    Ingredients and Measurements:
    To bloom the yeast:
    1 packet of yeast (2.5 tsp.)
    2 tbsp. sugar
    1 cup warm water
    To make the bread:
    4 cups all purpose flour
    1/4 cup sugar
    1/2 tsp. salt
    1 tsp. lemon zest
    yeast mixture (see above)
    4 tbsp. butter (1/4 cup)
    1 tsp. vanilla or mixed essence
    extra water to bring the dough together
    For the filling:
    2 tbsp. butter
    5 cups coconut flakes (I chopped it in my food processor)
    1+ 1/4 cups sugar
    2 tsp. ginger powder
    1.5 tsp. ground nutmeg
    1.5 tsp. vanilla or mixed essence
    3/4 cup water
    3 tbsp. condensed milk
    salt to taste
    red food coloring

    Matthew, while I do not know you personally I would like to thank you so freaking much for your amazing cooking channel. I was up so late last night making Salara in Austin, Texas for the first time. It came out amazing. I wish I could share a pic. I can’t tell you how happy I am. All my life of living in Guyana I have never had fresh salara. Thank you for your warmth and every detail and even the measurements you share.     I used this recipe to make salara for the first time and it came out absolutely delicious!! Thanks for using the coconut flakes. I struggle to make Guyanese dishes with US ingredients so I'm happy that you incorporate those into your recipes. You were absolutely right about the food coloring too!

    This is the best recipe. I tweaked a couple of things and came out perfect. Soft bread and moist filling. Taste just like Guyana and made me feel like I’m back there. Thank you so much Matthew. I will try your tennis roll recipe next.

    Oh my goodness. I made this today. It is DELICIOUS. Growing up in the islands we called it Russ. I have made different salara recipes but, this is the closest to what I grew up with. This was perfectly done, soft, and yum 😋 yum 😋. Thank you. This is definitely a keeper

    I've never made my salara this way. It always comes out perfectly. You can buy sweetened coconut. Where you don't have to add sugar

      I live in Flatbush too there is a good Guyanese spot not to far from Eramus High School called Island Express..I go there when I want some good Guyanese food and baked goods. Their salara is soooooo goood!

      Hope you enjoy!! You can definitely use fresh coconut for this, but you will want to omit the butter and cut the water by 1/2. Also you can use the condensed milk. 5 cups is about 2 coconuts I believe (give or take- depends on the size).

    So I tried this however, I forgot to let it raise the second time b4 putting it into the oven lol 🙃 it was a bit tough but still tasted delicious

    Hi Matthew could you please help me ? Why is my salara kept busting on the side? I have reduced the sugar amount, but still.

      It happens sometimes because it is so juicy. Don’t reduce the sugar or it will become dry. After you form the roll try to let it rest for like 45 min more then bake. It should give the dough a chance to rise and relax a bit

      Sometime it just leaks because of not being closed. Sometimes it bursts in the oven. But when it bursts you know it's going to be moist and juicy on the inside 😋

      You have to pinch them together and then tuck them slightly under the loaf. Make sure you pinch the seams so nothing comes out too. Some people rub water around the edges, but I don't because as long as you don't use too much flour to roll it out then it should stick just fine.

    What do I need to do differently if using instant yeast? Since the dry yeast needs to bloom with water and sugar, do I add extra water and sugar so the recipe when using instant yeast?

      For the instant yeast you can technically just add it straight into the dough. But I also like to bloom it just like the regular yeast

      I use the instant yeast and it's fine.
      Just knead your flour with the dry yeast and liquid...roll out and fill with the coconut. Let this rise for about 45 mins...then straight to the oven.

      You can try it. It will have a cakier texture because of the baking powder. You can also try to mix self rising and all purpose

      It’s just a traditional thing. You do not have to color it if you don’t want to. It’s also known as red bread or red cake because of the color

      You need enough sugar to make it juicy inside. You don’t have to add more but it will be a little dry

      Hey Matthew this my 4th time making this recipe. Excellent recipe. Thank you. I enjoy all your videos. The only thing is I have trouble sealing the bottom its keeps opening lol. Thanks again.

    Why don't you mention what the measurements are while you're showing how it's made. I know you have the measurements listed, but it would make it so much easier if you say the measurements while you are doing it. Thanks.
