Mung bean cake (绿豆糕) is easy to make and has an interesting taste and texture. When you take a bit, the cake will melt in your mouth and leave a nutty, milky taste on your tongue. You can also treat it as the easiest mooncake.
INGREDIENTS
200 g (7 oz) of skinless mung beans (Amazon Link - geni.us/skinless-mung-bean)
300 g (1.25 cups) of water
56 g (1/2 stick) of unsalted butter
100 g (8 tbsp) of sugar
63 g (3 tbsp) of honey (Amazon Link - geni.us/unfiltered-honey)
1/4 tsp of salt
INSTRUCTION
Soak the skinless mung bean overnight, Then rinse under running water and drain thoroughly.
Add the well-drained mung beans and 1.25 cups of water into a nonstick pot. Then bring to a simmer over medium heat. Switch the heat to the lowest and simmer for 20 minutes. If you use skin-on mung beans, the pastry will have a dark green color, and it will take 1.5 hours for the beans to turn soft.
Use a rubber spatula to smash the cooked mung beans until nice and smooth. If you are using the skin on mung beans, you will have to use a blender to crush the beans because the skin is a bit tougher.
Add sugar, honey, salt, and unsalted butter into the mung bean paste. Stir over medium-low heat for 15 minutes to evaporate excess moisture.
When the mung bean paste becomes nonstick, remove it to the side and let it cool to lukewarm. Make sure you cover the mung bean paste so it doesn't form a hard skin.
Divide the mung bean paste into 12 pieces. Roll each piece in between your hands and shape it into a round ball.
Put the mung bean paste into a mooncake presser. Gently press it down onto a clean cutting board with steady pressure. Stay there for a few seconds to establish the shape. Then release it. You will get a pretty, exquisite pastry. Enjoy! - Навчання та стиль
I love how much thought you give your instructions. You always explain why you do things, like why you want to lower the temp or use a particular bean. You even consider dietary restrictions and give alternate options for ingredients. It really just makes your recipes so easy to follow. ❤️
I love how you say "hello everyone!" I've been binge watching all your video's there's so many dishes I want to make.
I love how she says spatula. Spacherler. too cute!
Wow!!! I've been looking for a good recipe for these for years. All the ones I found online were vague about timing and technique and I was afraid to try. You explain everything so well especially the last three stages of cooking ♡ Thanks a million!
Thank you very much for making this channel. My own mother doesn't have the time or patience to teach me. I don't want to lose my traditions either. You are very helpful and the steps are thorough!
You are very welcome
Liked this to power up Mandy! You can tell the hard work you put in paid off at the end with such a beautiful dessert!
For 65 years I wanted to make mung bean mooncakes. Thank your for teaching me and for the free written recipe. Your thoughtfulness in putting the measurement in cup and spoon sizes are much appreciated.

Amazing show thank you for sharing. Your arm gets a great work out 💪 making them. Have a great day Mandy.
I love how you measure! I do the same. ❤ thanks so much for the recipe.
Thanks for the recipe!
my brother brought back these little mung bean tea cakes from vietnam that come wrapped almost like a bouillon cube and, when you open the foil, separate into four tiny pieces. they crumble and melt in your mouth and are so delicious! to order more of these cakes online or to have my brother send another package home would be way too expensive and i would much rather make them. i've made a lot of recipes from your channel and have never been disappointed so i am very thankful for this recipe! i will definitely be making some, if not this weekend, then very soon!
I just tried this recipe and it turned out wonderfully! It was so easy to follow!
Thanks so much!
Bravo, easy and details understanding, Thank you
I'm going to make these today!
Mandy - OMG! I just cooked up the mung bean paste and it is sooo good! I can't stop tasting it! I'm going to use it to fill my sesame balls and it should taste fabulous! Thank you so much for the great job and I should check out your other recipes and also subscribe to your channel.
Thank you very much for sharing.
I made it with skin, and added some krewa (flower essence) and almond extract, it’s one of the best desserts I’ve ever had!! The texture is so delicious!!
Wonderful recipe
I don't believe how nice is this, Thank you so much for sharing your recipe.
My pleasure 😊
Thank you for writing this recipe - I need the molder to make this look as good as yours.
Спасибо, обязательно попробую приготовить!
Never had mooncakes but it’s totally delicious.
ohh..one of my favorite snacks!!
After watching many moon cake video, I finally decided on trying this mung bean mooncakes since I bought a large bag of organic peeled mung beans from the Indian market. I didn’t relish standing over the pot for 30 minutes stirring the paste so I used my KitchenAid Multipot w/Stirring tower. It works great for this recipe! The Mung Bean moon cakes taste wonderful. Thank you so much for your precise instructions. Applying your directions to the controls on the machine gave me the perfect texture and save my poor old arm… Now, I’m going to try the Snowy Skin moon cake with custard next. 6:01
You're my favourite youtuber, you're a great teacher, thanks for the videos!

