I m in love with the cast iron pan u guys r using.... Even though these r known recipes... I still watch them because the tips that u guys share actually makes wonders while cooking. I almost felt like gobbling up the paratha when it puffed up so well completely like a Puri... Ahhh... It's love a 1st sight for any paratha lover. And b4 I end this comment... This music of na na na na..... Uff kills it and that Durga puja dhaki and kansor ghonta beat.. Ahhh nothing can be more ideal.
Great cooking style but we Punjabis do not put oil before we cook paratha. we cook the paratha dry on high heat then desi ghee on both sides and low the heat cook it further till its crisp and golden. putting oil on raw paratha usually makes the paratha rubbery but not crispy in my opinion....
Right. My mother does it that way and it works perfectly. But in our experience this yields softer parathas that stay soft longer. One could go both ways I guess.

I mean we can survive with aalo shiddho/aalo choka with rice and even fermented rice with pickle.. And then another version of full fledged preparation with variety of ingredients... i believe paranthas came from Punjab but over time came to be incorporated into every indian cuisine. You will find different versions of paranthas/porotas in each household north, south, east and west of India. Perhaps only the north-east was saved from the onslaught of the paranthas(!) as it remained inaccessible back in the days.

My family is of Bihar origin my mom makes aloo parathas very similar like this however she uniquely serves them with a side of kheer/phirni it tastes really good a nice mix of sweet and savoury and I really urge everyone to try it
Same way of preparation in Bihar too. We too call it Aloor Porotha. Many of the dishes in Eastern India are more or less same or alike ! I belong to Bhagalpur, Bihar and have tasted several recepies with more or less the same method of preparation since childhood. This channel is such a bliss ❤️

The way you represented removing the curry leaves, cutting onions , so beautiful macro videography , the first push of fork to smash potato (awesome video shooting ) , and then that delicate filling of potatoes into the dough and then delicately closing that dough , man o man , so much hard work you put on direction of videos (it seems cooking will be rather easy than your video shooting and editing).Then the final part cooking the parantha and lovely turning it . At the the end of video I was thrilled and was imagining that it is served before me when you people put yoghurt, achaar , and finally took a piece out of it . Hats off to your team (Especially the cook and video casting , editing , direction guys ) . Forgot to inculde that lovely music, I am not getting the words but that awesome soothful voice and music and this lovely video present the cooking to another level. Knead the dough as soft as you possibly can. Then it will not “burst” ... the filling and the dough should be in harmony when you roll it out. When rolling it out - you should give very light pressure only and if needed put some dry flour so that it does not stick to the base on which you are rolling out the parathas. It will take a little more time - but the effort will totally be worth it.
Despite my below average will and skill to cook, Bong eats gets me into my kitchen everytime I watch this aaloo paratha video. And tha Bengali background music brings back 7 am memories from 2000s. Superb editing skills!

Lol the measurements are given in weights exactly for the reason of removing any confusion. Cups can different for different people.

Knead the dough as soft as you possibly can. Then it will not “burst” ... the filling and the dough should be in harmony when you roll it out. When rolling it out - you should give very light pressure only and if needed put some dry flour so that it does not stick to the base on which you are rolling out the parathas.
It will take a little more time - but the effort will totally be worth it.
