inflammation from heavily processed oils, then I would say that Hero brand could be a good tortilla for you. For me, it is not. When I release part 4 of this series (likely in October), I'll will also include a link to my spreadsheet with all of my measurements, macros, and observations.

On another related topic, I enjoyed the crackers you made with the Joseph's lavash. I found out they make a pita bread called "Heart Friendly" with 6 gm net carbs that was awesome. 😋 The only downfall is that it does contain soy products.
I had to giggle when I saw there was a part 3. Especially after just watching part two and you saying that you probably wouldn't do another review like this or maybe ever because of the inflammatory responses you had to endure! This is the most extensive "review" ever, and it is so appreciated! I try to buy Ole' whenever I'm making fajitas or whatever, and have personally found it to be the best of the available options around me. I had been tempted to order Mr. Tortilla and now I won't bother. :)
Thank you for this video! I just started Ketoish/low carb and No sugar. I’ve lost 15 lbs over the last 6 weeks. I’m a prep cook in the prepared foods department for a large northeast grocery chain. We carry a couple of low carb tortillas brands and the one is ok flavor wise. I use them sparingly. This is hopefully the final leg in my long weight loss journey. Originally I topped out at 314 lbs. lost almost 100 about 12 years ago. Managed to keep most of it off. Having several surgeries over the last few years I usually put on about 20 lbs. The good news is as soon as I go back to work it all comes back off but I couldn’t seem to get lower than the 220lb mark. I decided I wanted to get rid of bread( definitely a problem for me especially if I eat it regularly). I decided I wanted to lose 20 lbs before my shoulder replacement surgery scheduled for the 27th of October. I think that I may pass that goal which would also take me over my other goal of breaking the 200 lb barrier 😊. I am so stoked and am loving eating this way. If I stall I will revisit the whole macro thing. But a at this point I was overwhelmed with it all and am ridiculously busy.
I like using these low carb shells as tostada shells. I spritz them with EVOO and sprinkle with salt. I bake them at 400 for 4-5 minutes (ovens vary, so you'll have to experiment) on a wire rack. Crunchy yet sturdy. I'd say it's about 90 percent of the original tostada experience. It's just about a minute less for pizza crust.
I have been eating the Ole Extreme Wellness tortillas for a while. No ill effects. The flavor is good and they hold together well. Made some cheesy beef quesadillas last night!
Thanks for doing these! Looking forward to episode 4. The La Banderita tortilla flavor greatly improves if you cook them, just be careful or they will get hard like that 3 Chile tortilla did at the end of this video.
I havent seen all of your tortilla videos, but I did appreciate this video. I didn't enjoy knowing you would be reacting to some of the ingredients in the long list of Tortillas. I can bet it cost you a small fortune. I sincerely hope you make enough from doing things like this plus give aways, and guest speakers to cover your costs and then some, you deserve it. This is above and beyond hard work.
On the positive side, between the tortilla videos and some of my bread videos, I've determined that wheat and gluten are not inflammatory for me. My inflammation seems to be triggered by the heavily processed seed oils (especially soybean and canola).

I’m so glad you validated what was my own experience with A La Madre. I was beyond excited for them and they tasted great! But I had a 40 point spike with them. I tested multiple times and every time, big spike. I even tested against regular corn tortillas and the regular full carb corn tortillas had similar if not slightly lower spikes! A la madre ended up refunding me for my order when I reached out to them about this. They did make it clear that they don’t advertise their tortillas as diabetic friendly, but clearly something is wrong with their math in terms of total carb count.
We've been using the Cut Da Carb wraps as pizza crusts for about a year now and love them. Because they are so thin, I prep them by folding one in half, making 1 personal-sized pizza. I baste the top of the folded over wrap with good olive oil and then season with FlavorGod Italian Zest, oregano, and garlic powder. I bake that for 3-4 minutes at ~380 degrees and it crisps up really nicely. I use Rao's Arrabbiata as my sauce, add some more of each of the previously mentioned seasonings, add fresh mozzarella (dry if I can find it as it helps adding unwanted moisture to the crust), then top with crisp n cup pepperoni. Back in the oven for another 10-12 minutes with a final minute or so on broil to get some nice browning on the mozz). My better half and I love it. It's not a pizza you're going to pick up and eat (due to the thin crust - even doubled over), but we eat it more like a flatbread, with a fork, and absolutely love it.

