- Hey Guy’s! Welcome back to my channel. In today’s video I’m going to show you how to make Southern Fried Collard Greens for your New Years Day Dinner.
My traditional New Year’s meal usually consists of Black-eyed Peas Collard Greens and some type of Pork.
This year I’m starting my cooking early so I can make sure that we have all of our family favorites and I won’t be worn out from all of the cooking.
I bought my Collard Greens from Ingles Supermarket and they were good and fresh. I put my Turkey tails in the crockpot yesterday so the broth would be ready to go.
Now let’s get started with the recipe.
Fried Collard Greens:
1 Pack Smoked Turkey Tails, cook them in a crockpot the day before you want to cook your greens
2 Large Bunches Fresh Collard Greens, cut and washed throughly
8 Strips of Bacon
2 Teaspoons Sugar
Salt and Pepper to taste
1 Teaspoon Crushed Red Pepper Flakes
Using a large cast iron skillet fry the bacon.
Once the bacon is done remove from the skillet and set it aside.
With the skillet still hot add the collards to it with the grease from the bacon and the dripping still in there. Add all of the collards then place a lid on top so that they can start sweating down to decrease in size.
Cook over medium heat.
After about 5 minutes add the sugar, salt and pepper and red pepper flakes. Add broth from the smoked turkey tails. Let simmer for 10 to 15 minutes.
At the point where you can look at the greens and see that all of the water had been released from them and the stems are good and tender you will not need to use the lid anymore. If you leave the lid on and cook the greens too long they will become mushy just like cabbage does when overcooked.
Check the liquid and stir the greens so that everything is cooking evenly. Add more broth as needed. Cook until the greens are your desired tenderness adding additional seasonings to suit your own taste. Make it your own. The whole cooking time shouldn’t be more than 45 minutes to an hour. Once done add the turkey tail meat to the greens if you like it like I do . If not just eat the greens. Enjoy!

One thing I love abut my people of color - we are going to wash our meat and veggies well, before we commence cooking.
Yes!
thanx
my grandad cut the bitter in collards by adding some cabbage. looks nice too. thank you for your video. Delicious!!!
I always love cooking a little cabbage in my greens, taste is amazing...
Wish I could buy a bag of the green leaves from the cabbage to cook with my greens, yummy!
S-o-o-o nice to see a real cook who’s clean and cooking from scratch. Not “nary” a can of anything in sight!! Thank you for showing how it’s really done…right! 🎉
Thank you for watching Harriett! God bless🙏
Just wonderful
Thank you 😊
I love collards 2. I season mine with fat back grease and streak of lean but yours looks delicious. I can't help but notice how clean you are with your cooking!!! thank you for sharing for sharing your recipes!!!
Thank you so much for your comments.
Love ham hocks cooked in my collard greens 😋
Oh wow. I prepare my greens by separating each leaf, looking at it, destem it, stack them on top, then roll , then slice. Wash just how u do. I have to check out the leaves first. Tfs
I agree with separating each leaf looking at each one just like she found that tag. Just saying bugs and worms be on those greens
Oh Lordy, Jackie I really like your style of southern cooking. I'm a native Floridian. That looks delicious! I bet you can really cook up a pot of mustards or also turnip greens, & I like to mix green, especially turnip & mustards. Collards a treat, too. Imo, collards & rutabaga greens tastes similar. I want to try different greens to wrap & cook dolmades, which are seasoned rice, vinegar, seasonings, with mint, onions & garlic, etc, wrapped in greens leaves, cooked in herbed tomato sauce. I enjoy them.
That sounds delicious! Thanks for watching and Happy New Year!
Excellent job showing us how to cook fried collard greens. Thank you for sharing Jackie 😊
Thank you so much but this video. I am going to prepare this for Christmas dinner
Hope you like it!
First time I seen ur channel loving it.
Yay! Thank you!
after we picked and cleaned our greens, granny always told us to double wash. but i think she quadruple washed em. With turnips/mustards we would give em an xtra bath though😄
Happy birthday 🥳🎂
Thanks 🙏
we put ours in a 7 qt steamer with neck bones olive oil spoonful of sugar and they are ready in 30 minuetes
Hello Jackie those collards look amazingly delicious tfs! Happy New Year!
Thank you Wanda!
Love your recipe.
I’d like to pass on a little hack to help keep your cutting board/mat from sliding around.
Put a moistened and squeezed wash cloth under the mat and that will keep it from moving as you cut/chop.
Happy New Year !
Wow! Great tip! I would have never thought of that. Thank you and I will be using this tip the very next time I use my chopping board 👍🏼
And it's healthier, looks good 👍 👌 😋
Yes, thank you
First time watching your video love the way you cut up your greens take care, and I will be doing it the same way take care

Happy New Year Belinda!
I tried this using the salted pork. It came put good. I fried it first. Emptied off the and used that grease to start sautéing the onions and greens
Sounds great!
That’s some pretty bacon! 5:42
IKR! I ate a couple of pieces and gave the rest to Monty. It’s his favorite!
Your hair is gorgeous too 😊 I like looking good while I’m cooking for my husband 😅
😊 thank you
I would plant those stems in some soil just to see what happens🏞
Looks delicious. Now I'm not a fan of stems, but I do people who like them
Thank you. The stems taste just like the leaves to me.
Is that a cast iron skillet?
I didn't know you should use cast iron skillets on a ceramic top stove 🤔
ohooo bug
I have a question. Do you add the baking soda every time you add the new water? Or do you just use it the first time you’re washing them?
No just with the first wash. Let it sit for about 10 minutes with very hot water then wash normally. The second and third wash don’t get baking soda.
where did you find your specular #JackiesSouthernSoul ? thanks for sharing this - John 3:17
My family eats turkey tails but not the bacon and fat,, what's an alternative?
The alternative is chicken broth and olive oil😉
You can plant the stims in the garden 😅
How Many Ladels of broth ? ? ? ?
I add a few ladles at a time as the greens cook. As the broth cooks off add more until your greens are cooked to the tenderness that you like👍🏼
Waste not want not. There's nothing wrong with stems like you did. Just like with broccoli. You just heed to cook them long enough.
Can you use beef bacon? I am allergic to pork.
I’d use some kind of smoked turkey before I’d use beef bacon just because there’s nothing much to beef bacon. You can also use chicken or vegetable broth.
What kind of broth was use was use
Smoked turkey tail broth. The recipe is in the description of the video😉
Fried or boiled collards?
I prefer fried but I eat boiled too as long as they are not mushy.
Yes Ma'am we wash our meats be fore we cook it
Looks good but to much time for me I cook my greens and cabbage in with my meat,
It takes meat a long time to cook and I don’t cook my greens to mush.
The stems are where the flavor is! But you got to know how to cut those stems? Nothing looks worse than a pot full of stemless FLAT COLLARD GREENS.
I love the stems too but my family doesn’t so I don’t put a lot of them in mine. I also think that not only do they taste good but they make the dish look prettier.
I would have cut the stems off
Stems are delicious and full of fiber 😉
Dang Jackie you sure are wearing that back ground song out lol.. I think would be better as intro and video just in natural sound personally but hell what do I know..
Thank you for watching Brian. I like this soundtrack and yea I’ve been using it a long time. Others use it also but when I use it, I identify it with my channel.
@@JackiesSouthernSoul I understand.. nice videos nonetheless.. take care
Can you explain why you fry first if you’re adding broth to the greens?
