If her feelings were ever hurt, we didn't know because she enjoyed the oily moshladar plate of luchi aloo dom as much as we did. Oh, the nostalgia! I can literally smell the dish as I am typing this. I do have to book my tickets to Calcutta... Making a list of the dishes I want to eat... I remember my dad used to get us kochuri and aloo torkari from this shop near the park circus market.... We used to stay there ages ago when the circular Road did not have the bridge.... On either side you would have huge trees that made a beautiful canopy.. This was our breakfast special during Sundays right after coming back from church..... Cannot say how much I miss Calcutta....

কারণ একটা আছে আগে , কচুরি ভাজা হতো বনস্পতি দিয়ে র এখন ভাজা হয় palm oil দিয়ে ,কোথাও বা সোয়াবিন তেল. তো আগের মত সেই গন্ধ র আসা না করাই ভালো. র ভালো বনস্পতি এখন কোনো কোম্পানি তৈরি করে না.

since 2010..... that is dedication...👏👏👏 reminded of puri and aloo sabzi sold since early morning on roadside thelas/ small shops / dhabhas . mouthwatering... wow.... will try it i personally like boiled potatoes hand crushed slighty.... which also thickens the gravy a little . gravy has to be slurppy but not too thin
Yes, every shop has its own style, but the basics are the same. We make it with boiled potato too sometimes, specially when making in large quantities-but for smaller quantities this method is easier and requires less cleaning and washing. It also tastes a little better because the alu absorbs more of the salt and masala.

I do have to book my tickets to Calcutta... Making a list of the dishes I want to eat... I remember my dad used to get us kochuri and aloo torkari from this shop near the park circus market.... We used to stay there ages ago when the circular Road did not have the bridge.... On either side you would have huge trees that made a beautiful canopy.. This was our breakfast special during Sundays right after coming back from church..... Cannot say how much I miss Calcutta....
A lot has changed, infrastructure wise.. But I'm sure the food will still be nostalgic.

For me, the local Bengali culture of warmth and love is one of the best we have in India

আমি বরাহনগরের মেয়ে । ওখানকার সবচেয়ে পুরানো কচুরির দোকান " মুখোরুচি " । কাশিপুর উদ্দানবাটি তে থাকাকালীন স্বয়ং রামকৃষ্নদেব ওখানে কচুরি খেতেন ।আহা্ কি স্বাদ্ । এখন অবশ্য ওসব অতিত । কচুরির মান ও পড়ে গেছে ।

কারণ একটা আছে আগে , কচুরি ভাজা হতো বনস্পতি দিয়ে র এখন ভাজা হয় palm oil দিয়ে ,কোথাও বা সোয়াবিন তেল. তো আগের মত সেই গন্ধ র আসা না করাই ভালো. র ভালো বনস্পতি এখন কোনো কোম্পানি তৈরি করে না.

i personally like boiled potatoes hand crushed slighty.... which also thickens the gravy a little . gravy has to be slurppy but not too thin
Yes, every shop has its own style, but the basics are the same. We make it with boiled potato too sometimes, specially when making in large quantities-but for smaller quantities this method is easier and requires less cleaning and washing. It also tastes a little better because the alu absorbs more of the salt and masala.

This brings back so many memories. I was very young when I lived in Calcutta but we used to live near jyothi cinema and there was a kachori wala there, his aloo tarkari is etched in my brain as the smell and taste of a perfect sunday morning!! I am so glad you choose to decode this recipe for us.