I'll have to give this recipe a try later today, looks like I'll be visiting my local Sprouts soon 👍.
Sooo yummy

THANKS :)
Hola!! Me encanta como se marca es precioso yo tengo uno de 100g pero no se si es ese el que tú utilizas gracias
Yum!!
Wow super amazing yammy delicious recipe 👌👌👌👏👏w
I might cry, and my arm almost fell off, or so it feels, but so worth it!
I halved the recipe and had to use a bit more water because otherwise it wouldn't cover the beans, but from soaking them ahead of time and watching carefully as they boiled, it was okay. Just meant I had to stir longer. I think I also got impatient in the mashing phase because my texture wasn't super smooth the way the videos looked, but it was so very delicious.
I also had a minor mishap when transferring the dough out of the pot into a bowl to cool. I used the same bowl I had soaked the beans in, and I had rinsed it. There was about a teaspoon of water I didn't realize was in there until too late, so it got sticky again when it cooled enough to work with. 😅 I found a tip online looking up variations on this recipe to brush a tiny bit of a neutral oil on the mold to keep the cakes from sticking, and that worked great. Two of them came out glossy, but the rest were beautiful as can be. The glossy ones tasted so good 🤣. I ate them to taste test.
Nice recipe thanks
Thank you too
Well that was far more simple than expected...
Yummy
I made these using a different recipe and found the smell almost sweetcorn-like and the texture like mashed potatoes. I filled mine with red bean paste. They looked pretty once moulded but didn't hold shake when picked up like yours did, so I will use your recipe instead😊
Hi Mindy (?) , great recipe and easy too. I'm going to try it. One way to relieve the arm soreness is to stand on something a bit higher. I am pretty short and my counter is a little higher than is comfortable to do a lot of stirring. I stand on 2 old telephone books that are wrapped together. A step stool is too high. This puts me at the optimal height to comfortably stir at my stove or counter. Really enjoy your channel - thanks!
Great tip! Will try next time LOL! Thank you.
Mandy
Those are my favorite cakes but not available in my country, now I want to try it
Hello Love your channel! I was just wondering if the mung beans can be cooked in the insta pot like the method used for the red bean paste ? Thank you ❤
Tasty 👅. Wish you would make Black bean cake / Hopia . I love them
I really like you. Down to earth. Now I just have to find a Chinese store where I can buy the supplies.
Very appreciated sharing us your lovely mooncake recipe, but may I know how long the storage time of this mung bean when in a packaging? Thank you so much
That look tasty 💖, how long can I storag it? I would like to do them with Coconutmilk and send them my cousin per Post.
What type of pot are you using in this video? Would love to have the link for this particular pot please!
Could I put red bean paste in the center or does it not work together? Thanks xx
That sounds delicious and more healthy than many western deserts! I'm going to have to try this. If memory serves, you've said in the past that you have arthritis, and I do as well; it's good to hear that stirring the bean dough is still doable, as I'm finding some things getting more difficult or painful. I'm curious, though, how should I store these and how long do they last?
Keep these cakes in the fridge. They will stay good for up to a week.
As I’m watching you making this mung bean cake I’m drinking my cold mung bean soup lol
Thank You for sharing Mandy! How do I store them? In the refrigerator or leave them out in room temperature ?
Refrigerator, since there is no preservatives.
Lots of nutrition in the skins.
Omg😮🔥
Hi! I love your Wok so much I bought TWO!!! Do you sell the spatulas that come with it? I bent one due to poor packing for a camping trip...they are not easy to bend or break!
Thank You! Jamie
Hi, Email me with this issue and we can help you get a replacement (products@soupeduprecipes.com)
Thank you for the support
Mandy
Hi, I also suffer with arthritis. I was wondering if you had any recipes or natural supplements that are good for arthritis and inflammation?? Thanks 😊
Can the mung bean paste be stored in the freezer? I want to try making moon cake, but I’m single so I don’t need several. And can the moon cake dough be frozen as well? Thanks.
How do you store then and how long do they last?
Can you please upload a matcha mooncake recipe please 🙏 thank you 🙏 your recipes are all awesome
Can the golden syrup used in mooncake be substituted with honey?
Can you do it with other type of beans or it has to be with only mung beans?
Will it still form a hard skin after shaping?
Haha I bought the molds after seeing the last mooncake recipe. But never made the mooncakes. I guess I'll make this to use them for the first time.
Hope you enjoy =)
Would it taste good if I added peach flower tea?
Tetszik nekem. . szeretnék Magyarul egy receptet.
Can we wrap it with a rice paste?
I usually add fresh coconut and jaggery to the mung bean paste and make it the same way
Hey Mandy - can I use red beans to make your mooncake to come with a different color? I already save the yellow mung beans and I wanted a different color to make for my friends and family for the holidays. I plan on using the same recipe. Please advise and many thanks in advance 🙏!
Yes you can!
Could you possibly use a hand held electric mixer to stir the dough at the end? My arms won’t hold up to that.
How long do the mung beans need to soak before rinsing and simmering? I know you said “overnight”, but how long do you mean? Would 6 hours be enough? 8 hours? 12?…
We make halwa ,kheer, moong dal jamun with this ...love from India...try our recipes too🙂
I have that moon cake mold
Que delicia ¿ solo se puede hacer con ese frejol ....? gracias 💜🫰😍🇵🇪💜
❤❤❤
Can you use moong dal
Are mung beans the same as winged beans? I love your channel btw!
They are not the same.
Try to make mung beans halwa
♥️♥️♥️
Hi Mandy, can I substitute the mung bean with red bean?
yes
If I make them on a Friday but won't serve until Saturday how do I store them overnight? Do I serve them cold, at room temp, or heat them in the microwave?
keep it in the fridge
I've tried making so many of your mooncake recipes, but my cakes always stick to my mold. What's your secret? Also, how long do these mung bean cakes keep for? Should they be stored in the refrigerator?
To prevent the mooncake from sticking, you have to cook the mung bean paste to a perfect consistency, which takes lots of practice. However, there is a short cut. You can roast some cornstarch in a non-stick pan over low heat for a few minutes. Use the cornstarch as a dusting powder to prevent the mooncakes from sticking.
These mooncakes can stay good in the fridge for a week.
If I quadruple the recipe do I also need to quadruple the time?
….making today…huge ty🤍☕️
