@@barbram8001 Non dairy milk alternatives are becoming more popular and diverse these days. You might be surprised to find cashew milk at a local supermarket, and most natural foods stores. They may be found in either unpasteurized or shelf stable forms, so you might need to look around to find it.
@@barbram8001 It's easy, I make my own. You just take a fistful of cashews (unsalted, not roasted), add water and blitz it in a blender, I'm using Nutribullet to do this. Water/nuts ratio depends upon your taste. If I make it thicker, it resembles cream, and additionally it thickens when boiled. Actually, this is the only plant milk I use. It fits all purposes.
I love the simplicity of your seasonings: garlic, shallots, sea salt, and freshly cracked black pepper. Glad that plant-based milks can be used as dairy doesn't like me.
For a little more "Countryside flavor" I add some thyme in the final stages. Also, for a slightly different kick, use a mix of peppers instead of just black. Always enjoy your recipes!
I’m not vegan or vegetarian, how ever I am a calorie counter so often make vegan and vegetarian meals. What did you use as the milk substitute. I tried this with unsweetened cashew milk and it was good but I’m interested in your experience

My grandmother in Italy used to make a similar dish. In my region this dish was popular with large bow-tie pasta (although I prefer with tagliatelle). The other difference was that she used heavy cream instead of a milk and flour mix. I've got to try your recipe!

This is a lovely Valentine's Day Seduction dish - fix this for your date, and you will have a very romantic evening! Only change I would make is, I'd use Cremini mushrooms (the baby form of Portobellos) rather than button mushrooms, because I think they're more flavorful. Serve this up with a big lush green salad, crusty bread and Spanish wine. . .
I really wonder if you could use a non dairy milk for this and, if so, which one would cook the best??? I never cooked with non dairy because I have only been whole food for about four years now. But I do miss this dish. I used to make it once a week, but not from scratch. Looks good.
This looks really good! I wouldn't mind adding a few red pepper flakes and if my conscience would allow, a tablespoon or two of cream. By the way, did you live in the North America? Your English sounds either Canadian or American.
For me adding a ladle full of pasta water is a must. The starchy water emulsifies with the sauce making it creamier and better clings to the pasta.
