Boy, I need to try that Red Curry dish. I’m actually making your rice/chickpea/broccoli & soy sauce dish for dinner tonight. I LOVE that your recipes have minimal ingredients and are easy to make. I’m gone 9-10 hours a day and the last thing I want to do is stand in my kitchen for 30-60 minutes making dinner for myself. You have a lot of great recipes.

Yes, sharing about the power of our mind is great but oh my heart sank for the little princess walking along, listening to her mother talking about changing the shape of her body. Having battled with a lifelong eating disorder myself, I am hyper aware of the power of how body talk can affect developing minds. I say this not to point fingers, (I am far from perfect in raising my own children) but to please be very careful what is said around little ones regarding our body shape/ size.

Great idea using veg stock instead of oil. I have been vegan for 1 month definitely noticed my oil content has upped something I want to stop. I will definitely try using veg stock more x
curries are legit one of those things you make that you think is going to take forever & be such a challenge and then 20 minutes later, you realize it was the easiest, tastiest thing you ever made

We just had the Red Thai Curry for lunch and this recipe is amazing!! I can't wait to eat it again!! I am not a fan of curry, but this is soooo delicious. My Mom, 12 yr old and 2yr old all loved it too!!
I made both recipes today, I didn't have any apple butter but I made some in my insta pot! I put my own sugar and spice in mine. they were great. Thanks for sharing.
I made the oat cups and they’re pretty good! They are a little dry, and not sweet enough but that’s probably cuz they’re pretty healthy. I put some maple syrup on top when eating them and also some strawberries. It was pretty good. Now I’ve got some breakfast and snacks for the next few days. 🤷🏻♂️

I liked that you showed the ingredient labels, especially for the curry paste. I have a Sprouts, Whole Foods and a Trader Joes, all within a two to three mile radius of my home so I'm motivated to shop at those stores for some specialty items. I'm going to try the breakfast oatmeal recipe tomorrow with frozen peach slices. I may have to figure out a binder that isn't peanut butter. I'm allergic to both peanuts and tree nuts. Thanks for the ideas!

Question: Need to know, have allergies to any soy product, is there anything else you can substitute for a tofu based anything? Love tofu, but since have found I have allergy to any soy products. Just starting out on vegan path, have wanted to do for a while but have never found anyone as inspirational as you. Thank you for all your UA-cam’s. Just skip the soy. If you’re avoiding prepackaged processed foods it should be easy. Just don’t drink soy milk, or eat soy beans or tofu. For soy sauce use coconut aminos. Hope that helps.
You are such an amazing chef! I couldn't come up with recipes like these if my life depended on it. 2 Questions - on tofu. Is there anything else I can use? I just can't get past the consistency of tofu. Also, I ordered white miso paste and it came in a HUGE pack! I had no idea it was so much, can't find the smaller ones anywhere. How can I store it so it doesn't go bad? I doubt I will be using it that often. Awesome recipes here, can't wait to try them both! THANK YOU TIA!!!
Omg you’re so sweet...no chef here 😂 just sharing what I throw together, but so happy you love the recipes! For the tofu, just leave it out. Just as great! Miso paste lasts a long time. I keep mine for months and months.
Chickpeas are a great substitute for tofu in stews and soups and salads. I am telling you, if someone had told me I would be eating tofu and loving it, I would've said NEVER, you are crazy! However, it is one of those foods that grow on you. You could start by freezing it, pressing the water out and baking it (sprinkle a little aminos on it or garlic/onion powder). It will have more of a chew to it. Tofu takes on the flavor of the food you are cooking, like Tia's curry! Good Luck!!
A good use for miso is to use it instead of salt in all recipes. You don't need to eat tofu if you don't like it, there are a lot of recipes for crumbles that use other ingredients like mushrooms and walnuts. If you like tofu firmer then crumbling the tofu into a frypan dries it out quickly, mainly though it's the flavorings you put on it that make the difference. Smoked tofu is very nice too.
Totally making the red curry next week. Question about coconut milk: Have you found it slows down weight loss to use it occasionally in a recipe like this? I use full fat but dilute with an equal amount of water. Wondering if you had to further reduce fats as you got closer to your goal weight.
I never had a problem with it. If you aren’t eating the entire dish then you should be fine. The fat and calories are spread out with every serving. I would use the light if you are concerned with weight loss though. It’s just less calorically dense and less fat of course.

