    BTW, you have about as much chance of getting sick from carpaccio, as many of these trolls have of getting a date for V-Day. In other words, it's an extremely, extremely small chance.

    When I was a chef I used to make a heart Carpaccio for my girlfriend at work after I trimmed the Tenderloin. She loved it , but I used Thai chile seasoning, basil and lime ..spicy and addicting

    @Marienkaafer we have to cook our meat well because of how dirty it gets being processed a real butcher will serve you fresh meat 50 years ago people ate raw meat all the time hell in the 70's my grandfather ate handfulls of ground beef raw while waiting for his burgers to cook, lol

      the fancy Italian restaurant in town used to have carpaccio, but people kept sending it back to the kitchen to be cooked more... ss eventually they just quit serving it. they changed to steak tartar for awhile but people kept complaining it was undercooked and a few even demanded to know if the chef "was trying to kill them".

    I love how ppl dislike videos... not because its of lesser quality; but because they wouldnt eat/do carpacio. Rly guys? I learned stuff here and thumbed it up for that. It was nice quality and all. just telling good ol' Chef John my appreciation.       some places will cut corners and try to use cheaper cuts of meat, the reasoning being that cheaper cuts that are normally tough will be more tender if they're raw... it's stupid but that's what some people do

    High quality raw beef is edible. ONLY HIGH QUALITY BEEF, GO TO A PROFESSIONAL BUTCHER, SUPERMARKET BEEF IS A NO-NO.

    @TheViciousVendetta "Why are you willing to eat raw fish meat, but not beef?" I had to ask myself this the first time i was served Carpaccio and it was "eat it" or "stay hungry for the next 12 hours". It was really good....

    This reminds me of a traditional dish my father makes except he uses a large blade to pound the meat and chops it into a fine paste. It's seasoned and served with a bitter green like in the video. It's delicious but meant to be consumed in small amounts every once in a while. Deer also works well in a dish like this! Yum!

    i don't why you people are disliking this because of the raw meat. the purpose of this video is to teach you how to make carpaccio, which it does. disliking this video because carpaccio is raw meat is just like disliking a how to make pancakes video because you don't like pancakes.

    If people are unwilling to eat RAW meat, might i suggest having boiled hot water in a bowl between your selves, dipping the meat in the boiled hot water cooks the thin meat fast.
    I think that's why people are thumbing down the video anyway, good video chef John. :)

    I love carpaccio! If you prefer, you can quickly sear the outside of the tenderloin. If you have truffle oil, drizzle a bit of it on top. Serve it with crusty Italian bread or French baguette.

    It amazes me how childish some people are ...disliking a video b/ he made something you consider "gross" what are we in middle school? Seriously .... do you think chef john is here too cater too everyone's specific taste and that he will take the video down and make a whole new one b/c some people find raw food unappealing? He has made plenty of other videos with steak and "cooked" foods ... so stop whining and search for a video that suits your taste .. I'm truly amazed by some people

    Another way to get thin slices of beef is not by pounding it but to order carpaccio (either roastbeef or tenderloin) from your butcher at choice.
    They will freeze it and slice it really thin. Perfect for carpaccio. Very yummy dish!

    @Masterincommander Rare meat is just raw meat wrapped in slightly cooked meat. If we were to package this carpaccio in ham, would you eat it?

    Most people in anglophone countries thought raw fish sounded horrifying until sushi became trendy in the past couple of decades. Open your minds; this is a real dish that many people enjoy and you might like it too if you tried it and aren't opposed to meat for other reasons. But yes, you do have to take care to go to a reputable butcher to ensure the meat is safe, like he makes very clear at the start of the video.

    Such ignorance! Carpaccio is delicious, and there's no reason to worry about food poisoning if you use fresh, high quality beef. Honestly. And this coming from someone who doesn't like her steak too raw! It's delicious. But you should add some pine nuts and sundried tomatoes :)

    But that's the whole concept of the dish, buying high quality beef so that you can eat it carpaccio style. The dish requires such a premium quality ingredient because your eating raw meat. If you don't want to spend the extra money for the highest quality beef, then I suggest you make something else.

    Chef John, I just want to commend you for posting something that would be considered, by most, to be "off the beaten trail". It's like some folks just don't understand that you can never know if you like something unless you try it. I mean, do people really think that the first guy who looked at a raw oyster or an artichoke said "man, that looks delicious". Most of this stuff was probably eaten on a dare and we're all the better for it. Keep up the good work, man - love your vids/site.

    Technically cooking your food is great for your digestion, as we are beings that are designed to eat cooked food. That aside, this looks absolutely delicious. Not something I would recommend eating more than once a month (unless you enjoy a hefty helping of Colan cancer in like 20 years), but for valentines day it's a fantastic choice.

    @TheSuperIdentity chicken has to always be cooked through - but with beef it's quite common to have certain cuts and dishes raw, the meat simply has to be fresh and good quality and the correct cut for the raw dish you want to cook it for. A good dish to try raw beef would be this or if you like Lebanese/Middle Eastern food try kebbeh nayeh - the meat flavour is milder and it's well spiced and served with bread and olive oil ... super delicious!

    Small tip! Freeze the whole piece of beef and then you can slice awesomely thin slices so you don't ruin it (or at least making it worse) by pounding it!

    @Michaelsp9 It may sound dumb, but it's the essence of beef. I mean, it's the most simplified version of beef you could try. Think of sushi - it's the most basic, truest way to eat it. I love my grilled steak and fish, but raw is just great.

    As long as its fresh, you can enjoy leaner cuts of beef like this raw just like raw fish (sashimi). And just like sashimi/sushi of course its an acquired taste but once you get used to it, its pretty awesome.

    I've never really been crazy about raw beef. I like the combination of ingredients in carpaccio but what I truly love is the taste of a dark brown sear on a medium rare steak. Raw meat just tastes completely different - like white chocolate. It has its uses but it's not for everyone. It boggles my mind that so many people avoid raw beef because of health scares though. Next thing we know people will start cooking beef until well done... oh wait, the idiots already do.

    @ParkSun111 yes, this is actually because of the antomy of chicken and pork. They both come from smaller animals, so the meat is generally more exposed to the outside work.
    This is opposed to cow (especially this slice of cow) its a really fact animal.. and the really good (expensive beef) is in the core of the cow.

    I'm not really into the raw meats, I eat sushi, but I only eat it at a place I'm comfortable with the chef who prepares it. I'm just kinda funny about my meats, even trying sushi was a challenge, I'm shocked I even liked it. Though this was rather amusing, and I think I know at least one friend who'd eat it!

    raw beef is awesome. I always put the beef to a freezer for 10 minutes so he meat structure hardens a bit and then I cut the meat - p a p e r t h i n

    I miss eating raw meat.When I was a kid. I use to love eating my dads raw meat salad seasoned with lime juice,peppers,mint,lemon grass, scallion etc.. I'll definitely will try this recipe. Looks delicious!!

    @BloodyGaaraOfSand just had beef tar tar the other day. It's pretty safe, you just have to buy very good quality beef and prepare it well aka, wash your hands, sanitize your kitchenware.
