I’ve never had it exactly the same way ahead in Montego Bay and I have fun memories of the delicious allspice clove the heat of the Scotch bonnet peppers for me was a little much, but the sugars in the caramels and the flavors were just unstoppable. Ewwww not for jerk. All you have to is make a brine with almost same ingredients as her marinate but just garlic ginger ya herbs brown sugar and kosher or pink Himalaya salt. Brine 12 to overnight. Not only will it be juicy but enhance jerk as it cooks on grill. Another tip is normally we use pimento wood or leaves while cooking it. Since its very hard to find in states you can substitute it for apple wood and add pimento berries aswell🇯🇲🇯🇲🇯🇲

This is a legitimate recipe. I am lazy so I first marinate the chicken in buttermilk and salt and pepper overnight. Then I chop up fresh ginger, scallions, onions, garlic, fresh lime juice and the bottled seasoning which is excellent IMHO. Slow as it goes. I start mine in the oven and finish it on a grill for texture because I do not want to stand over it for 2 hours. Her's is the best by far, but it is a long process.
It's not. First of all you don't marinate chicken in buttermilk for jerking. You can make a brine instead using the herbs in jerk. Buttermilk brine will not complement jerk with chicken

And get a thermometer and cook to temp. Most people dry out their chicken breast because they over cook it.
The vinegar in the marinade will tenderize the meat.
