Hi Mo.. Tq for the recipe❤️I have a problem here... My bread when in the oven is very nice shape.. But after taking out from the oven the bread collapse n out of shape😢😢😢.. Can u tell me what went wrong? Should I reduce the water? Cos I use different brand of vital wheat gluten? Please advise tqtq😁

今天再做第二次,低糖酵母加溫水差不多一小時,材料全加但搞拌十分鐘後還是比較濕會黐手,再發酵也發不太高,焗後比較濕濕地既感覺,味道可以,想發高一點要留意咩技巧呢?謝謝

Thanks Mo jie for the amazing recipe. I make this bread regularly. It is very easy to make and taste delicious. I cut the water to 175ml cause I find the dough is easier to form with this amount of water.

1 cup/250ml/250g Warm Water
2 Eggs
2 tbsp/40g Softened Butter
1 tsp/7g Honey
1/2 cup/41g Oat Fiber
2/3 cup/70g Flaxseed Meal
1.25 cup/170g Vital Wheat Gluten
1 tsp/6g Salt
3 tbsp/40g Rare Sugar
1/2 tsp/2.5g Xanthan Gum
1 tbsp/8g Active Yeast

請問,因害怕麩質,若不用小麥蛋白粉,可用甚麼粉代替?
非常感謝MO姐的配方,我製做的不是生酮版,我的亞麻仁籽粉是用亞麻仁籽用調理機打成粉;燕麥纖維是用大燕麥片打成粉後使用,手邊沒有黃原膠,所以不加,沒有阿洛酮糖,就用一般砂糖代替,調整成30g,沒有阿洛酮糖漿,用蜂蜜代替,加了2克抹茶粉,做成抹茶口味(試過用4g,但有點苦味),沒有攪拌機,就讓將它拌均後,靜置半小時後再翻拌,也試過放冰箱低溫發酵,早上再烤,吃起來是鬆軟Q,如果是翻烤過的,就是酥脆版,二種都非常好吃,又有飽足感,不做生酮的朋友都非常值得一試。
咁你呢個版本真係完全唔係佢個版本😅

我兩年前開始吃生酮甜品和餅食,試過用oat fibre和psyllium husk powder,覺得兩者都一陣穀糠的"行"味,好難接受!flaxseed 好啲,我已經係家裏最唔奄尖嗰個!😅請問可否用almond flour或其他粉類代替?
