- The moghlai porota (or mughlai paratha) is a flaky, flour pastry filled with a mixture of beaten eggs, keema, spices, and seasoning. It differs from other stuffed porotas in that the filling cooks inside the porota and that it is layered. It is a perfect Bengali snack.
Making mughlai paratha is not difficult, but it does take a fair bit of planning. Here, we take you through the steps and show you how to make Calcutta's favourite cabin-style dish.

The alur torkari is different which is eaten with mughlai porota
You have to modify it a little (add less of the spice mix and not too much water). But it's the same basic recipe.
I am not a bengali first of all. I am south indian who is purely vegetarian. I hit upon your channel and was simply blown away by your simplicity and elegance of your videos. Brilliant work guys. Only crib is that most (or should i say majority of your recipes) of the stuff that you show are non-veg :(
Actually majority bengalis are non veg and mostly eat non veg only, so thats why all recipes like this
You can try with veg filling also

There are very few cooking videos which are uploaded in the UA-cam without showing the face of the cook or without any useless talks. This is one amongst those. Mouth watering! Mughlai Paratha is a preparation which we do not find often in restaurants now a days. Anadi has also lost its charm. I remember my childhood days, when we used to eat Mughlai Paratha from roadside stalls. Now we have become over health conscious, so no place for this dish. But I will always prefer it, rather than eating junk in MacD or KFC! :-)
Absolutely right. We somehow falsely believe that a Mughlai Porota is unhealthy, while we have no problem eating french fries, or fried chicken. Eaten in moderation, Mughlai Porota is a fantastic snack.

Two things:
1. Would you consider cup/spoon measures as opposed to grams? Any reason for not doing so, other than reasons of absolute accuracy? Harder for home cooks to do gram measures, no?
2. Where are the recipes for the gorgeous alu, the keema and that chicken?

1. We have consciously chosen weights over volume measures for accuracy, especially for people who have never tasted the dish and hence don't know how it is supposed to taste. This also makes it trivial to scale the recipe for larger batches, because weight measures are precise enough to allow multiplying ingredients without errors ( volume inaccuracies would get magnified and noticeable). That being said, we plan to provide some kind of an approximate weight-volume converter for different ingredients once the website is complete.
2. The alu, keema and chicken kosha recipes will also be put up. We are fine-tuning the recipes right now.
