I have over 20 Benchmades so I have several of these. You'll get used to how you have to hold the knife to flick it open. It's really all about getting a good grip. I have really big hands too so I feel your pain. Some of them work better than others and might need to be broken in a bit. You should get a 940, they are so smooth you can easily just pull back the lock and flick them open. Also an Adamas folder and a Super Freek.
I’m learning knives also. Chris Reeve seems like a very highly rated knife like bench made. Also you may actually be better off with the larger versions of these. Many come in a small and large bit the large isn’t really large for a guy with your size hands. These little knives are too small for you.
Loosen the pivot just a little bit on those an you will be able to flick them. Also those black Benchmade clips always come scratched up cause they are painted.

6:40 i think this material it's called micarta. It's something like thin foils of plastic, or carbon fiber or wood glued each other
though it does look like micarta, it's actually g10, a composite material made of sheets of fiberglass pressed in resin :) hope that helps!
Once you use those knives a bit the opening becomes less stiff and much smoother and possible to flick open

2 of my favorite fixed blades is the ESEE 3 in S35VN and the Bradford Guardian 4 in M390 or 3V...the ESEE Junglas is an amazing chopper as well

Try using paper to cut with knives, IF knife is very sharp so it will go through paper easy
