African Influence in Caribbean Cuisine: Mangu!

  • During #BlackHistoryMonth I'm celebrating the African influence in Caribbean cuisine! A traditionally Dominican meal, Mangu is made of boiled plantains and eaten as a side dish or meal. We all know how difficult slicing platanos can be, so check out my hack that got a warm reception from my TikTok and Instagram followers ;)

    Ingredients:
    -Salt, to taste
    -4 platanos verdes, peeled and cut in to 1-2" pieces
    -Garlic cloves, I used a few but use as little or as much as you'd like
    -3 tablespoons of butter
    Instructions:
    -Salt the water in your pot and bring to boil with the plantain pieces and garlic inside.
    -Once it passes the fork test (up to 15 minutes depending on thickness of the cut of the platano piece), reserve a cup of boiling water and set aside.
    -Drain the pot and keep plantain pieces inside. Put in the butter and 1/4 cup of the reserve water and mash (some use cold water for mashing, I prefer the one that the plantains boiled in) until the consistency you like.
    -Serve up with a delicious protein, preferably one with a sauce so the textures are well combined.
    -Enjoy!

    But when you mash the plátano, you do it with cold water so they can stay soft

    Love your energy girl but this dish does not cone from Africa it is Native American as root vegetables especially the ones used in America were already there although they may eat this in Africa they did not introduce this the native Americans were already accustom to these ingredients and this way of cooking 🤦‍♂️😅 there is no food or language that is etc that is African in America

      Native americans didnt have plantains. Mofongo, Mangu Fufu and other similardishes from the carribean that uses plaintains comes from Africa.

      Actually you’re very very wrong, it actually came from Southeast Asia, later on they had trade roots to Africa and from there the slave trade expanded the plantains to the Caribbean and America
