Nicole’s Chicken & Sausage Gumbo Recipe:
For Chicken:
2 lbs. Boneless Skinless Chicken Thighs
1 ½ tsp Cajun Seasoning
½ tsp Garlic Powder
For Roux:
1 Large Onion
1 Large Bell Pepper
1 Jalapeno
2 Stalks of Celery
3 Cloves of Garlic
1 lb of Andouille Sausage
1 cup of oil
1 ⅓ cup of Flour
Salt & Pepper to Taste.
1 ½ QT of Chicken Stock
2 Bay Leaves
1 tsp of cajun seasoning
1 tsp of black pepper
1 tbsp of worcestershire sauce
2 tsp of Hot Sauce
1 ½ tsp of fresh thyme
1 lb of Okra
For Rice:
1 tbsp Butter
1 Cup of Long Grain Wild Rice
2 Cups of Water
½ tsp of salt
Place Chicken Thighs in a 9x12 Baking Dish, add 1 ½ tsp Cajun Seasoning and Garlic Powder, Cover and Bake at 300 for 1 hour.
Chop onion, bell pepper, jalapeno, celery, and garlic.
Chop Andouille Sausage.
Render sausage in a pot on the stove. Start with a cold pot and turn up to medium after adding sausage. Add a splash of oil to help release fat from sausage. After the sausage has rendered, remove sausage leaving as much fat in the pot as you can. Set sausage aside.
Add an additional cup of oil and flour to the pot. Whisk on medium heat. Cook for about an hour, stirring occasionally. Roux should be a light chocolate brown color.
Remove chicken from the oven, and set aside, saving pan drippings.
To roux add chopped onion, bell pepper, jalapeno and celery to the roux. Stir. Add salt and pepper to taste. Continue to cook and stir and add garlic. Cook until vegetables are tender.
After the vegetables are tender add chicken drippings to the pot and chicken stock. Stir and cook adding bay leaves, 1 tsp of cajun seasoning, 1 tsp of black pepper, worcestershire sauce, hot sauce, sausage and chicken. Add fresh thyme. Stir and bring to a boil and reduce to a simmer. Once the pot comes to a simmer. Simmer for 30 mins. Add 1 lb of chopped okra and cook until tender.
For Rice:
Add butter to a saucepan. After butter is melted, add rice. Stir rice to coat with butter and add 2 cups of liquid, water or chicken stock. Add salt and stir. Bring to a boil and reduce to a simmer and cover until liquid is absorbed by the rice.
Add rice to a bowl or plate and top with gumbo.

As a Cajun myself, and gumbo maker, I must comment that this is one of the best gumbo explanations I have encountered. Good job! I do use a modification, instead of spending 1+ hours browning my roux on the stove, I use the microwave at half power, with frequent stirring, to make a nice, chocolate-colored roux in about 15 minutes. And it always turns out great! Plus, if you can get andouille from Jacob's in Laplace, it is the best.

@@ntfrst Plus with the microwave you don't have to heat up the house with an oven! I use 1 cup flour and 3/4 cup corn oil. Been doing it that way for years and never had a bad batch.

Lady! I’m dunking bread and slurping up this gumbo as I type this! I love your secrets! I really don’t have anything to compare it to because I think when I was a kid I had it once in a diner in New Jersey. And it was from a can… don’t judge. I too am Italian with a smattering of French, Albanian and Sicilian, so I treat this like sauce and build flavor! I’m gonna take your word for it. And adopt this as my go to recipe for Gumbo!

Thank you for making a pot of Gumbo that any cajun would be proud to eat. I get sad from seeing all these food influencers and use to be chefs try making what they think is a gumbo and they miss the mark or they cut corners. Your Gumbo looks amazing and I bet it taste amazing.❤❤❤

Microwave roux. First, I want to say this video is one of the best I have watched on the subject. I have been making gumbo for years and use the microwave for the roux. Remember, the gumbo doesn't care how you make the roux, only that it is good. Using the normal flour/oil ratio (I use corn oil) I stir it up in a microwave safe casserole dish, I cook it on 50% power and stir it about every minute to distribute the browning evenly. After about 12 to 15 minutes of this, the roux is a nice chocolate-brown color and in the finished gumbo tastes great.

@@nicolemclaughlin9844 Keep in mind, the ingredients cost maybe a dollar at most so it isn't an expensive experiment even if you don't like the result. But I believe you will like it.
We also brown up our andouille before adding the oil for the roux. We grill our chicken thighs seasoned with blackening seasoning on a charcoal grill and then shred the meat for the gumbo, so good! We just went to Lafayette over Spring Break and tried potato salad with our gumbo and I was shook! It was so good! 😂

It is 'roux', and if you do it in the microwave you only have to attend to it for 12 to 15 minutes.

