When I was a chef I used to make a heart Carpaccio for my girlfriend at work after I trimmed the Tenderloin. She loved it , but I used Thai chile seasoning, basil and lime ..spicy and addicting

the fancy Italian restaurant in town used to have carpaccio, but people kept sending it back to the kitchen to be cooked more... ss eventually they just quit serving it. they changed to steak tartar for awhile but people kept complaining it was undercooked and a few even demanded to know if the chef "was trying to kill them".
If it wasn't, he wouldn't be making this. Get some really high-quality beef from a reputable butcher, and don't be afraid to exercise your immune system.

some places will cut corners and try to use cheaper cuts of meat, the reasoning being that cheaper cuts that are normally tough will be more tender if they're raw... it's stupid but that's what some people do

This reminds me of a traditional dish my father makes except he uses a large blade to pound the meat and chops it into a fine paste. It's seasoned and served with a bitter green like in the video. It's delicious but meant to be consumed in small amounts every once in a while. Deer also works well in a dish like this! Yum!

If people are unwilling to eat RAW meat, might i suggest having boiled hot water in a bowl between your selves, dipping the meat in the boiled hot water cooks the thin meat fast. I think that's why people are thumbing down the video anyway, good video chef John. :)

I love carpaccio! If you prefer, you can quickly sear the outside of the tenderloin. If you have truffle oil, drizzle a bit of it on top. Serve it with crusty Italian bread or French baguette.

Another way to get thin slices of beef is not by pounding it but to order carpaccio (either roastbeef or tenderloin) from your butcher at choice. They will freeze it and slice it really thin. Perfect for carpaccio. Very yummy dish!

If you don't want to spend the extra money for the highest quality beef, then I suggest you make something else.

Technically cooking your food is great for your digestion, as we are beings that are designed to eat cooked food. That aside, this looks absolutely delicious. Not something I would recommend eating more than once a month (unless you enjoy a hefty helping of Colan cancer in like 20 years), but for valentines day it's a fantastic choice.
@TheSuperIdentity chicken has to always be cooked through - but with beef it's quite common to have certain cuts and dishes raw, the meat simply has to be fresh and good quality and the correct cut for the raw dish you want to cook it for. A good dish to try raw beef would be this or if you like Lebanese/Middle Eastern food try kebbeh nayeh - the meat flavour is milder and it's well spiced and served with bread and olive oil ... super delicious!
Small tip! Freeze the whole piece of beef and then you can slice awesomely thin slices so you don't ruin it (or at least making it worse) by pounding it!

I've never really been crazy about raw beef. I like the combination of ingredients in carpaccio but what I truly love is the taste of a dark brown sear on a medium rare steak. Raw meat just tastes completely different - like white chocolate. It has its uses but it's not for everyone. It boggles my mind that so many people avoid raw beef because of health scares though. Next thing we know people will start cooking beef until well done... oh wait, the idiots already do.
@ParkSun111 yes, this is actually because of the antomy of chicken and pork. They both come from smaller animals, so the meat is generally more exposed to the outside work. This is opposed to cow (especially this slice of cow) its a really fact animal.. and the really good (expensive beef) is in the core of the cow.

raw beef is awesome. I always put the beef to a freezer for 10 minutes so he meat structure hardens a bit and then I cut the meat - p a p e r t h i n
