One little pro tip, if you want seasoning to go on evenly on your chicken, I'd put the spice mix in a ziplock bag, then throw your chicken in there, close the bag and give it a good shake, that's how I always do it and the seasoning gets on lovely and even. the Keto recipes are interesting, but I'm glad you do non keo stuff too. This really does look nommy.

Reminds me of a recipie you see on a Campbell's soup can. LOL. Hmm sub cauliflower rice, cream and bone broth, for the cream chicken soup, dump peas and carrots and you got keto low carb dish. Voila
Made your chicken rice dish today I used thighs instead. I also added an extra half cup of broth and that made the dish not so dry. It tasted great. We did not make the cream sauce since the extra broth made it creamy enough.

However, I think you should make a small investment in a decent knife and a stable cutting board. Hi Dave catching up on videos....Just a tip about onions either freeze the onion whole for 15 mins before you need it or refrigerate it for about 30-40 mins before cuttingor what I do the most is soak in water for 15 min....the gasses get my eyes too especially red onion....burns bad...some say peel but don't cut the root end off that helps too REALLY GREAT video....for the non keto ppl but great just the same Julianna NC
I used to make versions of this recipe all the time. Your recipe looks and sounds great. I too think the sauce helped up the flavour. Next time use your bullet to pulse the onions. Fast, and no tears. Unfortunately being a type 2 diabetic I can’t eat very much rice. And if I do, has to be brown rice. I’ve had success with cooking rice and refrigerating for 24 hours, then eating. Called starch resistance. This an all in one pan quick recipe.
Looked real yummy until you took out, but you’re right it looked a little dry. I knew you would figure something out and you did! I will absolutely try this, I already sent it to my daughter to try, thanks! I love your humor and down to earth attitude. 💖
I decided to ketofy this recipe and it turned out pretty good. I omitted the liquid because I wasn’t hydrating rice. I cooked the chicken as instructed, then took it out and cooked the veggies with the garlic and onions-deglazed with a little white wine then removed those. I added the cauliflower rice and cooked till it was dried out a bit. I made the sauce separately and then diced the chicken. I added everything back to the pan and stirred up with the cauliflower rice. Added a few dashes of Tabasco and covered with cheese. I put it in the oven for about 5 mins. to melt the cheese and voila! I would say overall it was good but it needs an aromatic herb to really put it over the top. Sage or oregano perhaps?
I got something for you to try Dave!!! Keto root beer pop! 8oz glass of Carbonated mineral water 1 Tbst of Allulose 1 Tsp of pure Vanilla extract. Mix! You can also replace the vanilla with maple extract, that has yet to be tried by me!

Hey Dave, the reason you needed sauce was your AI didn't give you a correct water/rice ratio. It counted the soup as water, which made your ratio off & your dish dry. I know from experience unfortunately!

Please put something under your cutting board to stabilize it🙏🏼 I’m afraid you’re going to cut yourself. I usually just put a paper towel underneath unless I am using a board that grips to the counter. Safety first 👍🏼
This dish might be cheap and easy but it's definitely not healthy. Mixing all those carbs with high fat and seed oils leads to so many health issues. Also, the parm didn't melt because it's fake cheese. If u use real parm cheese it would be a better sauce.

I would suggest adding another can of soup and / or sour cream to the dish before cooking it. I'd also mix in some cheese to the rice mixture.

IKEA sells a large lid for that skillet.
Take a wet paper towel and set it by your onion before cutting or chopping. The juice will go to the wet towel. I don't know why, but it works!
