    Hi. Love always your recipes and hard work. I made this and my family just loves it. I doubled it and lots of leftovers too. I did not have the soy curls but next time gonna have to order them to try it that way as well. I wanted to say much appreciated. God bless. 🧡

    I cheated on this. I bought 2 bags of assorted frozen veggies, added some veggies I had in my fridge and then made the sauce. Quick and absolutely delicious

    This would be really good if you added mashed potatoes on top. Kind of like a Shepard's pie. I like the idea of a crust too

    Just made this. Excellent. A small tip: upon serving, add just the tiniest bit of Shaoxing cooking wine (about 1/4 oz) to your bowl and plate, and mix well, and, wow, perfect flavor and after-taste. Too much and it would be over powering. Really adds just the right touch to that sauce.

    Lots of yummy goodness there. Since I must simplify my cooking as much as possible due to work and life, I'm going to try to throw everything raw in the casserole dish, poor the sauce over (shimming half of it first into the veggies) and pop it into the over, cooking it a bit longer. I actually prefer crunchy vegetables.

    My Mom used to make a HUGE turkey pot pie with the leftovers after Thanksgiving, and this casserole reminds me of it! The only thing different (besides the turkey) is that Mom would put a nice, thick crust made from her buttery biscuit dough on top and bake it until it was a light golden brown. Mmmm! Not the healthiest thing on Earth, but it was delicious. I can't wait to try this one. Thank you so much, Jill! (Although I might use pea protein in place of the soy curls, since we have a family member who is allergic, and add a chopped potato or two.)

    I didn't have most of these veggies - either due to allergies or need to buy more -- but I wanted this casserole, so I made the sauce and chopped potatoes into cubes, added organic sweet corn and greens. Poured the sauce and I am baking it right now! Cannot wait for supper time.

    Jill, two questions: 1) Where did you get that beautiful casserole dish? It's gorgeous! 2) I'm assuming you could keep any leftover sauce in the fridge and use it for over things (topping baked potatoes... maybe on salads...?)...?     I love casseroles; this one looks so good! I could also use a skillet like yours for all my vegetables. The sides are high, and it can be used in the oven. What company makes those?

      Not Jill LOL but wanted to share that I have 4 sizes of pans like these with lids - and didn’t pay more than $15 for each at Home Goods or TJMaxx, and three are Cuisinart! Heavy bottoms, high sides, oven proof, well-fitting lids.

    You freeze half of after cooking so when the day been super busy you can pull out of freezer and heat up

    I bought the soy curls and have yet to use them in a recipe so guess what I'm using them in this recipe as I have all the ingredients.

    Idea. Can you take your lentil flatbread and make pierogi out of it? Cooked cabbage with cooked mushrooms. Then cut holes in flatbread and stuff & fold over & crease to keep together. Hole cut bread to fit filling. Then put in an air fryer. Do you think this would work?

    Why not put in bowel with half of sauce mix together well .. then put in pan and pour remainder of the sauce over top .
