Yayla Corbasi, Turkish Yogurt Soup that will warm your soul

- Yayla corbasi can be translated to "Meadow Soup" and is a well known yogurt based soup in Turkey enriched with butter, mint and rice. It's a creamy, tangy and one of the most comforting soups I've ever had. It's made with simple pantry ingredients and can become one of your favorite soups of all time!
Ingredients:
• 400 g plain yogurt, 1 ½ cup (Turkish or Greek)
• 100 g rice, ½ cup (any variety)
• 1.5 lt water
• 40 g butter
• 1 tbsp oil
• 1 tbsp dried mint
• 1 tbsp all purpose flour
• 1 egg yolk
• ½ lemon (juice)
• 2 tsp salt
• 1 tsp black pepper (optional)
Instructions:
1. Wash the rice thoroughly and add into a pan with 1.5 liter water
2. Bring to boil and then let it simmer for 10 minutes until the rice is soft
3. In a bowl, whisk 400 g yogurt (room temp) with 1 egg yolk, 1 tbsp flour and juice of a ½ lemon
4. Whisk until no clumps remain and the mixture has a creamy texture.
5. Gradually add boiling water to slowly warm up while whisking it constantly to bring the temperature close to the boiling water. This is very important to avoid curdling of the yogurt.
6. Once the mixture is warm enough, strain through a sieve (optional) and add into the pot
7. Stir the soup until it’s simmering again for a nice smooth consistency
8. Season with 2 tsp salt and optionally 1 tsp black pepper
9. In a small pan, add 1 tbsp oil and 40 g butter and melt until it’s sizzling
10. Before it gets brown, add 1 tbsp dried mint and turn off the heat
11. Stir until it’s fragrant and colored
12. Add the mint & butter into the soup, stir and cook until desired consistency
13. Serve and garnish with extra mint and butter to taste

I'm Turk, It's my favorite soup my mom makes, and mom does it very well. One of the best soups, always one of my favourites.
I do this when I have leftover rice and chicken stock - I add greens like chopped spinach or chard sauteed with some onion, then add the rice , some fresh chopped garden mint and chicken stock, then the yoghurt mix -you can also add lamb meatballs (kofte) if you want it more filling - if you want a lighter dish, you can use low fat yoghurt and leave out the butter, egg and flour, but it's more luxurious and satisfying with the egg flour mix and butter. you can also add some spicy paprika or hot pepper to the melted butter. you can also add a few shelled broad (fava ) beans, which is nice. If you like this, you should try the Balkan dishes Tarator and Cacik - also Polish Miseria salad, and maybe even Bialy Barzc/gzurek (polish white borscht), which doesn't have yoghurt but is a white, sour soup.

7 years before I shifted to London and 1 year back I meet a Turk lady and now she is my soul sis. She made me love towards Turk culture, cuisine and people. I never meet girl like her in London after I left India . Today she offered me this dish and now I want to learn n eat every day 😂

We have a similar dish in kashmir but with meat and without rice in it. It is called Yakhni. I am pretty much sure will have the similarity in taste.

We have similar to this recipe with vegtables like spinach, parcley, chives, and coriander ( they are herbs for ASH =a kind of Iranian soup). In different parts of Azarbayejan province in Iran they have ASH Doogh (Aylar) like this but a bit different in ingredients they add chick pea or even meatball
I am from Afghanistan. It is interesting we don’t add yogurt to Ash while it is cooking. We add herbs and yogurt when serving it.

Can I use egg white instead of egg yolk?
Yes, but there is a risk of the egg white cooking faster and leaving pieces in the soup. Try to stir and temper the sauce well before combining into the hot pot.
Egg yolk gives a much creamier consistency than egg white. Also whites smell. Are you skipping the yolk for its calorie content. Be assured the cholesterol is a small percentage because the yolk is only around 30% off the whole egg.

I think you can lessen the quantity as it has been used to fry the dried mint and add a buttery taste as well.
Sorry for the delayed response. You can use less butter or if it works for you, you can use olive oil.
You can also use sunflower oil, that's how I do it 😊

you can omit the egg yolk. I am doing it without it and it's fine

Bro this is similar to Raita we in India make with curd and clarified butter, onions, cumin seeds, salt and red chilli. However we eat/drink it as a side dish with rotis.
