- I love dumplings! This vegan vegetable dumpling, Jiao Zi recipe is easy and SO delicious. The homemade wrapper has a chewy QQ texture that is irresistible in every bite! It's perfect for a weeknight dinner or potluck. Bonus: they freeze well!

Dumpling Wrappers
2 cups (240 grams) all-purpose flour
½ teaspoon kosher salt
½ cup warm water (under 95°F/35°C)
Filling
Neutral oil
1 teaspoon grated ginger
1 cup baby carrots or carrots roughly chopped
5 oz firm tofu drained, dried, and cubed
1 cup frozen shelled edamame beans thawed
½ medium green cabbage cored and roughly chopped
1 tablespoon soy sauce
1 tablespoon vegan oyster sauce
½ teaspoon granulated sugar
¼ teaspoon mushrooms seasoning such as Po Lo Ku
1 pinch kosher salt
Cornstarch for dusting
Sauce and To serve
2 tablespoons soy sauce
2 tablespoons Chinese black vinegar
1 tablespoon sesame oil
½ teaspoon granulated sugar
Chopped cilantro leaves
Chile oil with sediment
Toasted white sesame seeds

I tried this today it was surprisingly good since we fry everything in my country o wasn't sure how boiled dumpling would taste like. I liked it i'm always looking for vegetable recipes for my kids i think this is a good and easy one if you use chopper for the veges. And for easy wrapper just roll out the dough square shape and use round cookie cutter or anything and there you get dumpling wrappers in one go rather than making and rolling out balls separately. Thanks for the recipe i will try kimchi recipe next 😊
I find her method easier, otherwise the leftover dough gets dry and it takes longer to finish.

I can’t wait to try these! Your instructions are so clear and easy to follow. I always thought dumplings were super complicated to make but now I am excited to prepare homemade dumplings. I just know they will be a new favorite recipe. One question: some videos steam the dumplings, you say drop in boiling water. Any difference on taste/texture? Just curious.

Hi Karuna, thank you so much for your interest. Dumplings can be boiled, pan-fried, steamed for sure. This is a boiled version. Pan-fried version has a crispy outer skin, boiled will have some chew on it. :) Hope that helps.

they will be soggy, not crispy, when frying; i tried it. better with a knife. get someone else to help.

Looks great! I heard a technique where once the water boils add the dumplings, then you put in cold water, let it boil again, and dump cold water again, then take them out on the third boil. Do you know why people would use this technique?
that's for dumplings that have meat filling. The meat needs time to cook so by bringing the temperature down and allowing it to heat back up again, the meat gets properly cooked. Not necessary for vegetable dumplings.
Loved it! I guess I ate them once but the base was crunchy (not boiled) but the rest seemed to be boiled. In that case, are they boiled and then fried?
I wonder if they needed to be steamed longer or maybe they needed more oil when frying
Dumplings with the bottoms fried are called potstickers. You will have to shallow fry until the bottoms brown then add water till just below halfway and close pot. Steam until water has evaporated.
