My first time cooking sticky rice ever was using this method and the traditional bamboo steaming basket. Came out perfect! I also use this method when I am craving coconut mango sticky rice as well without the wait. Thank you Pai for your wonderful recipes. I cook it in the rice cooker wt a little bit more liquid than regular rice in which I prefer coconut milk wt a bit salt to taste, I set it & forget it, & I use an inexpensive rice cooker & it never fails. No soaking at all. Simply delicious all the time.

Enjoyed your sharing of this new way of soaking glutinous rice. I’ve often used the cold soak method (half an hour), and then cooked it using microwave oven. Precision is also needed for microwaving method too.

Thanks for sharing the video. We all have different methods to making sticky rice. My late mother showed me the method you shared a few years back. This is how she would cook when she didn't soak the rice the night before.
As for me, I think the best method is always the soaking and then sprinkling water on the rice when it is still in the steamer if I like it softer.
Hi Palin I have been cooking mine in the strainer over a pot and lid on the top. Flips easy. Just remember not to leave rice in the strainer once cooked, to avoid clogging strainer

I saw this video a couple of months ago and been wanting to try this technique. My mother had taught me to do the soak overnight and steamed the next day so I've always done it this way since I was a teenager. Now, I'm a mother myself and to save me time I had settle with electric rice cooker for sticky rice. OMG, this is a game changer for me. Not only did it save me time, the outcome of how perfect the rice cooked was mind blowing 🤯🤯🤯!!! I can't even express how crazy this is😱😱😱. I just made sticky rice for the first time using this method. Thank you pailinn. I even followed ur mango sticky rice video too. Instead I used durian cause I had leftover durian and wasn't feeling it just raw

I totally agree that no starch goes better with Asian grilled/bbq meats than sticky rice...even better when you add papaya salad to the mix. Thanks for this method of cooking sticky rice. I'm going to give it a try and test it for bigger servings for when I have guests over. Currently, I'm using the pressure cooker to steam my sticky rice and it works great and only takes about 43 minutes WITHOUT any soaking...the downside is that I can only cook a max of 3 cups (uncooked) of sticky rice due to the bowl size restriction in my pressure cooker, but 3 cups is fine for my family of 4.

Thanks for the new method! Another reason to wash rice before cooking is that they have found small quantities of plastic particles in rice, apparently from handling and during the polishing process. The quantities are quite small, but good to reduce it if possible.
This method actually works. Was skeptical at first but tried it. Such a game changer. Won't be soaking rice overnight any time soon.

We put it in the rice cooker and have it soak overnight then auto-start. It works fine. We serve it with everything, including American pulled pork bbq. Have you made Nahm Pik Ong yet? Easy for western cooks to conceptualize, Pork Bolognaise with Shrimp paste and extra chilis.

I tried this method and I like it best. It came out good i personally think it is better this way then the long over night soaking. Another way I was cooking was raise the rice a few time and then steam it for 15min then run hot water through it and let is sit for 5min then restart it.

I love sticky rice, it is my favorite type of rice because it goes well with my favorite types of Thai food. That being said, like you said, it's quite involved with planning and prep to enjoy sticky rice on the go but I found out my Zojirushi rice cooker does a VERY good job (thanks to your 7 different method video), so I no longer use any other method and it saves me from having to wash any other dishes except the rice cooker pot. The rice is sticky and soft and the grains are very separated. I love my Zojirushi! lol
The 3cup Zojirushi cooker (CAD$162 today) I would consider has only the following rice menu options (1) White Rice/Mixed. (2) Quick. (3) Sushi. (4) Brown. (5) Gaba Brown. (6) Long Grain White. (7) Steel Cut Oats. Which one is the correct choice for sticky rice, do you know?

This reminds me of the par-boil/steam method traditionally used in China and the Carolinas. I think it may be possible to skip any kind of soak if the rice is boiled for a full minute before steaming. I’ll give it a try and report back if it turns out.
OMG, I’ve been using this exact same method for quite a few times recently after I decided the cold soak Sticky Rice was always too hard for my liking and ends up being hard the next day when I reheat it 😂 The sticky rice made using this method does stay soft even after putting it in the fridge, and reheats beautifully 😃
I always spontaneously decide to cook sticky rice 1 hour before I eat, so I never have enough time to soak them; that was until I came up with this same method after remembering the tips and tricks you gave for shortcut / soft sticky rice (by soaking it in hot water for 15 minutes) that you shared in the “7 ways to cook Sticky Rice” video 😅

I've never thought to soak it in hot water first. I've always steamed it straight and then half ways I pour hot water over and then steam it again. Basically same method I would cook regularly steamed rice.

I was so excited to see this video because I purchased the bamboo cone and pot just like yours many years ago but didn't know how to use it. Thank you for showing me! My question is, how do you clean the bamboo cone? I had mine in a large plastic bag at one point but it has just been sitting out with my stored cooking equipment, I am embarrassed to say.

