I just made the salsa and I’m very happy with the results, I did change a little bit. I only use 14 1/2 can of whole tomatoes and one of rotelle. The rest ingredients I left the same I love cilantro so I added more cilantro and more onions. You can do it the way you like it and add more of the stuff you’d like. Very happy with it. I also reserve the juice from the rotelle tomatoes, just in case it was to dry to my place and sure enough it was kind of thick and I don’t like the thick salsa. So I just had a little bit of the juice from the rotelle and made it to my taste.

Replace canned tomatoes with fresh tomatoes. It will take you to salsa haven goodness of next level taste. The time it takes you to cut open these cans you can literally cut few tomatoes and put them in blender. Seriously!
Canned garlic no good zero garlic flavor(pretty sure you can add 5x that amount of that minced garlic and it would add only perservatives😂)Im for real try seeing what flavor that canned minced garlic adds most the flavor coming from the powder

That's why you will see even the best chefs use canned Italian tomatoes for their pasta sauce. There's only a short period where fresh tomatoes actually end up being better. It's not like apples or onions that stay good for months at room temperature. Usually they're mealy and flavorless.
