I made this today. It is so delicious! I think I have a new favorite soup. I will be keeping a batch in the fridge. I didn't have wfpb yogurt, so topped with cashew sourcream. 😋
Thanks for sharing! I would love to cook this in my instant pot. What would be your cook settings/instructions especially when the rice, lentils, and cabbage probably cook at different times?
Hmmmm, not really sure but I would probably try the pressure cook setting for 20 minutes. Worst case scenario is that you might have to cook it for a few more minutes if the lentils aren’t cooked enough.
I make a big pot of cabbage soup on Sundays. Then during the week I can just add different ingredients to mix it up. Beets? Potatoes? This soup is a good starting point Great vid btw...
