    ⇒ Snow skin
    40 g (1/3 cup) glutinous rice flour
    40 g (1/3 cup) rice flour
    30 g (1/4 cup) cornstarch
    50 g (1/2 cup) icing sugar
    Pinch of salt
    120 g (1/2 cup) milk
    30 g (2 tbsp) unsalted butter, melted
    20 g (1 tbsp) sweetened condensed milk
    40 g (1/3 cup) raspberries (fresh or frozen)
    ⇒ Filling
    250 g taro, peeled and cubed (270 g after steaming)
    1/4 cup dried rose petals
    35 g (3 tbsp) white granulated sugar
    30 g (2 tbsp) unsalted butter
    20 g (1 tbsp) sweetened condensed milk
    Pinch of salt
    50g (1/4 cup) raspberry jam
    ⇒ Cooked glutinous rice flour
    30 g (1/4 cup) glutinous rice flour

    I’m glad to see you’re back and the mooncakes look so elegant. As you mentioned the skin can be a day ahead of time, will it make the final product get tough and rubbery quicker? Can it be kept in the freezer to extend the shelf life?

      I haven't had that issue since I store the skin tightly wrapped with plastic wrap so that it has minimal air exposure. I suppose freezing could work but it might be a hassle to let it thaw to the right temperature before using.

    Hi Jasma. Thank you so much for all your mooncakes recipes. I tried making the taro moon cake today and I found the texture of the snow skin different from your coconut mooncake. The one using oil and wheat starch was better.

    Lol I'm making it right now but forgot to get the rose and raspberries so I will have to do without this time. The taro took longer for me than 15 min tho. Can't wait to try them. This recipe threw me off since I usually use oil instead of butter.

    Hi Jasma, Nice to see you back. It looks so easy to make moon cakes. I hope mine will have a clear line this year. Everytime I made moon cakes, the problem is the line on the surface is not clear. I still couldn't figure out the problems. I did chill the snow skin dough, but the result was the same. I also did change the mold, no improvement again. Do you have any solution on this? By the way, how many moon cakes can be made with your raspberry & rose moon cake recipe?

    Hi Jasma, moon cake festival is round the corner. I loved all your moon cake series and would love to try out all the recipes. However I would like to ask why all the snowskin ingredients weighs different from another?

      Hi! I make small adjustments to each recipe based on it's flavour and what additional ingredients are added to the snow skin. For example, this snowskin has a little more liquid in it due to the added raspberry puree, so I compensate with adding a little more dry ingredients. Hope this helps~

      You can! Weigh out the powder and add milk or water to it until it in total equals the weigh of the raspberry purée

      The flower petals are far too light to provide a reading on a scale so I was only able to use volume as a measurement

    Hi Jasma, I’ve attempted the snow skin Mooncake for the very first time…I was very happy with the outcome…however, what changes can I make to make the snow skin not so tough? Thank you in advance.

      The skin is not soft when I flatten it. I end up rolling it . In your video, you seem to form the skin to the filling so easily.

      It sounds like you didn't chill it enough. Once cold and stiff, the snow skin should be very malleable

      @@JasmaFusionCuisine I’d chilled it overnight . It is malleable, but I think it’s too stiff. I’ve purchased snow skin Mooncakes before and they’re soft. (You know how when you fold yours into a block to chill…yours is smooth, mines don’t connect or come together unless I knead it. When I form the balls, they’re so stiff . That’s why I have to use a roller to roll out the skin. ) I’m wondering if I can adjust the dry ingredients or the wet ones

      You can try adding some more liquid but it sounds more like a technique adjustment is needed. Perhaps try kneading the dough more before chilling, it should be smooth and soft at that point and remain that way even after chilling.
