Everybody’s hollering “no okra,” but the real culprit are those tomatoes. Other than that, this is a 100% legit recipe. That roux was beautiful. I’m also glad to see the filé incorporated into the pot itself. Some people like to leave it to sprinkle in your bowl.

Like most regional ethnic recipes there’s always going to be variations. Gumbo is most definitely one of those dishes. I was born and raised in New Orleans. My mother is from a little Cajun town called Raceland, Louisiana. She and I make our gumbo differently! She doesn’t make a roux but I do. So, hey, put the tomatoes in if that’s your preference or don’t. This doesn’t make one any more authentic, it’s simply a preference, right? Think about it. Let’s take cornbread as an example. Sugar in your recipe? Inauthentic, some would say, I being one of them. However, I’m sure someone here wouldn’t dream of making cornbread without it! This is a solid recipe and a great starting point for you to experiment and decide how you like it. Personally, I cook the whole chicken and use the cooking water as my base. I pull the meat off the chicken and put it back in the pot. It’s labor intensive but worth it flavor wise. Again, my preference. A quick word about okra. As some have previously mentioned, cooking it separately will cook off most of the slime. I’ve done it in the skillet but it can be done in the microwave as well. Honestly, it’s not gumbo without okra, just soup. File’ is a must which I serve separately as well. Now, get cooking! Cheers everyone!

I grew up in Arkansas, and while visiting some friends down on the Red River, we had to make a run to their local grocery, and they were selling file’ in baby food jars at the register.
Always use Okra. The word "Gumbo" translates to Okra in English. Its from a West African dish called “ki ngombo”, and is stew like, and contains fish and shellfish and is thickened with Okra. Im born and raised in New Orleans. No Tomatoes! Great addition with the File, a lot of recipes tend to forget about it. I like to sprinkle a little extra on mine when its done. That roux looked beautiful, btw!
@@shaunah.creations9233 No ma'am. Okra usually gets slimy if not prepped correctly. It's really good in certain stews but gumbo (imo) doesn't need okra, you already have alot of flavors in it and don't need okra in the mix

BRO!!!....THANK YOU! I only recently "re-found" found my enjoyment of cooking and being from Louisiana, I LOVE gumbo. Each time I tried a homemade version I would burn my roux.....every time. I never thought to mix the ingredients before the heat...but was also trying to use an olive oil. Just the 7 minutes ALONE made me a subscriber.....THANK YOU!

I make my Chicken-Sausage Gumbo slightly different; for one I use three types of sausages; Manda's smoked, garlic, and hot sausages browned. I have never tried the Andouille sausage. I also use the chicken thighs only and Shrimp, Louisiana spicy cajun seasonings, the holy trinity, and bay leaves, served with the Mahatma Jasmine Rice. As usual you have done it again, I have learned something new today. The next time I prepared this dish I think I'm going to attempt your recipe. I enjoy your cooking videos and I have learned a lot. Manda makes a very decent andouille but I haven't been able to find it for a while. Like anything else, there is good andouille and bad andouille out there. Just gotta try a couple and see. I like to use either Crescent City or Broussards bayou. If you see either of those companies it is a very safe choice.
I just made this dish. I didn’t use Tony’s seasoning or AD. I did add Slap ya Mama, nature seasoning, fresh black pepper and Cayenne with thyme and bay leave’s . This is difficult to mess up. The whole family loved it.
Matt you did justice to this sausage and chicken Gumbo. Everything looks great and amazing. I like to cook off the slime off the okra in a skillet with a little vegetable oil before adding it into the Gumbo. This Gumbo looks so good and delicious. Thanks Matt for sharing your Gumbo recipe. I'm from Louisiana. Some add tomatoes and okra in gumbo and some don't. If you ask 12 La cooks, you'll get 12 different renditions of gumbo. It's not a science. Cheers!

