It's BBQ season and you need these delicious baked beans on the menu. In this video I will also explain the do's and don'ts for safely canning beans.
2 lbs. navy or great northern dried beans
1 c. bourbon, I used Maker's Mark
1 c. pure maple syrup
2 c. good quality ketchup, I used Simply Heinz
1 c. lightly packed brown sugar
2 c. cooking liquid from your rehydrated beans
1/4. c. molasses
1/4 c. apple cider vinegar
2 T. Worcestershire Sauce
2 T. dried mustard powder
2 T. dried minced onion
2 T. garlic powder
1 T. smoked paprika
2 T. liquid smoke
2 T. seasoned salt
2 T. black pepper
3/4'" cube of bacon, ham or pork per jar (optional)
Fill jars two-thirds full with hot beans. Add a 3/4-inch cube of pork, ham, or bacon to each jar, if desired. Fill jars with heated sauce, leaving 1-inch headspace. Remove air bubbles, wipe rims, center lid and add rings to fingertip tight.
Pressure can pints for 75 minutes and quarts for 90 minutes, adjusting for altitude as follows:

0-1,000 ft 10 11
1,001-2,000 ft 15 11
2,001-4,000 ft 15 12
4,001-6,000 ft 15 13
6,001-8,000 ft 15 14
8,001-10,000 ft 15 15
This recipe CANNOT be safely water bath or steam canned.
Allow jars to cool undisturbed 12-24 hours, remove rings, check seals, wash jars and store in a cool dark place.

This is the best complete bean canning video I've seen. I like the recipe for the sauce you used. You covered everything and so I can make these beans with no worries. I did always wonder what beans bushes used and never thought to use the great northern as I don't care for the small navy beans. I had cannelloni beans and they were pretty nice for some not canned baked beans I had made for 4th of July to bring to family cookout.

I love your channel and I have followed your channel for several years. I made your Better than Bush's Baked Beans this morning in my new Presto Pressure canner. In the past, I have used the Presto Digital canner, but we recently got a gas stove and I wanted to correctly and safely can my food using my new stovetop canner. I noticed the variations in processing time, so i went with the updated Ball Blue book time (on page 140) and the NCHFP times of 75 minutes for quarts. Now I am second guessing myself and am wondering if I should have went with the older guideline of 90 minutes. I am looking forward to trying this recipe, not sure about the bourbon, but I used the Member's Mark Bourbon for my homemade vanilla extract for Christmas gifts :) Thank you for following the safe canning guidelines!!
I don’t drink alcohol so I will omit the bourbon. Every year i make your better than baked beans but will try these this year

The difference in boil times is directly proportional to how you plan on using the beans. If you plan on using your beans in another recipe after canning, like using kidney beans in chili, you wouldn’t want to boil for 30 minutes. If you want “ready to eat from the jar” beans then yes, boil for up to 30 minutes.
@@Junkinsally there’s no tested documentation stating that and that would not really explain the difference in specified tested baked bean recipes so I can’t confirm that’s the case but thank you for sharing. 😊
Hi Carol! I have a question about your cooktop. Previously you had a gas (maybe propane, idk) and now you have an electric cooktop. Do you find any difference or concerns when pressure cooking? I sold my pressure canner due to having an electric cooktop. Thank you! These beans look delicious!
Hi! I’ve not had a problem. You should always consult your manufacturer about canning on the one you have. As long as it consistently maintains the pressure in your canner and it is rated safe for the weight of a canner you shouldn’t have a problem 😊
Thank you so much for the recipe. Do you think this would taste good without the Liquid Smoke? I've read some bad things about it and prefer to not use it.
