    Delish! Just made this yesterday and I’m a fan for life! Btw, if you cut them a tiny bit thicker and wiggle them loose from the pan about 5-10 minutes into baking on the first side, you don’t need baking paper and they don’t stick!

    I just got my eggplant out of the oven! It is super yummy! Love It! And I like both soft and also the chewy ones. I don't cut very even!!

    I've never given much thought to eggplant myself. I always thought it had to be stuffed with my dad's secret ingredients. He could cook anything and make it melt in your mouth but he was a really old man when I was born and he died when I was 11. He was 57 when I came into the world. He was born in 07. He knew how to cook too good actually and didn't even broach healthy eating. Now I can enjoy eggplant! Thanks for the upload!

    This was great tasting! I get a delivery service of veggies and many things I normally would not buy and eggplant is one of them. I imagined a sandwich yesterday and this made it very yummy especially with hummus spread on both pieces of bread!

    Oh, my favourite! It wasn't until... my high school. My house always stir-fry and stew with partially fermented soy bean sauce (we called it 'tau-cu' or beancurd paste, you can call it, it's very salty) and really love it! I love the creamy soft stew texture rather than the crispy one. Oh, I did eat before Malay eggplant-chilli cooking, it's very hot and spicy but it's damn delicious too!

    Love your show. Being new to all this and just starting with the WFPB diet I really need to try some fun recipes. Just a tiny little tip: Why don't you show the food in detail at the end of the show? I'm always like: 'That must be so delicious, I wonder how it actually looks like up close!'     that eggplant is HUGE !!!
    in england they are a third of the size of that.
    Is it natural size or a growth hormone ?
    I wish we had them this big in England.

    Am glad to find this, and plan to try it later this summer...…. I have been wondering if you've considered a version of eggplant parmesan, a dish I do enjoy! :o) I'm hoping my garden will come thru and I'll have some eggplant to experiment with. Anyway, would love finding other ways to use eggplant. Thanks!

    will this bake right with just the nutritional yeast? The liquid aminos has 320mg sodium at a very small 1/2 tsp, that's more than most soy sauces

    I have eaten eggplant since I was a teenager. This recipe, Jill, was just delicious. I bought a medium sized eggplant and it was like a vacuum skimmed over the baking sheet. Need I say more? It was gone, in pretty short order. About, how many sprays of Liquid Aminoes do you use per piece of eggplant?

      I don't as of yet but that would make a great show! I will add it to my list.
      A simplified answer to that question is that our whole family has been vegan now for three years. No regrets, in fact we are reassured almost every day that this was the best choice life change we have ever made. Super Health and only getting better! Feels like we stopped the aging clock right in its tracks👍

    I was always told you had to salt them to draw out some chemical that tastes like cigarette butts before you cook them. Do you know what I'm talking about?

      Salting is to draw out the moisture and break down the cellular walls so it is easier to cook and doesn't turn "mushy".
      The toxin that some people get concerned about has to do with vegetables in the nightshade family ( potato, tomatoes, eggplant etc.) The toxin is mainly in the leaves and stem so there is really both to worry about.

      The salt to remove bitterness is an old tradition, much like rubbing the ends of zucchini. I read that modern eggplants have been bred to be less bitter so the salting is not required for anything other than drawing out moisture.

    Hi - you don't salt the eggplant and let the bitter come out... I always thought I had to do that. Takes more time to salt rest rinse. Thanks :))

    I didn't find this particularly tasteful and definitely not the "best" baked eggplant I ever had, but I ate it anyway. Needed a bit more seasoning, like onion or garlic or both! Thanks for your recipes though, I've found a number of them to be very good. This one, I give a "meh" to.

      William Weeks - you, eggplant needs A LOT of seasoning to taste good. It tastes good with combo of cumin, coriander, cayenne, turmeric and garlic