I love your videos. You are truly a fantastic presenter. I have worked in sales my whole life and really appreciate your ability to put your thoughts into such concise easy flowing words. So thrilled to see Hero did well. I just bought a box of them and plan on doing chicken fajitas tonight. After doing 1 round of keto for 2 months amazingly I lost 30 lbs. My diet was very simple and honestly not sustainable because I needed better tasting food. This round I have started trying better tasting options and this should be more sustainable. No longer will dinner be bacon and eggs, just chicken tenderloins, or a plain hamburger without any bun! Your videos really help with weighing my options. Keep it up!

I tried a bunch of these brands and just based on flavor I found Mr Tortilla(I tried all the flavors) Mama Lupes and La Tortilla Factory wheat to be essentially inedible. I really like the La Banderita but I dislike the dishonest labeling on street taco tortillas. A regular size tortilla has 4 net carbs meanwhile the same exact tortilla made smaller has zero? Thanks for doing this Steve. I think this is my favorite keto video series, not just from you but in general so I'm happy to contribute to the cause.
First, thank you for your videos! Second, if you gently bend with a rolling action it helps separate the tortillas. Third, I wish they would simply use olive or avocado oil.

I have tried theCut da Carb. & Mr. tortilla and the chips “spicy & taste of burnt” to me that I purchased the tortillas were OK but I didn’t buy them again. I tried the locked tortilla factory but I didn’t care for them as much as the La Bandarita. -it seems I keep going back to the La Banderita as my go to.
I really love the Siete almond flour tortillas, but they are still a bit too high in carbs for me. I recently discovered Maria & Ricardo's KETO Tortillas and was pleasantly surprised at the flavor. They are small and a little denser than the Sieta tortillas, but they are now my favorite substitute and are pretty clean with ingredients. I have yet to test my glucose after eating them though. Incidentally I talked to the Mr Tortilla people at a keto conference last year and sampled their tortilla chips. At the time they were frying them canola oil. I told them that they're going to hear it a lot that people eating keto are going to be upset about the canola oil. Within several months they changed to frying in avocado oil! I like that they are listening to customers.
I like them too! I often make them for quesadillas when it's family Taco Night and I don't even mind them for tacos too. Also, as a Type 2 Diabetic, they seem to work well with my blood sugar, so that's always nice.
Nice review Steve. I like the Hero tortilla. I haven't tried the others, but have had the "regular" LaTortilla tortillas in my pre-keto life and hated the taste.

Thanks for the guinea pig duty! I scarf down tortillas like crazy because I grew up eating homemade bread and low carbing puts a real damper on that. I’m also not a fan of Mexican flavors 🤦🏼♀️so I wrap almost anything I can in a tortilla. A great crutch…La Banderita most times.

Still loving this testing. As I've mentioned previously, there's a fourth variation of the Aldi L'Oven fresh tortillas that I'd love to see you test. I believe the L'oven Keto variety you tried was the seeded version. The plain version doesn't have the clean ingredients of the one you tested. This is the first three ingredients: water, modified food starch, vegetable oil shortening. It's also possible that you tested the plain version and then, later, they reformulated, so, instead of 4 varieties, it's 3 varieties with a reformulation. Whatever it is, I'd love to see some numbers for the modified starch based Keto version. As I said before, I'm not optimistic, but, would still love to know for certain.

Wow, crazy how many options there are. I know you tested the low carb version of Mama Lupe's. I haven't had those but I've tested on myself the zero net carb ones and my glucose only went up a few points. But I didn't test them plain. I tested using them with taco meat and cheese. I had to take a pause on buying them though because they became too much of a daily crutch instead of an every once in a while thing. 1 a day quickly became 3 a day. I'm going to try making my own Egglife dupes as an alternative. They are so expensive.

