My fiance doesn't eat pork so if I use a smoke turkey leg what should I do? Boil the leg in water or chicken broth til its fall off the bone then add the greens? I've never made greens in my life not my culture but I'm doing it for hubby
Did you say you used a full package of bacon? Also, will turkey bacon work as well? And how much chopped onion? My Kroger only sells a 27oz can of collard greens so when you say 2 cans what size cans 15oz? Sorry for the questions I’m new to this. Thanks!
Hi Mama Birdie, I used approx. 6 stris of bacon, use more if you'd like. But yes, turkey will work just fine. I used 1/2 of a medium sized onion. And yes 2 of the 27 oz. cans is what I used. Hope this helps.
Here in Canada, collards are not so popular. But when they do go on sale they sell out. I'm thinking of making broth with spare ribs. Then adding the collards , to simmer for an hour or so. Garlic and diced onions, of course. I got a shaker of 'Slap Yo Mamma' seasoning to make an authentic Louisiana flavour.

I did a search on Google for collards recipe, what they gave me was a link to a truncated version of your YT clip. I forgot to mention, the collards they sell locally at the Canadian store is 'fresh' collards, from the US. $.75 cents a bunch. I cooked it to the level where it still had a chewy texture. The pork broth is thick and gelatinous. It's served in a bowl, when I'm done, I drink the liquor like a soup. On a cold February day, them collards cleared up my sinuses. So satisfying.
I remember when Kroger had the shortage. It was such an inconvenience. I drove to maybe like 3 different grocery stores one day. I finally gave up and made myself replace the taste for greens until they reappeared in the stores. I snapped and made green beans for goodness sake!
