    Pork and Beans
    www.sbcanning....
Today I finished canning all the beans we started yesterday and making a batch of delicious pork and beans. I really like the way they turned out. We also got a little work on the cabin, a mini-harvest in the garden and shared some thoughts about needing to be intentional about having fun and slowing down. I hope you enjoy it.

While you were lying in the garden I remembered once years ago when I lived in Phoenix AZ I’d planted a few rows of pinto beans. And just as the sun was hitting the soil they started to pop out of the ground. And I do mean pop! I lay down in the dirt and watched those beans pop up and each time it made me laugh.😂

I find when I have too many thoughts running through my head to be able to relax, that writing them down is very helpful. It's not really the pressure to get things done that causes me to be unable to relax, but the pressure to remember things. So thoughts are just going in a circuit in my head, but if I write them down, then I know I don't have to remember them anymore. But I don't treat it like a to-do list, it's just a list that's there if and when I need it, not a list of things that need me.

I agree about taking time for family. You need to enjoy the children while you can. Those are the future memories you will have. It’s not the number of jars or pounds of produce processed. The family will want to return home after the are Adults because you made a special effort for them. My family told us this, and appreciate the hard work on our farm but the experiences are good memories. ♥️

I realize that you probably won’t see this comment as the video is nearly a year old. I just wanted to say that my grandmother had a summer kitchen in a little outbuilding that was surrounded by windows for ventilation. In the summer months she would do all of her baking and canning in that kitchen to keep the heat out of the house. With as many outbuilding as you have and as much canning and baking you do might it not be worthwhile to consider such a facility for LMR? It could double as a little potting shed as well. Just a thought. Also, most commercial pork and beans have a pinch of ground cloves in the sauce in which they are canned, not chili powder. The cloves are just that little something, something that you taste in the background. Just another thought.

That was, as usual, a great video. I got my 7 quarts of beautiful garbanzo beans canned today. Now I really want to get some pork and beans going. We ate pork and bean sandwiches (on my mom’s homemade white bread) when we were kids. I loved them so much. I haven’t thought about them for a very long time. (Also I’m remembering her leaf lettuce and miracle whip sandwiches. ❤️) Thank you for sharing - laying down in the grass and communing with nature sounds like the right thing to do. If you do a rough chop in a food processor or blender with the blueberries will save so much time. They aren't pretty but if you use them in smoothies or cooking it doesn't matter, even if they are in a fruit salad it won't be too ugly.😁

I think everyone must have a similar insulation story from their childhood 😂. When I was a kid I played/rolled around in a derelict fibreglass boat for a day until my whole body was on fire. My little sister discovered some old insulation the cats were sleeping on and climbed in to cuddle with them. We found her in the act and rushed her into the bathtub but it was too late; crying and scratching for days! A great childhood tradition.

Love the flick of the foot, closing your dishwasher! A new wire dog brush works great for poking holes in berries. I layer in two layers, put a piece of parchment over top of bottom layer and put another layer on top. Lisa would be helpful too, you can FD in the lids!! Dual purpose 😊

As a kid growing up i was living with my mom n sister on my grandparents farm, due to my parents splitting up. My granny always told us to stop n smell the rose's. I think she was on to a good thing, she was a very busy lady, everything was homemade from scratch, pantry full off jams n jellies, pickles, chuckneys, green beans packed in salt, herbs hanging all around the farm house. So as an adult now living in Gold River Vancouver Island, I started preserving beets, Branson pickle, jams n jellies just like her. I'm now retired n finding it very hard to live a healthy lifestyle, so I started growing a lot off our veggies , not in a big way like you do, but I love how you make thing's very easy to understand. I don't have a pressure canner yet to scared off them 😂😂. I water bath only so far. Maybe one day I will concor my fears😂😂thanks for your inspiration Mary B Gold River 🇨🇦🇬🇧

I’m in PA & we’re about to have our 3rd round of the extremely toxic smoke blanketing us. I’ve lived in the PA mountains all my life & haven’t seen smoke like this, even with local fires. It’s not regular wood fire smoke. It’s extremely heavy. The satellite footage of Quebec’s fires all breaking out at the same time on a clear day was horrifying! This is a travesty all around

We have a meal similar to this called cowboy pork and beans. We love it and serve it with either pasta or crusty bread. I've made it with belly pork, pork steaks and chops, different types of sausage and even works well with chicken. It has a lovely Smokey BBQ type sauce. We use black treacle in the UK and mustard powder.

You are the queen! I limit myself to canning 1 thing/week. We do eat our beans, but I've never done pork & beans before. Sounds great.
Freeze dried blueberries are delicious! -just to chomp on.

Hi Chelsea I bought the plastic lids from harvest right and it helps me stack trays in the freezer when I pre freeze. Then I can put more on them and use them as trays for the next batch!

When I work in the floral shop we had straw flowers in the garden out side and when they were in full bloom we would cut them leaving around one inch of stem and take them into the shop and use floral wire and push it into the stem and dry them. By putting the wire up the stem when green when they were dried the stem would shrink around the wire and would become one with the flower. The ones we didn't get to before they dried we would use hot glue on the stem area before inserting the wire.
I have 2 sets of trays and when I have more to freeze dry than I have trays I use my half sheet cookie trays to lay out my product and freeze them overnight then transfer to bags and refill my tray again and when my freeze dryer trays come available I dump my bags on to the trays. Rinse and repeat as many times as needed. I have done this with celery, cucumbers, tomatoes and peppers.

You know you've grown wiser when you choose to lay in chickweed instead of pink insulation! Congrats. LOL