Thank you for this informative video. Palm oil is the same thing as palm fruit oil. I’m not aware of palm kernel oil being used on an industrial scale in food industry and if used, it would be specified as palm kernel oil. Also is there any scientific basis for your assertions concerning seed oils being inflammatory or wheat being problematic? It seems like you might be missing out on enjoying some good products based on all these restrictions.
I love the La Banderita Street Tacos! I too have found they don’t raise my bs... In comparing these to the bigger ones they make, the bigger ones have a different ingredient list! I stay away from those...
Thank you for doing this. I miss being able to make a sandwich or wrap. Looking forward to part 4. I had one thought during your test though. I wonder, however negligible it may be, that re-warming or cooking some as opposed to others may affect the resistant starch thing, especially if they've been refrigerated. I don't necessarily think it would make a difference myself, but it would help your results if the testing proceds was consistent.
I knew someone would bring this up. The fact is that some of these tortillas are only par-baked. No one is going to eat partially raw tortilla dough, so I tested it accordingly.
@@SeriousKeto I was thinking of toasting them all. I would hardly ever eat any tortilla out of the package without some form of re-heating unless I was making a pb&j wrap in the old days. By heating them all, you would negate the naysayers about not activating the resistant starch effect. Like I said though it doesn't matter to me. They are almost all too many carbs for me. I can't go above 4 or 5 carbs a day, so unless that's all I was going to eat is one tortilla for the day it doesn't much matter in my world, but for the rare occasion it is nice to know which ones would give the least spike.....thanks again.
Anyone who is wondering how to make a pizza from these tortillas, I spray with olive oil and toast in my toaster oven for a few minutes until crisp then put pizza sauce and toppings and toast again until melted.

Great Job! Looking forward to the winners in real-life applications. I have only used the Mama Lupe's for beef or salmon tacos and in that application, they hold up and have no off taste. Did you find a better "corn" tortilla in your tests? The La Bandarita are great as flour tortillas in chicken/green chili enchiladas.
Serious Keto--I just opened a new package of Mama Lupe's tortillas. They were very hard to separate, were gummy, and were not as good as I am used to. I don't know if they have changed the recipe or if heat during shipment was the problem. Really need to find a good "corn" tortilla.

Can how you cook them effect how they react? Example would be eating one plain or taking and placing on griddle with bacon fat? Also be interesting if they were frozen then griddled. How they react. Just some food for thought.
Why does the mama lupe's score a 9 on the meter and raise glucose by 12mg but the ole xtreme got an 8 and only raised by 10mg ? I suppose it's the way it was raised?
You're confusing me! It's the second tortilla you try out in this video. Good results; but, I guess you didn't care for the taste. It would still work great as the noodles in keto lasagne.
@@camgal59 When you said "leave it out", I though you meant that I didn't review it. The reason I didn't recommend it is because it caused me inflammation. I guess they've moved away from canola oil to olive oil, so they might be worth another try.
Is the flour based ingredients or modified flour a concern? Looking up your salad dressing review- also need assist on a crystal lite or sugar free tang type drink- are they stable? Thx
With the La Tortilla, you mentioned that it didn't state whether the palm fruit oil was sustainably sourced, but I noticed that they used non-GMO ingredients, so would you think that might indicate they'd probably go with sustainable sources? Just curious to know if that's a reasonable assumption on my part, or if I'm being too naive.

Thanks Steve! I've been using the La Bandarita Carb Counter Street Tacos for several months and the Xtreme Wellness for a few years. I've found they do very well in cooking applications. I found out that wheat and wheat gluten doesn't bother me, but I'm very careful about the type of fat that is used in these type of products. It seems that companies are slapping the "Keto" label on anything just to get a higher price tag and don't care about the ingredients. I always read the ingredients list on products, but especially if it says "Keto" on the package because the ingredients aren't always Keto.

I love your videos. You are truly a fantastic presenter. I have worked in sales my whole life and really appreciate your ability to put your thoughts into such concise easy flowing words. So thrilled to see Hero did well. I just bought a box of them and plan on doing chicken fajitas tonight. After doing 1 round of keto for 2 months amazingly I lost 30 lbs. My diet was very simple and honestly not sustainable because I needed better tasting food. This round I have started trying better tasting options and this should be more sustainable. No longer will dinner be bacon and eggs, just chicken tenderloins, or a plain hamburger without any bun! Your videos really help with weighing my options. Keep it up!

