Traditional Tarhana Preparation And Soup Recipe

Materials needed 4 kilograms of onions
2 kilogoram chickpeas
pressure cooker
3 kilograms of tomatoes
5 kilograms of red peppers
3 kilograms of filtered solid yogurt
3 liters of milk
yeast
250 grams of salt
20 kilograms of sifted wheat flour
chickpeas are soaked with cold water and left for one night
adjust the amount of chickpeas with scales and let cool water
Drain and wash the water of chickpea moistened for 1 night
add chickpeas to the pressure cooker
we don't have a large saucepan and therefore we will cook the ingredients in 4 pots
wash the onions and add to the chickpeas
Add 2 liters of boiling water

add tomatoes to the bottom of the pan

I have been researching Tarhana Dough.... I have found that there are many variations.... I like that this one has more chick peas in it which adds more protein to the soup! I personally can not use gluten, dairy, tomatoes or peppers.... So I have decided to make mine with Onion, Garlic, Celery and Carrot along with gluten free flour and dairy free yogurt.... I am very excited to have this to use this winter!! Thank you for posting :) :)

but the preparation in the last part is a bit lacking

How very bizarre. It’s a lot of work to make instant soup. Yeast is not that healthy. But it is used as a starter to then ferment so there may be lactobacteria that is created. It would die however from boiling in hot water later. Fascinating. It seems this is an old fashioned way to create an instant lentil and pepper cream soup.