I did make this gumbo this morning, got my dinner out the way. But it came out pretty good. Just have to wait to see what my family thinks. But I like it

The POPE! Not very many people know that! If you want a most awesome smoked sausage try some Conecuh sausage. It is made in Ala. and it is soooooo good! You can find it in most southern grocery stores from NOLA to Florida. I have moved back home to Texas and I can't get it here so I have to order it by the case. It is expensive that way but I find it is essential when I need sausage when I cook.
Or, in Texas you can get good smoked pork sausage at Market Basket in Winnie or several locations in the Beaumont and Port Arthur areas. They also ship for those not within driving distance. I've used their sausage for gumbo and red beans, and it is excellent.
@@txmike1945 That would have to be some mighty good sausage! Since I have not tasted any that comes close to Conecuh I will have to take your word for it, but until such time I will still say that Conecuh is the absolute best!

Hi Nicole amazing looking gumbo I do something weird with my gumbo from time to time don't remember anybody else doing this, 15 are 20 minutes before it's done play Craig about 6 eggs and let them go to the bottom leave them alone for 5 minutes then you unstick them from the bottom of the pot and they float up cooked and they kind of take on the flavor of the gumbo I don't remember where I got that from I've been doing them like that so long keep putting out the great videos have a nice day

FrugalFitMom does her roux in the oven. Her mom is from Louisiana and that's how she does it. Toss the whole pot in the oven and stir it every 15 minutes. But just leave it in there till it's the darkness you want.

I'm an episode of America's test kitchen. I saw where they put the flour in the microwave until it got brown. It saved them a lot of time. I have never made gumbo.
I use the microwave method, flour and oil, and it works great, saves time too.

Can you swap out the cup of veg oil in the roux for a cup of butter or lard? Would that be acceptable?
It would but butter burns more easily. I wouldn't do it for a roux. Good old corn oil is great.
Do you take the casing off of the sausage, or leave it on?
Also, if one doesn’t have fresh okra can you use frozen okra?
in this case, the casing was on. We will check with Nicole about frozen okra!
I use frozen okra and it comes out perfect. I do sauté my okra before adding it to my gumbo though. It draws out the slime which is what helps to thicken the gumbo. It’s just how my family has always done it.
I leave the casing on unless it’s really thick. And YES frozen okra is totally fine!

The _only_ reason I even bother with "gumbo" recipes on UA-cam is to ridicule whatever ridiculous concoction somebody tries to pass as gumbo in the comment section but _this..._ *This* is absolutely, 100%, bona fide, legitimate, slap yo momma, mi oh my oh, G U M B O. There's only one other out of dozens I've watched that is also absolutely perfect and it's Charlie Andrews. He's the best New Orleans chef on the Internet and I'd bet my soul on that.

Great Gumbo the easy way Blue Runner YA-YA Gumbo Base just add your chicken and sausage serve over rice with. Jiffy Honey cornbread mix replace milk with half & half cook 22 minutes top with plenty of butter while hot out the oven.
I've had really good Gumbo but none better than Blue Runner.
For some of us, we like the satisfaction of cooking everything from scratch. There are also powdered gumbo bases with dried seasonings that work very well.
It's not gumbo without okra
There's no such thing as one type of gumbo. There's File Gumbo, Sea Food Gumbo, etc. However, if there is no roux, it is not Gumbo, it is soup.
As a creole through and through and tradition gumbo is always done with OKRA!!!

Gumbo is a short-term for an African word that means okra. My people in Louisiana put the okra in last so it won't be slimy. If you make gumbo without okra, you don't have gumbo.

What's the difference between creole and Cajun?
Cajuns are French Canadian descendants, exiled from Nova Scotia. Creole is a mix of mixed colonial French, African American and Native American ancestry. Need more? Do a web search.
IMHO, gumbo is better the next day or at least make it early and let it cool in ice box then reheat. Ox tail gumbo is really good, too.
When I make a batch, for just two of us, I usually freeze half of it for later.

Gumbo, which is the original African word for okra, started out there but was quite a different concoction. This video is for Cajun Gumbo which uses okra as one ingredient but different recipes, and has been developed by the French descendants who settled in S. Louisiana. Chicken Gumbo and Seafood Gumbo are staples of Louisiana Cajun Country.

I know you were probably trying to be funny and I say this with all due respect but I think you are going to get some backlash for your religious comments… I am a Christian and there is only one holy trinity that is THE FATHER,THE SON AND THE HOLY SPIRIT…. Joe, get educated. Gumbo is the African term for okra. You don't have to use okra but don't call it gumbo. Call it thick chicken and sausage soup. Fact!
