Mo jie, all roads leads to sourdough indeed. I made this again yesterday night, kept in fridge after 3rd fold for more than 12 hours, its still baked beautifully❤️

I forgot to say, you are right! Eating healthy and cooking healthy is very important! You feel so accomplished when the food you make comes out right! When you cut into the sourdough and hear that crisp sound, it's like the best sound/music in the world!

Please correct your written recipe below the video, there are mistakes in temperature and baking time. It should be read as your video indicated for the first time temperature is 260C for 30 minutes and then the open lid turns down the temperature to 215C bake for another 10 minutes. Thanks again for sharing your recipe and guidance.

我非常同意你讲的 “条条大路通sourdough”!我本人试过用干酵母,水和面粉70%比例,有时间的话就放雪柜过夜,没时间就直接等每半个小时fold一次,fold三四次,撒干粉,直接去oven。150度30分钟,分分钟都整出好吃的欧包!真是随心所欲!很喜欢你的理念,不需要那么死板教条,照样可以整到好吃的东西!
