i would think due to foreigner’s unfamiliarity to eat karekare with shrimp paste (bagoong), most Fil resto would already mix the shrimp paste. And because of shrimp paste’s strong taste, i would also think these Fil restos would already adjust its level to cater the local taste and maybe include more spice just like Korean palate.

Dishes are also regional in the Philippines as different regions offer varying versions of dishes. You have to be adventurous with our food also and explore our dishes 🤓😊

Most FIlipino foods have variations. Kare-kare basically has peanut sauce and various veggies. The meat in kare-kare is originally with ox tail and beef tripes, but there is also the seafood kare-kare, the regular beef kare-kare, and ligament kare-kare, and combinations thereof. Sinigang also has several variants.

Kare Kare is a peanut stew. Traditionally, it's made with Ox tail (though other meat can also be used, including my favorite, beef tripe), banana blossom, eggplant and yardlong beans. We usually eat it with sauteed shrimp paste at the side.
Pusit is the Filipino word for Squid. And it's usually stuffed with chopped tomatoes and onion and then grilled. The dipping sauce is usually soy sauce, calamansi and a labuyo chili (it's a Philippine chili similar in intensity to thai chili).
Sinigang is a sour soup. Traditionally and commonly, the soup is made with tamarind. Though we use other stuff as well such as guava, bilimbi, unripe mangoes, I've even eaten one that used the leaf of a tree (we call it "Ayo" but I can't find any english name).
Glad you enjoyed Filipino food 😊

Kare-Kare is a peanut based soup and always accompanied by a salted shrimp for taste, I prefer the cartilage Kare-Kare and thick soup.
PUSIT- that "rellienong pusit" (stuffed squid) it usually is stuffed with garlic, chili, onion and your choice of stuffing then grilled.
SINIGAN - sinigang as diverse as a language or music ^_^ the base is always sour and we love it as a Filipina you can use any meat your heart want

The Kare-kare must have been too bland for them. Kare-ksre should be eaten with a little shrimp paste. But its okay to taste it first without it then try to just add chugum/ a tad bit of shrimp paste so you'd know the diffeence. 😁
Food vlogs is a great idea.
Tip: .1.) It would help if you would ask a Filipino friend to join you to explain and help you on how you can enjoy the food better. Maybe you can call or video chat a filipino friend while you're at the resto.
2.) Try the food as it is or how you think it should be eaten just so you can give your first impression of the food. Then try it as how your filipino friend suggest it should be eaten/eaten with.. eg. If you need sauces/condiments with it =(we call it " sawsawan" ) Or if best eaten with plain rice, garlic rice/bread.
So you would know the difference.🙂
3./Ask if the food /main dish comes with a "sawsawan"
If Korean have banchan, filipinos most of the time have "sawsawan". Although not as nutritious as banchans, both banchans and condiments /sawsawan compliments or enhances the taste of the dish.
    *** usual filipino sawsawan:
a.) Soysauce, squeezed calamansi and crushed small fire chilies ( for grilled /fried/steamed fish, squid grilled chicken)
b.) Vinegar with small chilies with onion and or garlic
    c.) Vinegar and crushed garlic
d.) Vinegar, fish sauce and crushed garlic
(b.c.d.= for steMed shrimps lobster and crabs)
e.) Fish sauce, crushed small fire chilies ( for Sinigang)
And a lot more those are just the most common. Hahaha this is a lengthy comment i just got ecxited with your food vlogs that i wanted to share some tips🤣

Hi Coach! Actually Adobo is the Popular Dish in the Philippines the second one is Sinigang. You can cook adobo in Pork, Chicken and even Squid. While Sinigang the Main Ingredient is Pork. But you can also put Shrimp, Chicken and Fish.

I noticed the kare kare have shrimps normally it does not have shrimps. Sinigang also does not have shrimps if it’s pork sinigang. Seafood sinigang will sometimes have shrimps.

Pusit is definitely my fave, but maybe next time try Adobong Pusit which I think is more filipino compared to the grilled w/bbq sauce on it. Definitely try Lechon in Cebu next time as well if you visit Cebu, go to Rico's Lechon, they also have spicy flavored lechon :) Bulalo and Chicken Tinola are also great broth/soup dishes like Sinigang and I personally prefer Bulalo and Chicken Tinola. Aside from Adobo, give Humba a try as well, its good. I also recommend trying Filipino pastries and desserts such as ensaymada (try more than one flavor), pandesal, halo-halo, leche flan, bibinka, maja blanca, ube flavored desserts (there's a huge variety), masi (my personal fave), mango float and turon w/ice cream :)

Filipinos usually interchanges the meat ingredient between chicken, shrimp, fish, pork and beef, depends on the preferences.

I wonder if you had the kare-kare with shrimp paste? Haha. It's usually eaten together so the shrimp paste's saltiness will balance the kare-kare's sweetness. For sinigang, the most usual kind is actually pork sinigang, but it does have a lot of variety like beef and shrimp sinigang. I hope you get to try adobo, lechon, and other Filipino foods the next time you come to the PH! Thank you for loving our food. :)

The sinigang is sour not because of the shrimp.. sometimes, we filipinos add freshly squeezed tamarind juice or just tamarind powder w/c we buy at store.. plus the sourness of tomato
