Guyanese Chicken Patties- Episode 101

  • Ingredients and Measurements:
    To make the pastry:
    • All-Purpose Pastry/Cru...
    To make the filling:
    2 chicken breasts boiled and ground
    1 small onion chopped
    1/2 green bell pepper
    2 scallions
    4 cloves garlic chopped
    1 pimiento pepper chopped (optional)
    2 wiri-wiri peppers
    2 bay leaves
    1/4 tsp. black pepper
    1/2 tsp. old bay seasoning
    1/2 tsp. dried rosemary
    1/2 tsp. dried basil
    1/2 tsp. paprika
    1 tsp. granulated garlic
    1 tbsp. Worcestershire Sauce
    1 tbsp. tomato paste
    oil
    salt to taste

    I loved your clear, descriptive explanation in the beginning about layering the seasonings and spices for a bolder flavour! Also, I had no idea about using the bottom of the empanada press like that!!! I learnt something new today! Thank you and keep up the great work :)

    I honestly would have never thought to pulse the chicken breast after boiling them! You really made this look simple! I really love watching you cook. Seeing the steps come together and what each step should look like really helps with the execution of the recipe when I do try it out. Also really love all the little tips and tricks that you incorporate into your videos. I find them very useful!

    Thanks for your video. One of the most professional demonstrations. i also have the baking meat pie baking trays that they used long ago which is similar to a cut down muffin pan.. Keep up the good work.

    Thanks for sharing. Usually make these with ground chicken and add green peas and sometimes diced carrots to the filling.

      Thanks! I'm glad you enjoyed. To be honest traditionally it's fine like this but it is totally fine to leave it more chunky. Really depends on your preference. I hope you give em a try.

    Matthew, what kind of butter you used for your pastry dough?

      You can use the unsalted butter sticks and add salt into the dough. Or use salted butter sticks and don't use salt in the dough.

    These look delicious.Tfs. Can I make them the night before and leave them on the tray to be baked the following day. If so should I put them cold in the oven or let them come to room temperature first . Thanks in advance for your answer. I will like to make some for church

      You can definitely put them in the fridge and then back. Remember when the dough is cold then baked it is better because it will be flakier.

      You can find them at Ross or Marshall's. I have also seen them at Walmart nd Target. You can also find them online. Its a bamboo material I believe