I tried a bunch of these brands and just based on flavor I found Mr Tortilla(I tried all the flavors) Mama Lupes and La Tortilla Factory wheat to be essentially inedible. I really like the La Banderita but I dislike the dishonest labeling on street taco tortillas. A regular size tortilla has 4 net carbs meanwhile the same exact tortilla made smaller has zero? Thanks for doing this Steve. I think this is my favorite keto video series, not just from you but in general so I'm happy to contribute to the cause.

First, thank you for your videos! Second, if you gently bend with a rolling action it helps separate the tortillas. Third, I wish they would simply use olive or avocado oil.

I tried the locked tortilla factory but I didn’t care for them as much as the La Bandarita. -it seems I keep going back to the La Banderita as my go to.

I really love the Siete almond flour tortillas, but they are still a bit too high in carbs for me. I recently discovered Maria & Ricardo's KETO Tortillas and was pleasantly surprised at the flavor. They are small and a little denser than the Sieta tortillas, but they are now my favorite substitute and are pretty clean with ingredients. I have yet to test my glucose after eating them though. Thanks for the reviews. It's always educating!

Thanks for this. I actually like the Mr Tortilla ones personally. I usually make them into Quesadillas by frying in butter.
Incidentally I talked to the Mr Tortilla people at a keto conference last year and sampled their tortilla chips. At the time they were frying them canola oil. I told them that they're going to hear it a lot that people eating keto are going to be upset about the canola oil. Within several months they changed to frying in avocado oil! I like that they are listening to customers.
I like them too! I often make them for quesadillas when it's family Taco Night and I don't even mind them for tacos too. Also, as a Type 2 Diabetic, they seem to work well with my blood sugar, so that's always nice.

Nice review Steve. I like the Hero tortilla. I haven't tried the others, but have had the "regular" LaTortilla tortillas in my pre-keto life and hated the taste.

I don’t know if anyone has mentioned this or not, but there is a palm oil scan app (by Cheyenne Mountain Zoo and in collaboration with the World Association of Zoos and Aquariums) whereby you can scan a product’s barcode and find out if the company is committed to sourcing their palm oil sustainably.

Thanks for the guinea pig duty! I scarf down tortillas like crazy because I grew up eating homemade bread and low carbing puts a real damper on that. I’m also not a fan of Mexican flavors 🤦🏼♀️so I wrap almost anything I can in a tortilla. A great crutch…La Banderita most times.

Between the 3 videos, it was about 6 weeks. I had to take some days off when I was dealing with inflammation and/or close to going out of ketosis.

As I've mentioned previously, there's a fourth variation of the Aldi L'Oven fresh tortillas that I'd love to see you test. I believe the L'oven Keto variety you tried was the seeded version. The plain version doesn't have the clean ingredients of the one you tested. This is the first three ingredients: water, modified food starch, vegetable oil shortening.
It's also possible that you tested the plain version and then, later, they reformulated, so, instead of 4 varieties, it's 3 varieties with a reformulation. Whatever it is, I'd love to see some numbers for the modified starch based Keto version.
As I said before, I'm not optimistic, but, would still love to know for certain.

Wow, crazy how many options there are. I know you tested the low carb version of Mama Lupe's. I haven't had those but I've tested on myself the zero net carb ones and my glucose only went up a few points. But I didn't test them plain. I tested using them with taco meat and cheese. I had to take a pause on buying them though because they became too much of a daily crutch instead of an every once in a while thing. 1 a day quickly became 3 a day. I'm going to try making my own Egglife dupes as an alternative. They are so expensive.

Thank you for this informative video. Palm oil is the same thing as palm fruit oil. I’m not aware of palm kernel oil being used on an industrial scale in food industry and if used, it would be specified as palm kernel oil. Also is there any scientific basis for your assertions concerning seed oils being inflammatory or wheat being problematic? It seems like you might be missing out on enjoying some good products based on all these restrictions.

I love the La Banderita Street Tacos! I too have found they don’t raise my bs... In comparing these to the bigger ones they make, the bigger ones have a different ingredient list! I stay away from those...