Can you buy it at the store? Most store have it, just not the kind I am using. If no you can use any jam and any fruit. So maybe a berry jam and blueberries instead of apples?
Hi Tia, I've just found your channel and love it very much. I've gained a bit of waight after my second baby and desperate to lose some. I've tried a few of your recipes and loved them. My family is vegetarian so go vegan is no problem for us. But I have a question : how to feed the same meals for the kids, they don't need to lose weight, they need to grow, they need fats. Any advice on this? Thanks
I would add more fat for them. I eat fat for sure and DO NOT follow a no fat diet. I just keep mine slightly lower because of my gallbladder and because too much raises the totally amount of calories for my meals. However, I definitely eat healthy fats every day. Again, I wouldn’t lower the fat for them. Of mine don’t want to eat what I am cooking or throwing together, I just make them something healthy and simple. I have a few videos on this.

Im not exactly sure if there is an amount. I mean I use a ton - I love it too, but too much of anything isn't good right? Bananas are amazing to eat, but eating 15 at one time probably isn't the best. Just use in moderation.
Haha well you never know who’s going to go crazy on you. No just kidding I carry it mostly because of the wildlife. There are mountain lions and coyotes. They usually stay away from people, but again, you never know.
An afterthought comment - you know you're gonna drive all us "older ladies" crazy, that have cooked for YEARS, by not using a spatula and scraping your cups and bowls. We were raised during the "waste not, want not" era, and as I watched this recipe come together for the oats muffins, I'm freaking out that you used a fork, not a spatula, to scrape out the ingreds., leaving loads behind. Just sayin. LOL. But still love your videos. Never too old to learn healthy eating.

That Red Thai Curry dish was soooo good! I used soy milk instead of the light coconut milk but I bet the cocunut milk makes it taste even better!

Yum, must try these...what else could you use instead of tofu? I have never heard of apple cinnamon butter (I'm in Ireland) - looked it up and found a recipe for it...
Just skip the tofu. It’s just as yummy!

Hi I just subscribed......the apple pie butter when ordered from the site you had a link charges 25.00 for shipping(wayyyyy to much). Can it be ordered from some where else?

I don't have apple butter:( Do you have any recommended substitutions I could use for it? Would coconut manna work?
Can you buy it at the store? Most store have it, just not the kind I am using. If no you can use any jam and any fruit. So maybe a berry jam and blueberries instead of apples?

Hi Tia, I've just found your channel and love it very much. I've gained a bit of waight after my second baby and desperate to lose some. I've tried a few of your recipes and loved them. My family is vegetarian so go vegan is no problem for us. But I have a question : how to feed the same meals for the kids, they don't need to lose weight, they need to grow, they need fats. Any advice on this? Thanks
I would add more fat for them. I eat fat for sure and DO NOT follow a no fat diet. I just keep mine slightly lower because of my gallbladder and because too much raises the totally amount of calories for my meals. However, I definitely eat healthy fats every day.
Again, I wouldn’t lower the fat for them. Of mine don’t want to eat what I am cooking or throwing together, I just make them something healthy and simple. I have a few videos on this.

I noticed your written recipe has omitted the tofu and ginger. In the video you use 4tbsp curry paste and the written recipe says 3tbsp.
I’ll fix that. Thanks for letting me know. I’m always typing with kids running around screaming lol it is 3 tbsp red curry paste.

How much is too much nutritional yeast? I love it on all veggies and potatoes?
Im not exactly sure if there is an amount. I mean I use a ton - I love it too, but too much of anything isn't good right? Bananas are amazing to eat, but eating 15 at one time probably isn't the best. Just use in moderation.

Haha well you never know who’s going to go crazy on you. No just kidding I carry it mostly because of the wildlife. There are mountain lions and coyotes. They usually stay away from people, but again, you never know.

An afterthought comment - you know you're gonna drive all us "older ladies" crazy, that have cooked for YEARS, by not using a spatula and scraping your cups and bowls. We were raised during the "waste not, want not" era, and as I watched this recipe come together for the oats muffins, I'm freaking out that you used a fork, not a spatula, to scrape out the ingreds., leaving loads behind. Just sayin. LOL. But still love your videos. Never too old to learn healthy eating.
