I like how this is a healthier version of traditional mooncakes using 2 of of my fav ingredients sweet potato and coconut. Very nice. Also, looks like my favorite mochi purple taro.

I know someone who started making and selling beautiful mooncakes like this, there seems to be a resurgence of interest in these treats. Honestly, I don't have the best memories of mooncakes, I found them to be too dry and cakey, but I do love rice cakes a lot and I'm always looking for new recipes. The molds are so interesting too

Even though I tilted the lid and placed the bowl in the correct area of the pot as the video suggested, I think water still got into my moon cake skin because even after cooking it for 1 1/2 hours, my knife still came out with sticky stuff on it (even though I know the video says it only takes 30 minutes.) To remedy this, I covered the bowl with foil and the skin was done after another 30 minutes. So yeah, I accidentally spent two hours cooking the skin, but they all still turned out beautiful in the end! And tasted great as well. I don’t have access to fresh purple yam where I live, so I used an ube powder mix and made it into a paste as my filling. I also used ube extract to help color and flavor the skin/coating.
@@erlinalie7163 The final product/after it come out of the mold, the skin had some give to it. Like I wouldn't describe it as sticky like sticking to my fingers at the end. It had the texture of... a marshmallow? Not sure if that's firmly good to you, but that's what the skin felt like to me!
Made this recipe yesterday! Turned out very well, so pretty! Not too sweet and the coconut flavor was still very subtle... Can't wait to try another one!