I don't eat rice often but sticky rice has always been my fave. That's a fun basket you make you rice in! Next time I go to the market, I will look for it.
I might be doing it wrong, but I cook my rice as my mother did. Rinse it well, 1 cup rice to 2 cups water, bring to a boil, lower the heat, put on a lid and let it cook for 20 minutes. Take off the heat and let it set with the lid on for another 15 minutes. Me thinks I am set in my ways. But it's nice to know there are options. Thank you!

that's great ! I tracked down in France with difficulty & reasonable price Thai bambooo basket & pot and am looking forward to experimenting over the weekend. The pot, as you know, is made of alumium and they say it should only be used on gas. But I am taking the risk and will use on my electric plaque vitroceramic because it works fine on my old French alu coffee & other pots. I will report back. Enjoying your videos immensly!!

I recently tried soaking my brown rice over night, and for the first time ever, it was not crunchy after I had cooked it. It was soft and perfectly cooked and the rice cooker I had was fairly basic, so no brown rice setting. It turned out great and it's how I will cook my brown rice from now on.

Somewhere in the middle. I let it soak in cold water for about... well, as long as I remember that I have to cook it ;) Then use rice cooker (VERY basic model), put a little bit more water than required, then it gets a bit softer but not mushy.
Thank you so much for this variation, and I do use the traditional basket and pan to cook in thanks to you. This hot water method with the hollow center worked perfectly! I flipped it in one go too and was so surprised too! I have a question for you about a serving basket. I have been wondering if the serving baskets for sweet rice is something I should invest in. I don't remember you showing that in your videos but I could be wrong. I have been watching your channel for many years and I have your original cookbook.

If I could find a hack to get the rice to resemble freshly cut and hulled rice that would be great. Nothing compares to rice that was cut 2 weeks prior to eating it. The texture, especially with sticky rice is completely different, when it is so fresh.
Honestly I make my sticky rice in my National Rice cooker and give a presoak for an hour and have always had a perfect rice. But I do love your method as well. Thanks for video
We have Philips rice cooker with glutinous rice function, this reminds me to try it now that I know I don't have to presoak if I'm using that programmed function.
I didn’t watch your previous video and idk if you had a microwave method but here’s how I do a single serving of rice. Rinse, hot soak for 11 minutes, microwave covered 3 mins, break it up and flip then microwave for another 3 mins (splash some water and microwave covered if it looks kinda dry, or microwave covered if it looks “just right”, or microwave uncovered if it looks hydrated)
Just order myself the basket for steaming sticky rice. I bought some speical sticky rice for the new year and the rice cook isn;t working too well. I am excited to make more sticky rice. But for real, $200-$500 is totally worth it for an amazing rice cooker, best investment ever.

As far as I know, there is only One type of "Sticky Rice", and its typically labeled as "Sweet Rice". Its completely Opaque when its Raw... where as some rice brands have a slight translucency before being cooked. However, when Sweet Rice is cooked.. its like 85% Translucent... where as normal rice turns completely Opaque.
From what Ive read, is that Scientists tried to force people from Laos, and other places... to switch to standard rice.. because standard rice has a lot more nutritional value (sweet rice, is probably almost calorie-less, and has little to no nutrients). However, the texture alone, is just too good... and Laotions refused to swap their Crops, opting to stay with Sweet Rice (sticky rice).
I rarely see sweet rice in normal stores. I tend to have to purchase it, from Asian specific grocery stores. They also often sell the cooking baskets there too.
Sticky Rice is kind of a bad descriptive name for it... because its the least "Sticky" of all Rice types. You can eat it with your hands, because it doesnt stick to your flesh (no residue left behind, either). It only sticks to itself. Its texture, is somewhat similar to a softer version of a gummy bear. It does seem to have a slight hint of sweetness to the taste, when cooked.

I have soaked my sticky rice for various hours before steaming but I think a 30-minutes soak in cold water is fine as well.
The way I cook sticky rice these days, I use the microwave. For one cup of sticky rice, soaked for at least 2-3 hours, with the water at the level of sticky rice in a bowl. Put the lid on, cook for about 4 minutes 30 seconds. The time varies according to the type of sticky rice and how powerful is your microwave. You will need to experiment this with the cooking time.
Do you add any water to the rice cooking in the microwave? I'm confused as to how it might steam without a water source to create the steam . . .?
My mom uses the microwave too! I've been using my instant pot and love the result.

Do you have any videos on how to get the traditional bamboo cooking basket and sticky rice storage basket to not give the rice that bamboo basket taste? I've soaked it for hours and drained the water and did that on repeat cause that's what my mil told me I needed to do but it didnt work. it still gives the rice a strong bamboo taste. Thanks!
