Six months of potatoes have yielded a new me! I had no idea when I first found Andrew Spud Fit Taylor on UA-cam that the spuddy lifestyle would be so life-changing! If you are new to this, or even think it sounds crazy, I challenge you to simply give it 30 days. You will be so glad you did! At first I thought 30 days would be so hard. But after six months I feel SO GOOD that I have no intention of stopping now. I feel like I was the most unlikely candidate for success but here I am! YOU CAN DO THIS! / thespudfitchallenge

Goodness. I have an insta-pot and steam them in there for about 6 minutes. Then I eat them! Diced with some spices on them mostly. I have discovered the spice section of "rubs" that are intended for use on meat, but they add great flavor to potatoes. Sometimes I use bbq sauce or oil-free tomato sauce, but I use sauces sparingly. The closer to plain 'ol spuds you can get, the better!

The list of chemical additives on the boxes is frighteningly long. It is now revamped as something called Optavia, and before that, it was renamed as "Take Shape For Life." But it's the same stuff.
