Several years ago, I was trying to remember the name of a cake that was served in my childhood’s elementary/Jr High School in the 70’s. I remembered that it had a coconut topping on it. So I Googled coconut topping cake and this is the cake that I found. I made it and I almost cried when I ate a piece. Oh it brought back so many memories from my childhood school days. Most of the cafeteria staff, teachers and bus drivers are gone on now 😢. Some of my friends and school mates are gone on as well. Thank you so much for sharing your recipe with us and may God continue to bless you and your family ❤.

Yummy!! I have been making the plain version of this for years. I also found an article with 4 or 5 versions of this cake! The frosting in my recipe is made with soft in butter spread on the cake while it is still hot. I put holes in my cake so that the butter goes down into the cake as it melts and it’s made made in an 8 x 8 pan. It is decadent. Word to the wise… please remember to watch your cake once you put it in the oven. I almost lost a cake, lol.

I am taking your suggestion and making this for my coworkers for Santa Land wednesday. We work with IDD adults and we set up a
" store" in a classroom and they shop for presents using Monopoly Money. Staff then helps wrap the items so clients can give presents to family and friends. I think this will be great for staff to snack on...and I don't have to take a whole cake home for two of us...lol

@@CollardValleyCooks I made the cake and the peanut butter bars. I used a hand mixer. Both had an excellent flavor and both were really dense. Could my hand mixer cause them to be so dense? The bars came out like a chewy cookie and not cake like...both great taste just wanting to drill down to the super dense condition.

Recent subscriber and going through a lot of your videos. My mother made this cake, and when got married, I inherited a very old Betty Crocker cookbook that included this recipe. You’re only the third person I am aware of that even knows about this cake! This cake is sooooooo good, and the broiled icing is to die for! I think the recipe I use is called “Oatmeal Cake with Broiled Icing.” Boring, but descriptive title! I like Lazy Dazy Cake Better! 🥰. P.S. I always use both coconut and pecans in my icing - not the same without both!

HELP! My LAZY DAISY CAKE , is a CRAZY LYING DOWN CRUMBlY CAKE! Tammy, I've made this cake several times over the years and it was always a favorite but the last couple of times I've made it isn't near as good as before. I've used the same recipe as yours except my recipe did not have you cook the icing at all but just mix it up and pour on the hot cake and broil it. It was always good and moist but the last two times (once using the mixed and broiled icing and once using your cook in saucepan and then broil icing recipe) I've made the cake, the favor is great and moist but the cake is so crumbly and will not hold together, you were able to hold your piece of cake in one hand up to the camera, mine makes a mess in the pan and on the plate. Got any ideas what causes the crumbling, what am I doing wrong? love the taste but I'd be too embarrassed to serve this cake to anybody other than my husband here at home. Help a sister out? I used real butter, White Lilly self-rising flour, quick oats not old fashioned ones...the icing was absolutely the ONLY thing that held the cake together and it barely did.

    • @CollardValleyCooks