Thank you for doing this. I miss being able to make a sandwich or wrap. Looking forward to part 4. I had one thought during your test though. I wonder, however negligible it may be, that re-warming or cooking some as opposed to others may affect the resistant starch thing, especially if they've been refrigerated. I don't necessarily think it would make a difference myself, but it would help your results if the testing proceds was consistent.
I knew someone would bring this up. The fact is that some of these tortillas are only par-baked. No one is going to eat partially raw tortilla dough, so I tested it accordingly.
@@SeriousKeto I was thinking of toasting them all. I would hardly ever eat any tortilla out of the package without some form of re-heating unless I was making a pb&j wrap in the old days. By heating them all, you would negate the naysayers about not activating the resistant starch effect. Like I said though it doesn't matter to me. They are almost all too many carbs for me. I can't go above 4 or 5 carbs a day, so unless that's all I was going to eat is one tortilla for the day it doesn't much matter in my world, but for the rare occasion it is nice to know which ones would give the least spike.....thanks again.
Anyone who is wondering how to make a pizza from these tortillas, I spray with olive oil and toast in my toaster oven for a few minutes until crisp then put pizza sauce and toppings and toast again until melted.

I see that both La Bandarita and Xtreme Wellness now have zero net carb tortillas. I'll probably do another round of reviews in Feb/March.
Great Job! Looking forward to the winners in real-life applications. I have only used the Mama Lupe's for beef or salmon tacos and in that application, they hold up and have no off taste. Did you find a better "corn" tortilla in your tests? The La Bandarita are great as flour tortillas in chicken/green chili enchiladas.
Serious Keto--I just opened a new package of Mama Lupe's tortillas. They were very hard to separate, were gummy, and were not as good as I am used to. I don't know if they have changed the recipe or if heat during shipment was the problem. Really need to find a good "corn" tortilla.
Steve, I have a question. So, I saw you do a keto bread review. And you had mentioned in the review about putting it in the freezer and how that changes the response. My question would be, have you tried this with any of the tortillas?

I’m planning to do part 4 in March. The reason Hero fell off my list was due to the significant inflammation I experienced.

Can how you cook them effect how they react?
Example would be eating one plain or taking and placing on griddle with bacon fat?
Also be interesting if they were frozen then griddled. How they react.

Why does the mama lupe's score a 9 on the meter and raise glucose by 12mg but the ole xtreme got an 8 and only raised by 10mg ? I suppose it's the way it was raised?
It has to do both with the amount of the rise as well as the time to recover.

You're confusing me! It's the second tortilla you try out in this video. Good results; but, I guess you didn't care for the taste. It would still work great as the noodles in keto lasagne.
@@camgal59 When you said "leave it out", I though you meant that I didn't review it. The reason I didn't recommend it is because it caused me inflammation. I guess they've moved away from canola oil to olive oil, so they might be worth another try.

I fry all my low carb shells in a cast iron skillet with butter or lard, I think all that fat also blunts any glucose spikes.
Fat definitely seems to have a glucose blunting effect in my experience.

With the La Tortilla, you mentioned that it didn't state whether the palm fruit oil was sustainably sourced, but I noticed that they used non-GMO ingredients, so would you think that might indicate they'd probably go with sustainable sources? Just curious to know if that's a reasonable assumption on my part, or if I'm being too naive.
GMO and sustainable don't necessarily go hand in hand. What I've noticed is that most companies that use sustainable palm oil like to call it out.

Hey Steve I can agree on the La Bandarita street tacos this is what we eat here at my house I'm the only diabetic here but it never spikes my glucose... so we all eat them wrapped around hot dogs, with egg salad and even cheese melted on it LOL

Thanks Steve! I've been using the La Bandarita Carb Counter Street Tacos for several months and the Xtreme Wellness for a few years. I've found they do very well in cooking applications. I found out that wheat and wheat gluten doesn't bother me, but I'm very careful about the type of fat that is used in these type of products. It seems that companies are slapping the "Keto" label on anything just to get a higher price tag and don't care about the ingredients. I always read the ingredients list on products, but especially if it says "Keto" on the package because the ingredients aren't always Keto.