Yummy. When I make gumbo I have to make 2 pots. One with okra which I love and a few other people and the other pot without okra cause 2 of my kids don't like the okra. Yes they are weird people lol. I've made rues many times, but this is the first time I've seen it made with oil instead of butter and milk. Learn something new everyday. I will have to try that method for sure.
@Angie's ASMR Blond or light roux are made with butter. However, due to the low smoke point of butter & olive oil, the high heat and long cooking time required to make a dark roux would both burn the butter & give the roux an off-putting taste. For dark roux, a high smoke point oil such as grapeseed, avocado, or canola is better.
The roux that you are referring to is a French creamy type that is cooked on low heat and is best for vegetables. The roux that he made is for high heat.
No two people do it exactly the same, and I don’t imagine they all did it the same 100 years ago either. This is pretty close to how I do mine- with okra and tomatoes (more of both). I would never purée the trinity. I didn’t see any garlic; always garlic. I’d skip the chicken and add 1 1/2 lb of shrimp. Seasonings look good- have my own blend. All in all, one of the better recipes on yt. PS: I have the exact same Dutch oven, same color too!

Buy Kerry Roux ready made from Ville Platt, La. super easy. Just add your chicken stock and seasoning bring to a boil than add chicken than sausage yuuuuuuummmmmmm. I am from the Cajun country have done it both ways.
Yes to Okra. I never complain about anyone's Gumbo recipe. It varies from person to person. I think it is more creole with tomatoes, but seen it every way.

From Vernon Parish... love the recipe, easy roux ..never made it that way. No-tomato team here. Okra was fine by me, I don't mind a 'lil slime. Gumbo = Okra. File in was different but cool. Like it to sprinkle on top too. Gotta have potato salad side..and cornbread for me.

FYI, to all the haters. In New Orleans style Gumbo, they use tomatoes and Okra. There are just as many Gumbo recipes as there are cooks. No one makes it the same. Not even relatives. So chill out.
NOLA native here. We don't use tomatoes in standard gumbo. We do use tomatoes in Okra gumbo, which is a totally different dish than the one on this video. Okra gumbo is more like a stew.
@Wolfdawg504 my play momma was born and raised in New Orleans still there now also, I lived there for 4 years and every Gumbo, I ever had there had tomatoes and okra. No wait, I take that back. I did have one that didn't have Okra, only because the guy that made it doesn't like Okra.

The recipe in this video is file' gumbo which does not have tomatoes (though some people do put Okra in their file' gumbo). Everyone in new orleans (aside from a transplant) would gag at the thought of putting tomatoes in file' gumbo.
@Wolfdawg504 like i said in my original comment, there are as many Gumbo recipes as there are cooks. File' is just a season and thickening agent. My play momma used it as well. Although her sister didn't. She put it on the table for individual use like salt and pepper.

So question about the okra. I've made gumbo a few times but I don't think I used okra. Does the okra help with the roux to make more thick too?

Yes to Okra. I never complain about anyone's Gumbo recipe. It varies from person to person. I think it is more creole with tomatoes, but seen it every way.

From Vernon Parish... love the recipe, easy roux ..never made it that way. No-tomato team here. Okra was fine by me, I don't mind a 'lil slime. Gumbo = Okra. File in was different but cool. Like it to sprinkle on top too. Gotta have potato salad side..and cornbread for me.

FYI, to all the haters. In New Orleans style Gumbo, they use tomatoes and Okra. There are just as many Gumbo recipes as there are cooks. No one makes it the same. Not even relatives. So chill out.

We don't use tomatoes in standard gumbo. We do use tomatoes in Okra gumbo, which is a totally different dish than the one on this video. Okra gumbo is more like a stew.
@Wolfdawg504 my play momma was born and raised in New Orleans still there now also, I lived there for 4 years and every Gumbo, I ever had there had tomatoes and okra. No wait, I take that back. I did have one that didn't have Okra, only because the guy that made it doesn't like Okra.
@ralphjackson8295 you had Okra gumbo, you didn't have file' gumbo. They're two different things. The recipe in this video is file' gumbo which does not have tomatoes (though some people do put Okra in their file' gumbo). Everyone in new orleans (aside from a transplant) would gag at the thought of putting tomatoes in file' gumbo.
@Wolfdawg504 like i said in my original comment, there are as many Gumbo recipes as there are cooks. File' is just a season and thickening agent. My play momma used it as well. Although her sister didn't. She put it on the table for individual use like salt and pepper.
@ralphjackson8295 sorry bro. Neither you nor your play momma know the first thing about gumbo if you think it's normal to put tomatoes in there. Your crazy ass comment spurred me to ask coworkers, friends, family, and the chef at the restaurant I was at if tomatoes in gumbo is the norm. They all either laughed or looked perplexed. No one but transplants think tomatoes in gumbo is normal.
