  • Do you want to know how to make the best soft fluffy homemade donuts? You know, Perfect light and fluffy doughnuts are easy to make at home if you have the right recipe. This recipe is super easy and just one time proofing only. Once you know this recipe you can make any donuts easily at home. This video I will share plenty of tips and tricks, so watch the video till the end. Let’s start….
    ingredients:-
    Luke warm water -175 ml
    sugar 50 gm
    dry yeast 5 gm
    milk powder 30 gm
    egg yolk 2
    bread flour high protein 350 gm
    salt 1/2 tbsp
    unsalted butter 50 gm
    fry oil as needed
    Method:-
    • In a mixing bowl add 175 m l Luke warm water, 50 gram sugar and 5 gram dry yeast.
    • Then whisk until completely mix everything.
    • Cover and allow to sit for 10 to 15 minutes until foamy and frothy on top.
    • After this time passes the mixture should have bubbles and have a foamy look.
    • Now start to knead the dough.
    • In to the dough mixing bowl put yeast mixture, milk powder 30 gram, 2 egg yolks, 350 gram high protein bread flour.
    • The bread flour I used, it has 12 percent protein contain.
    • If your flour is weaker, then you may need to lower the hydration.
    • Then add half table spoon of salt.
    • Now I am going to knead the dough about 15-20 minutes or until soft and elastic texture.
    • Here if you want eggless donuts, you can use smooth mashed potato or yoghurt instead of eggs.
    • Next 5 minutes knead the dough on slow to medium speed.
    • Dough looks sticky but don’t worry.
    • Then slowly add butter and knead another 15 minutes or until soft and elastic texture.
    • It’s better if you leave the butter outside the fridge for a couple minutes before using it, so it’s not that hard to manage.
    • Grab a dough and pinching on the sides stretching it, you should see a thin layer of the dough, If it breaks it means that not ready, needs more time.
    • If not then dough is ready.
    • Making soft doughnuts actually really easy to make but a little tricky.
    • Bread flour absorbs slightly more liquid due to the flour's higher protein level.
    • This recipe we rest the dough for one time only, one proofing only.
    • Now, divide the dough in to small size ball. Here I use kitchen scale to get equal size.
    • Then roll the dough in a circular motion with your palm against the table, until it forms a round ball.
    • Sprinkle some flour on the surface and top of the dough ball to make life easy.
    • Then start to make a shape.
    • Make a small hole with the help of small donuts cutter, or you can use your finger if you don’t have cutter.
    • Once you finished, and then rest the dough for proofing for 2 hour in room temperature.
    • The room temperature is about 25 degree Celsius to 30 degree Celsius.
    • After 2 hour you can see the donuts size looks double.
    • You can check the proofing, when you touch the dough, proofed dough will spring back slowly when poked.
    • If the donut collapses when touched, it is over proofed.
    • Once proofing is done, and then start to fry the donuts until golden light brown.
    • The oil temperature is about 150 degree Celsius.
    • Be sure to lower stove’s temperature if oil temperature is rising.
    • Repeat with remaining doughnuts, and then turn off heat.
    • Once donuts cool, roll in sugar.
